Steps:
- In a large pan, heat the sesame and chilli oils together then add the garlic.
- Cook until fragrant (30 seconds, or so) then add the soy sauce, hoisin sauce, rice vinegar, honey and chilli flakes.
- Mix cornstarch with water to make a slurry then add and allow to simmer. Cook for a few minutes until the sauce has thickened slightly. Set aside.
- Chop the pork into bite-size chunks. In a large bowl, whisk together the eggs and soy sauce.
- In a separate bowl, whisk the flour, cornstarch and salt together. Coat the pork first in the flour, then in the egg and finally in the flour again.
- Heat a large pot of vegetable oil over high heat and once hot, carefully add the pork in batches and fry until golden brown and cooked through, approximately 5-7 minutes.
- Remove with a slotted spoon and allow to drain on a wire rack set over a sheet pan.
- Cook the noodles in a large pot of salted water until al dente then drain. Toss the noodles with the sauce.
- Serve the noodles and sauce in bowls topped with crispy pork and spring onion.

- Mix the marinade ingredients in a shallow dish. Slice the pork into 4cm to 5cm strips, then add to the marinade and set aside.
- Cut the broccoli into florets, then cook in a pan of boiling salted water for 2 minutes. Add the noodles and cook according to the packet instructions. Drain, reserving a little of the cooking water, and set aside.
- Peel the garlic and ginger, finely slice the garlic, then cut the ginger into matchsticks.
- Heat the groundnut oil in a large pan or wok over a high heat, then fry the garlic and ginger for 2 to 3 minutes, until golden. Add the pork (reserving the marinade) and fry for 3 to 4 minutes, until browned.
- Add the marinade and reduce the heat a little. Toss the pork to coat and fry for a few minutes until sticky and cooked through.
- Add the noodles, broccoli and reserved cooking water and toss. Once it's lovely and sticky, stir through the beansprouts for the final 30 seconds or until heated through.
- Slice and scatter with chilli (if using) and serve at once.

- Open ramen noodles and discard flavor packets. Cook ramen noodles in boiling water for 3 minutes. Drain and set aside.

- Start with making the broth. In a deep soup pan/dutch oven, add oil.
- When the oil is hot, add minced ginger and garlic. Saute until aromatic, for about 30 seconds.
- Add sliced mushroom to the pan and cook it until it has softened.
- Add stock and water to the pan.
- Add soy sauce, fish sauce, miso. Mix well. Check the seasoning and add salt if required.

- Set a large pot of water to boil for the pasta. Cook the noodles according to the package directions and drain. While you're waiting for the water to boil, start assembling the pork and sauce. Assemble the sauce: Use a fork to whisk together the chicken broth, hoisin sauce, and soy sauce together in a glass measuring cup. Set near the stovetop. I am trying to discover more diabetic friendly recipes with taste so I can get a better control of my condition. This one is from BH&G Australian Diabetic Living and fits the bill. For this dish I would more than likely use pork fillet (loin).

- Combine curry paste and lemon juice in a small dish and add the pork and turn to coat.
- Cover and set aside for 10 minutes to marinate.
- Meanwhile, cook the noodles in a medium saucepan of boiling water for 3-4 minutes or until just tender and then drain well and then rinse under cold water and then set aside.
- Heat oil in a large wok on medium high and add pork and stir fry for 2 minutes or until just cooked and then transfer to a plate and set aside.

SPICY PEANUT PORK NOODLES (GLUTEN FREE)
These spicy peanut pork noodles feature crispy pork, a creamy peanut sauce and fresh spinach for an addicting one-dish dinner that you'll want to make on repeat. The brand of rice noodles you use makes a big difference in terms of texture, so pay attention to the quantities. If you use Lotus Foods Pad Thai Rice Noodles (which I love for their toothsome bite), you'll need two packages, or 1 pound. If you use Annie Chun's or Thai Kitchen brand, use 1 box, or 8 ounces (you can use white or brown rice noodles for any brand). If you prefer, you can swap out the pork for ground turkey. Take note that the peanut sauce will taste very potent on its own, but it will get diluted with chicken broth when it goes into the pan. The sauce can be made up to 2 days in advance.

- Fill a large pot with water and bring to a boil (this will be for the noodles in a bit). While the water comes to a boil, make the peanut sauce.
- In a mini food processor, combine all of the ingredients and blend until smooth (the sauce will taste quite strong at this point, but it will mellow considerably when tossed with the broth and noodles). Do Ahead: The sauce can be refrigerated for up to 2 days.
- Cook the noodles in the boiling water according to the package directions. Drain and rinse in cold water.
- Heat the oil in a 12-inch pan over high heat until it's shimmering. Add the pork, and season with salt and pepper. Break up the meat with a wooden spoon, then let it cook without stirring until it's brown and crispy on the bottom in several places, about 3-5 minutes. Scooch the meat to one side of the pan (it's okay if it's not fully cooked at this point), tilt the pan, and spoon off the fat (discard the fat).
- Add the garlic (if using), and cook, stirring, 30 seconds. Add the spinach and cook, tossing with tongs, until wilted.
- Reduce the heat to medium-low. Stir in the chicken broth and peanut sauce. Add the cooked noodles. Cook, stirring (tongs are helpful here), until the sauce is bubbling and has evenly coated the noodles (it will only take a minute or two). If the pan looks dry, add more broth as needed (this will depend on the brand of rice noodles you use). Stir in the scallions, and season with salt and pepper.

- Marinate the pork: In a small bowl combine the pork with the marinade ingredients.
- In a bowl soak the noodles in warm water for 15 minutes, drain and cut into 3- 4 cm pieces.
- In a wok heat the vegetable oil over moderately high heat and stir fry 1/4 cup of the shallots, garlic and ginger for 30 seconds.
- Add pork and chilli and stir fry the mixture, breaking up the lumps until meat is no longer pink.
- Add noodles, broth, soy sauce, vinegar and sugar and simmer until the noodles have absorbed the liquid.
- Transfer to serving plate, drizzle with sesame oil and sprinkle with coriander and remaining shallots.
SPICY PORK RAMEN NOODLE SOUP

- Preheat the oven to 150C/300F. Place a large casserole pan on the hob, add 1 tbsp of the oil and heat until very hot.
- Season the pork with the salt and pepper and place in the pan with the hot oil. Seal on all sides.
- Pour the stock over the pork.
- Add in the onion, the whole carrot, celery, garlic and ginger.
- Now add the mirin, soy sauce, gochujang and the red chilli. Bring to the boil, then place a lid on the pan and place in the oven for 4 hours. NOTE: Check two or three times during cooking, and top up with a little boiling water if needed. You'll need at least 1 litre of liquid left by the time the pork finishes cooking.
- Take the pan out of the oven and place the pork on a chopping board. Remove and discard the layer of fat. Shred the pork using two forks.
- Place a sieve over a large bowl and strain the cooking liquid. Throw the strained vegetables away and place the liquid back in the pan with the shredded pork. Leave on a low heat to keep warm.
- Place the eggs in a small pan. Just cover with cold water. Bring to the boil, then simmer for 6 minutes.
- Remove the eggs from the heat and place in a bowl of cold water to stop the cooking process.
- If you're using dried noodles, place the noodles in a pan of boiling water and boil for 5 minutes. Then drain, run under cold water (to stop them sticking) and put to one side.
- Heat the remaining oil in a frying pan.
- Add the leek, season with a pinch of salt and pepper then fry for 5 minutes, stirring a couple of times.
- Push the leeks to one side of the pan and add the spinach to the pan. Allow to wilt for 1 minute.
- Divide the noodles between four bowls. Top with the hot broth, shredded pork, leek, spinach and carrot matchsticks.
- Carefully peel the two eggs and slice in half. Place 2 halves in each bowl.
- Garnish the soup with spring onions, then sprinkle with the white and black sesame seeds and the chilli flakes before serving.

- Place a large heavy-bottom pan (cast-iron or a wok is great for this) over high heat, and drizzle in about 1-2 tablespoons of peanut oil; once very hot, crumble the ground pork into the pan along with a good pinch of salt and pepper, and using a wooden spoon or spatula, break it up very well into a fine crumble; cook the pork until it is cooked through and slightly browned and crisp around the edges, roughly 6-7 minutes.
- Once the pork is browned, add in the garlic, lemongrass and ginger, and stir that into the pork for about 30 seconds or so to cook and release the aroma.
- Add in the chili garlic sauce and the hoisin, along with the 1/4 cup of hot water, and stir to combine.
- Next, sprinkle in the thinly sliced baby bok choy and the spinach, and fold that into to pork mixture to gently wilt for a few seconds.
