I ALWAYS looked forward to Sunday dinner at my grandparents' house, because Grandmother was the best cook anywhere. All her meals were delicious, but I especially loved dinners featuring this savory pot roast. 1/3 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
1 boneless beef rump or chuck roast (3 pounds)
2 tablespoons vegetable oil
1-1/2 cups beef broth
1/2 cup chutney
1/2 cup raisins
1/2 cup chopped onion
1-1/2 teaspoons curry powder
1/2 teaspoon garlic powder
1/2 teaspoon ground ginger

Steps:

  • Combine flour, salt and pepper; rub over entire roast. In a Dutch oven, brown roast in oil on all sides. Combine remaining ingredients and pour over roast. , Cover and bake at 325° for 3 hours or until meat is tender. Thicken gravy if desired.

1/2 pound slab bacon, diced small
1 beef chuck roast (4 pounds), tied
Coarse salt and ground pepper
2 tablespoons unsalted butter
1 large yellow onion, diced small
3 garlic cloves, minced
3 tablespoons chopped fresh rosemary leaves
1 cup dry red wine, such as Cabernet Sauvignon
1 can (28 ounces) diced tomatoes
1 pound small white potatoes, halved or quartered if large
1 bunch small carrots (about 6), cut into 2-inch pieces
3 celery stalks, cut into 2-inch pieces
2 cups pearl onions, trimmed and peeled

Steps:

  • Preheat oven to 325 degrees. In a large Dutch oven, cook bacon over medium-high, stirring occasionally, until fat is rendered and bacon is crisp. With a slotted spoon, transfer to paper towels to drain; set aside.
  • Pat beef dry, season with salt and pepper, and add beef to pot. Increase heat to high and cook, turning with tongs, until browned on all sides. Transfer beef to a plate; pour off fat from pot.
  • Reduce heat to medium and add butter and yellow onion. Cook, stirring occasionally, until onion is translucent, 6 minutes.
  • Add garlic and rosemary; cook until mixture is fragrant, 3 minutes. Add wine and 1/2 cup water and cook, stirring and scraping up browned bits with a wooden spoon, about 1 minute.
  • Add tomatoes and juice and season with salt and pepper. Return beef to pot along with any juices and bring to a simmer over high. Cover, transfer to oven, and cook until beef is almost tender, about 3 hours.
  • Remove pot from oven and place potatoes, carrots, celery, pearl onions, and reserved bacon around roast. Cook until vegetables and beef are tender, about 1 hour. Remove beef from pot and let rest 15 minutes, then slice against the grain; arrange on a platter with vegetables and drizzle with braising liquid.

4 pounds beef roast ((top round, rump roast, or chuck roast are best))
4 strips thick-cut bacon, (chopped)
2 large sweet onions, (peeled and cut into large wedges)
4 cloves garlic (smashed)
4-5 sprigs fresh thyme
2-3 sprigs fresh rosemary
2 pounds carrots, (trimmed and halved)
1 1/2 pounds mini new potatoes
1/2 cup Worcestershire sauce
1 1/4 cups water
2 tablespoons beef base
Salt (and pepper)

Steps:

  • Preheat the oven to 300 degrees F. Move the oven racks up or down to accommodate a large pot. Salt and pepper the beef roast generously on all sides.
  • Place the chopped bacon in a 6-8 quart dutch oven (or oven safe pot with lid.) Set the pot over medium heat and cook the bacon, stirring occasionally. Once the bacon is mostly cooked, add the onion wedges, garlic, and fresh herbs. Let the onions sauté on both sides, then move the onions and bacon to the side and add the beef roast. Brown the roast on all sides, flipping every 2-3 minutes.
  • Move the beef roast to the center of the pot. Move the onions and bacon to one side. Pour the Worcestershire sauce, water, and beef base to the pot. Arrange the carrots and potatoes around the beef. Cover the pot with a heavy lid and place it in the oven for 4 hours, or until the meat is fork tender.
  • Shred the beef and serve warm with potatoes, carrots, onions, and pan juices.

8 slices OSCAR MAYER Bacon, cut into 1-inch pieces
1 extra-lean boneless beef pot roast (2-1/2 lb.), trimmed
2 cans (8 oz. each) Mexican-style spicy tomato sauce
1 large onion, cut into 8 wedges
2 cloves garlic, minced
2 lb. yuca (cassava), peeled, cut into 3-inch pieces
6 carrots, peeled, cut into 2-inch pieces
1/4 tsp. ground black pepper
1/2 cup chopped fresh cilantro

Steps:

  • Heat oven to 325°F.
  • Cook and stir bacon in ovenproof Dutch oven on medium heat until crisp. Remove bacon from pan with slotted spoon; drain on paper towels. Reserve for later use. Discard all but 1 Tbsp. drippings from pan.
  • Add roast to reserved drippings in pan; cook on medium-high heat 5 min. on each side or until evenly browned. Pour tomato sauce over roast. Add onions and garlic; cover.
  • Bake 1-1/2 hours. Add yucca and carrots; sprinkle with pepper. Bake, covered, 45 min. to 1 hour or until roast is tender.
  • Transfer roast and vegetables to platter, reserving drippings in pan. Cut roast across the grain into thin slices. Spoon pan drippings over roast and vegetables; sprinkle with cilantro and reserved bacon.

1 (2 -3 lb) bottom round beef roast
1 (12 ounce) can cream of celery soup
1/2 lb bacon, cooked and crumbled
3 -5 tablespoons bacon drippings
1 (1 1/2 ounce) package dry onion soup mix
1 (12 ounce) can Pepsi
1 -2 tablespoon white flour

Steps:

  • Pour 1/2-1 can of Pepsi Cola into your crock pot and set temperature to low. I typically use a full can of Pepsi. It will yield a greater amount of gravy in the end.
  • Place your 2 - 3 lb Beef Roast in the crock pot and sprinkle the Dry Onion Soup mix over roast and the Pepsi.
  • While cooking the roast on low, fry the bacon to a crisp, crumble it and set aside.
  • Measure to taste 3-5 tablespoons of bacon drippings and drizzle it over your roast.
  • Spread the bacon crumbles over your roast and dry onion soup mix.
  • Cover roast and cook on low for 6-8 hours, or 4-6 hours on high.
  • One hour before roast is to be served make your gravy.
  • Lift roast out of crock pot and set aside.
  • Add your one can of Cream of Celery soup and hand whisk until blended. For time's sake I use the electric mixer.
  • Add flour as needed to thicken gravy while whisking.
  • Place your roast back into the crock pot and finish out your cooking time.
  • Serve your roast swimming in gravy in a white over sized bowl and watch their eyes light up!

8 slices OSCAR MAYER Bacon, cut into 1-inch pieces
1 bone-in beef pot roast (4 lb.)
3 large cloves garlic
5 dried chipotle chile peppers (morita peppers), stemmed
1 can (15 oz.) beef broth
1/4 cup KRAFT Zesty Italian Dressing
2 lb. sweet potatoes (about 6), cut into quarters
2 cans (15 oz. each) chickpeas (garbanzo beans), rinsed, drained
1 green onion, chopped

Steps:

  • Heat oven to 350ºF.
  • Cook bacon in large skillet until crisp. Use slotted spoon to transfer bacon from skillet to paper towels to drain, reserving 2 Tbsp. drippings in skillet. Add remaining drippings to blender; set aside. Add meat and garlic to drippings in skillet; cook on medium heat 5 min. or until meat is browned on all sides, turning occasionally. Transfer meat to roasting pan. Transfer garlic to blender.
  • Add peppers to skillet; cook on medium heat 2 min. or until fragrant, turning occasionally. Add to blender with broth and dressing; blend until smooth. Pour over meat. Place potatoes, chickpeas and bacon around meat; cover.
  • Bake 2-1/2 to 3 hours or until meat is done (160º F) and tender. Skim fat from sauce before serving with meat. Sprinkle with onions just before serving.

3 teaspoons salt
1/2 teaspoon pepper
1/2 teaspoon ground allspice
1/4 teaspoon ground mace
1 boneless beef chuck roast (4 to 5 pounds)
2-1/4 cups tomato juice
1 large onion, chopped
8 tablespoons canola oil, divided
3 tablespoons lemon juice
4-1/2 teaspoons cider vinegar
2 bay leaves
3 tablespoons cornstarch
1/3 cup cold water

Steps:

  • Combine the salt, pepper, allspice and mace; rub over the roast. In a small bowl, combine the tomato juice, onion, 6 tablespoons oil, lemon juice and vinegar., Pour half of the marinade into a large resealable plastic bag; add roast. Seal bag and turn to coat; refrigerate for 8 hours or overnight. Cover and refrigerate remaining marinade., Drain and discard marinade from meat. In a Dutch oven, brown roast on both sides in remaining oil over medium-high heat; drain. Pour reserved marinade over roast; add bay leaves. Bring to a boil. Reduce heat; cover and simmer for 2-3/4 hours or until meat is tender., Remove roast and keep warm. Discard bay leaves. Skim fat from pan juices. In a small bowl, combine cornstarch and water until smooth; gradually stir into pan juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Strain; serve with meat.
