Spicy Fish Stew image

This wonderfully flavorful spicy fish stew is one of my favorite ways to incorporate more fish into my diet.

Provided by Vered DeLeeuw

Categories     Main Course

Time 30m

Number Of Ingredients 11

2 tablespoons olive oil
1 tablespoon minced fresh garlic
1 tablespoon sweet paprika
1 teaspoon ground cumin
1 teaspoon coriander
1/2 teaspoon crushed red peppers
3 cups Pomi strained tomatoes (or canned tomato sauce, no salt added*)
2 teaspoons Diamond Crystal kosher salt
2 (6 oz) cod fillets (cut into 2-inch chunks)
2 (6 oz) salmon fillets (cut into 2-inch chunks)
2 tablespoons chopped parsley (or cilantro)

Steps:

  • Heat the olive oil in a large, heavy saucepan over medium heat. Add the garlic and spices. Cook, stirring, for 30 seconds.
  • Whisk in the tomato sauce and kosher salt. When the mixture starts to boil, add the fish pieces, spooning the sauce on top to cover them. Bring back to a gentle boil.
  • Cover (use heavy-duty foil if your skillet does not come with a lid), lower the heat to medium-low, and cook until the fish is cooked through, about 15 minutes. Garnish with parsley and serve.

SPICY CAJUN SEAFOOD STEW

Spicy Cajun Seafood Stew image

Provided by Food Network Kitchen

Categories     main-dish

Time 1h5m

Yield 8 servings

Number Of Ingredients 14

1 tablespoon olive oil
8 ounces smoked andouille sausage, diced (1 1/2 cups)
1/4 cup all-purpose flour
1 teaspoon Cajun seasoning
3 cloves garlic, finely chopped
2 bell peppers, red and/or green, chopped (about 2 1/2 cups)
1 onion, chopped (about 1 1/2 cups)
One 8-ounce bottle clam juice
One 15-ounce can diced tomatoes
1 pound firm white fish, such as halibut, grouper or black sea bass, cut into 1 1/2-inch pieces
1 pound peeled and deveined large shrimp (21 to 25 shrimp)
2 tablespoons chopped fresh parsley leaves
Kosher salt
Cooked white rice, for serving

Steps:

  • 1. Heat the oil over medium-high heat in a large pot or Dutch oven. Cook the sausage until browned, about 5 minutes. Sprinkle the flour over the sausage and cook, stirring, until lightly toasted and the meat is well coated, about 2 minutes. Add the Cajun seasoning, garlic, peppers and onions and continue to cook until the vegetables are softened, 5 minutes. Add the clam juice, tomatoes and 4 cups water, scraping up any browned bits from the bottom of the pot, and increase the heat to bring to a simmer.
  • 2. Lower the heat slightly and simmer until the stew is thickened and the flavors are melded, about 30 minutes. Gently stir in the fish and shrimp. Cook, making sure the stew is not bubbling vigorously, stirring once or twice, until the shrimp and fish have just turned opaque, about 5 minutes. Remove from the heat and stir in the parsley. Season with salt and serve over rice.

SPICY FISH STEW

Spicy Fish Stew image

This is spicy, tasty and easy. Adapted from 'A Spoonful of Ginger', one of my favorite Nina Simonds cookbooks. The original calls for cod, I use orange roughy, and I also cut down the amount of red onions for my family's taste....add more if you like. This is good with steamed rice and crusty bread.

SPICY RED FISH STEW

Spicy Red Fish Stew image

This simple and delicious recipe is from Meriel MacDonald of Kinloch Lodge on the Isle of Skye in Scotland. I changed this recipe a little by adding some clam juice because I like it saucier!

Provided by Grace Lynn

Categories     Stew

Time 40m

Yield 6 serving(s)

Number Of Ingredients 10

3 large red bell peppers (I used jarred roasted red bell peppers)
5 tablespoons extra virgin olive oil
12 shallots, chopped
2 (14 1/2 ounce) cans chopped tomatoes with juice
2 cloves garlic, minced
3/4 teaspoon dry crushed red pepper (I doubled that)
1/2 cup chopped fresh cilantro
1 teaspoon grated lemon, rind of
2 lbs halibut or 2 lbs cod fish fillets, cut into 1 inch pieces (I used cod)
1 cup clam juice (I added this because I thought it was a little dry) (optional)

Steps:

  • Char bell peppers over flame or in broiler until blackened on all sides.
  • Enclose peppers in paper bag 10 minutes.
  • Peel, seed, and chop peppers.
  • Heat oil in heavy large skillet over medium heat.
  • Add shallots and saute until very soft, about 6 minutes.
  • Stir in peppers, tomatoes with juice, garlic, and crushed red pepper.
  • Simmer 10 minutes to blend flavors.
  • I added the clam juice at this point and brought it back to a simmer.
  • Stir in cilantro and lemon peel.
  • Add fish; simmer until just opaque in center, about 5 minutes.
  • Season stew to taste with salt and pepper.
  • Spoon into bowls and serve.
  • I served it over steamed rice.
  • I love this sauce and I think I'll substitute shrimp next time for fish.

  • Heat olive oil over medium-high heat in a large, thick bottomed pot or dutch oven and saute the onions, celery, tomatoes and bell peppers until soft, approximately 5-6 minutes, add the garlic, seasoned salt and cayenne pepper and cook one additional minute.
  • Add the butter and mix with ingredients until completely melted. Add the curry powder and flour and mix with the ingredients. (It will start to clump and stick together but this is the base for your roux - which thickens the dish)
  • Slowly pour in the chicken broth and stir until all ingredients are mixed well and mixture is smooth. At this point you can taste the mixture and add more salt or pepper if needed. Also if stew is too thick for your liking at this point you can add more broth. If stew is not thick enough you can add more curry powder as it works as a thickener.
  • Add the fish and bring to a simmer. Simmer until the fish is cooked through (you can tell the fish is done when it easily flakes apart). Fish cooks rather quickly so this should only take about 7 to 10 minutes.
