PIZZA WITHOUT THE RED SAUCE
I do not like red sauce but pizza is one of my favorite foods. So I came up with this good alternative to traditional red sauce pizza. It still has a light tomato taste.

Steps:
- Pour the can of tomatoes into a bowl. If it is pomodorini or whole tomatoes, crush them with your hands, or you can roughly cut them with kitchen shears.
- Add the rest of the ingredients and mix well. Taste for salt and add if needed. (Don't add a lot of sauce to the pizza dough; you don't want to drown it.)

Steps:
- Empty the contents of the tomato can in a mixing bowl and coarsely crush the tomatoes with a fork or your hands, leaving them just a little chunky. In a heavy bottom 2-quart saucepot, add the olive oil, over a medium high flame and heat a little. Add the onions and saute until slightly translucent. Add the garlic and saute about a minute until golden. Quickly add the crushed tomatoes to the mix. Stir well and bring to a simmer. Season with salt and pepper, to taste, and add the fresh basil and oregano. You can add a touch of sugar if desired or if tomatoes are tart. Simmer on a low flame, stirring often for at least 15 minutes. If not using right away, cool down and store in airtight container in the refrigerator, up to 1 week.

- TOMATOES: Pour the tomatoes into a large bowl and using your hands, kitchen shears, or an immersion blender, break the tomatoes down so that they’re chunky but not completely liquid.
- AROMATICS: In a medium saucepan placed over medium heat, heat the olive oil, grated onions, oregano, basil, and red pepper flakes. Allow them to cook for 3-4 minutes, stirring frequently so nothing sticks or burns. Add garlic and continue to cook for another 30 seconds to a minute.
- SIMMER: Add the prepared tomatoes along with the sugar and salt. Let the sauce reach a simmer, then lower the heat to medium-low and allow the sauce to simmer for 30 minutes. Taste and adjust with additional seasonings as desired. If you like a more concentrated tomato flavor you can continue to simmer the sauce for up to 15 more minutes. Ue the sauce for pizzas immediately or allow to come to room temperature before storing in containers.

- Prepare the sauce by chopping the onion and frying it in the olive oil over high heat. Stir often and reduce the heat a little every minute or two as the onions begin to brown, until at medium heat. It will take ten minutes and the onions should be golden brown and tinged darker brown at the edges.
- Add the tomatoes, salt, black pepper and tabasco and stir well. Increase the heat until bubbling and then lower to a lively simmer (medium heat) and cook 15-20 minutes until reduced.
- In the meantime, quarter the remaining small onion and thinly slice. Slice or chop the peppers as you wish. Drain the sweetcorn.

- Get a large pot of water boiling, reduce to a simmer. Carefully scald tomatoes in batches, a few minutes each, and let cool a little. When cool enough to handle, remove skins, slice in half and scoop out goop and seeds.
- Dump out hot water and rinse pot. Place tomatoes, and rest of ingredients, into pot. Bring to a boil, reduce heat to a medium simmer, and reduce sauce until very thick, stirring as needed especially near the end when it's getting very thick. (*This will take 1 to 2 hours depending on your tomatoes, how hard you simmer, and how thick you like your sauce.)
- Let cool a little, ladle into jars or freezer containers leaving a 1" headspace at the top for expansion when freezing. Let cool to room temp.
