SPICY ORANGE BEEF STIR FRY (橙味牛肉)



Spicy orange beef stir fry (橙味牛肉) image

Savoury, fruity, slightly sour and refreshingly spicy, orange beef stir-fry is a comforting dish that can be easily prepared in your own kitchen.

350 g flank or skirt steak, cut into strips against the grain (12oz)
2 tbsp fresh orange juice
1 tsp Shaoxing rice wine
1 tsp light soy sauce
1 tsp cornstarch
2 tbsp fresh orange juice
1 tsp light soy sauce
1 tsp dark soy sauce
1 tsp cornstarch
½ tsp sesame oil
1 pinch salt
1 pinch ground Sichuan pepper
2 tbsp cooking oil
Zest of ½ orange, julienned
4 fresh chillies, chopped
3 cloves garlic, minced
1 tsp minced ginger

Steps:

  • Place beef strips in a bowl. Add all the ingredients for the marinade. Mix well until all the liquid is absorbed by the beef. Leave to combine for 10 minutes.
  • Mix all the ingredients for the sauce. Set aside.
  • Heat up a wok (or a deep frying pan) over a high heat then pour in 1½ tablespoons of oil. Sear the beef until it becomes pale. Dish out and set aside.
  • Discard any liquid in the wok. Pour in the remaining ½ tablespoon of oil. Add orange zest, fresh chilli, ginger and garlic. Cook until fragrant then stir in the beef.
  • Fry for 1 minute or so. Pour in the sauce (stir well beforehand). Dish out when beef is evenly coated with the thickened sauce. Serve immediately.

2 pounds beef top round
2 small onions
2 tablespoons cooking oil
1/2 can orange juice concentrate
2 cubes beef bouillon
1/2 teaspoon hot red pepper flakes

Steps:

  • Cut the beef into thin strips and slice the onion. Heat 2 tablespoons of oil in a large skillet over a high flame. Season the beef with salt and pepper. Saute the beef until it just begins to brown. Add the orange juice, bouillon cubes and pepper flakes. Simmer until the beef is just done. If the sauce is thin, strain through a colander, reserving the beef. Return the sauce to a saucepan over a high heat. Reduce until the sauce reaches a desirable consistency or thicken with a little cornstarch.

2 tablespoons cornstarch
2 teaspoons orange zest
1/2 cup low sodium beef broth
1/4 cup orange juice
2 tablespoons reduced sodium soy sauce
1 tablespoon sugar
1 1/2 teaspoons chili-garlic sauce
1/4 teaspoon crushed red pepper flakes
4 teaspoons canola oil
1 tablespoon gingerroot, minced peeled
1/4 lb green beans, halved crosswise
1 red bell pepper, seeded and cut into thin strips
1 carrot, cut into thin strips (matchstick size)

Steps:

  • Combine beef, 1 tbsp cornstarch, and orange rind in medium bowl.
  • Toss well to coat and set aside.
  • Combine remaining 1 tbsp cornstarch, broth, orange juice, soy sauce, and chili-garlic sauce in small bowl; set aside.
  • Heat nonstick skillet (large) over med-high heat until a drop of water sizzles.
  • Add 2 tsp oil, then add beef.
  • Stir-fry until cooked through.
  • Transfer to a plate.
  • Add remaining 2 tsp oil, then add the ginger.
  • Stir-fry until fragrant.
  • Add the green beans, bell pepper, and carrot.
  • Stir fry until crisp-tender.
  • Add the broth mixture and cook, stirring constantly, until the mixture boils and thickens, about 1 minute.
  • Add the beef and cook until hot.

This special beef cuisine perfectly balance the spicy taste of chili pepper and the sweetness of the orange, making it a different choice for everyone who would like to enjoy the Sichuan style cuisine.

3 hot chili peppers (This is not the usual chili pepper in the supermarket. It is smaller and spicier.)
1 tablespoon oil
1 orange, zest of
2 garlic cloves, minced
1 carrot
500 g beef
1/2 cup broth
1/3 cup soy sauce
1 tablespoon orange, liqueuer
1 tablespoon honey
potato starch
water

Steps:

  • Cut the carrot, chili pepper, garlic, and orange zests. Set aside.
  • Add oil into the pot and heat the oil. Add pepper, garlic and orange zest into the pot and stir fry for 4 minutes.
  • Add the carrot and beef and stir fry for about 2 minutes to brown the beef.
  • Add the water, broth, soy sauce, honey, and orange liqueur. Give it a good stir.
  • Bring to boil and turn the heat into low. Cook for a hour. (You can check the softness of the beef for yourself and decide the cooking time. If you would like to have a softer beef then you should cook for more than an hour.).
  • Mix the potato starch and water in a small bowl and add the mixture into the pot for another stir.
  • Serve with rice, bread, or noodle. You can also take it as a main dish.
