CUBAN-STYLE ORANGE CITRUS GRILLED MAHI-MAHI
A zippy orange citrus vinaigrette is used two ways in this recipe -- to flavor mahi-mahi on the grill and as a drizzle over smoky black beans and rice.

Steps:
- Preheat an outdoor grill to medium-high heat.
- Sprinkle the mahi-mahi with salt and pepper. Coat in 1/4 cup of the Cuban Style Orange Citrus Vinaigrette in a shallow bowl or baking dish. Let marinate at room temperature for 10 minutes.
- Meanwhile, add the bacon to a medium saucepan over medium heat and cook, stirring, until crispy, about 4 minutes. Use a slotted spoon to remove the bacon pieces, leaving the drippings in the pan. Add the peppers and onions and cook, stirring, until soft, about 4 minutes. Add the rice, 2 cups water, cumin and a large pinch of salt. Bring to a simmer, cover and reduce the heat. Cook until the rice is tender and the all water has been absorbed, 15 to 20 minutes. Stir in the beans and bacon pieces.
- Brush the grill grates generously with oil. Place the fish on the grill, rounded-side down, and leave it until you can lift the fish without it sticking to the grill and there are distinct grill marks, about 5 minutes. (Test it by gently lifting a corner -- if it sticks, cook it a bit longer and try again.) Carefully turn the fish over and cook until firm to the touch, about another 5 minutes.
- Divide the rice and beans among 4 plates. Top each with a piece of mahi-mahi. Drizzle with the remaining vinaigrette. Sprinkle with crushed plantains and serve each with a lime quarter.
BEK'S GRILLED MAHI MAHI FILLETS IN SOY GINGER MARINADE (OAMC)
This is a mild, Asian-inspired marinade that complements the mild flavor of Mahi Mahi. Great summer dish, I'm sure it would be good on any mild fish. OAMC chefs, double or triple the marinade as needed and freeze in family-sized portions - I use my vacuum sealer. **As with many of my original recipes, the ingredient amounts are approximate. Adjust to your preferences. As always, let me know if you make any substitutions or tweaks - I always like new ways to try old favorites! (Cooking time does not include marinating time.)

- In a 1 gallon zipper bag, combine all ingredients except fish. Squish to combine. Add mahi and seal, refrigerate at least 4 hours or overnight.
- OAMC - squeeze all air out of zipper bag, or seal in a vacuum sealer and store in the freezer. Defrost and grill, following instructions below.
- Spray grill with non-stick cooking spray, the preheat to 475°F Cook fillets about 4 minutes on the first side, then turn and cook another 2-3 minutes, depending on thickness. Trust yourself on the grill, based on the thickness of your fillets - don't blindly use my timing! An overcooked fish is a sad fish.

SPICY ORANGE GLAZED GRILLED MAHI-MAHI WITH BRAISED FENNEL
The glaze for the Mahi-Mahi contains some things you may not be familiar with such as; Sambal oelek which is a simple, spicy chili paste. There is no garlic or other spices included which allows you to add heat to a dish without altering other delicate flavors. This is a common table condiment in Asia and China. Thai chili: This is a small chili with a fiery punch that doesn't dissipate with cooking. It ranges in color from green to red when fully ripe. and Lemongrass: One of the most important herbs in Thai and Vietnamese cooking. It's a long, thin stalk with gray-green coloring with a sour-lemon flavor. These spices and herbs, blended together makes the glaze for this fish delicious and flavorful, albeit very spicy!

Steps:
- Juice one fennel bulb by either a) placing in a juicer, or b) placing in blender, then straining blender contents; discarding solids.
- Cut each of the other two fennel bulbs into six pieces.
- Lightly sautee garlic and ginger in olive oil, until translucent.
- Add the cut fennel, white wine, and the fennel juice. Cook fennel until soft.
- Season fennel with salt and pepper.
- As fennel cooks, season the fish and place on grill (or grill pan). Cook about 3 to 4 minutes on each side.
- Right before you remove fish from grill, brush on orange glaze. Serve fish with braised fennel.
- For the Spicy Orange Glaze:.
- Place sugar in a dry, hot pan, stirring until sugar is caramelized a golden brown.
- Add juice, thai chili, ginger, garlic and the lemongrass. Cook until reduced to half.
- Strain and chill until used to glaze the grilled mahi-mahi.

GRILLED MAHI MAHI FILLETS AND ASPARAGUS WITH ORANGE AND SESAME

- Preheat grill pan to over medium high to high heat. Season mahi mahi fillets with salt and pepper. Combine the lime juice, dark soy, ginger and a little vegetable or canola oil in a shallow dish. Turn the mahi mahi in the citrus soy marinade and let it hang out for 10 minutes. Grill on hot grill pan for 6 minutes per side for a 1-inch fillet or until fish is firm and opaque.
- Take 1 spear of asparagus and hold it at each and. Bend the asparagus until it snaps and breaks. Use this spear as your guide on where to trim the ends of your bundle of spears. Using a peeler, make thin long strips of orange zest from both oranges. Cut the ends off the zested oranges and stand them up right on a cutting board. Remove the pith in strips using sharp knife and cutting down from the top of the orange. Discard the pith. When the oranges are both peeled and trimmed, turn them on their sides and slice into 1/4-inch rounds, cross sectioning the whole. Set the orange disks aside. In a skillet with a cover, bring 1-inch water to a boil with the zest of the oranges and grated fresh gingerroot. Allow the orange zest and ginger to simmer for at least 1 minute then add salt and asparagus spears. Simmer the spears 3 to 5 minutes until just tender. Drain the asparagus. Discard the orange zest and ginger. Assemble a few spears on each dinner plate, layering them back and forth, crisscrossing the spears over orange slices. Sprinkle sesame seeds over asparagus and oranges and top with 1 portion of grilled mahi mahi. Garnish assembled fish and asparagus with chopped or thinly sliced chives.
GRILLED MAHI-MAHI WITH PINEAPPLE RUM GLAZE
This is another great tropical recipe for Mahi-mahi, that I stole from another web site! I like to use fresh pineapple but canned will do. Enjoy!!

- In a saucepot over medium heat, add the butter, red onion, shallots and garlic. Cook for 3 minutes until the onions are soft, but not brown. Add the grilled pineapple, honey, dark rum, pineapple juice and green onions. Bring to a boil, remove from heat and set aside.
- Season to taste with salt and pepper.
- Preheat grill to medium high.
- Place the Mahi-mahi on a flat surface and rub with seasoning, pressing the spice gently into the meat. Brush lightly with olive oil. Grill for three to four minutes per side, glazing liberally with pineapple glazing syrup until the fish is just cooked through, tender and flakes lightly.

- Cook garlic and shallots in 2 tablespoons oil in a 12-inch heavy skillet over moderate heat, stirring, until softened, 3 to 5 minutes.
- Add chiles and pineapple, then sauté over moderately high heat, stirring occasionally, until pineapple is softened, 4 to 5 minutes.
- Add fish sauce, sugar, and salt and sauté sambal, stirring, 30 seconds.
- Cool to room temperature, then stir in cilantro.
- Brush fish all over with remaining tablespoon oil, then season with salt.
- Grill, skin sides down, on lightly oiled grill rack, until skin is crisp, 4 to 5 minutes.
- Turn fish over and grill until just cooked through, 4 to 5 minutes more.
- Serve fish with sambal.
- I have grilled these indoors using a grill pan with good results.

- Cut avocado, tomato into 1/2 inch chunks, add minced onion, and jalapeno, cilantro and lime juice and salt.
- Mix together and store in fridge can be made hours before.
- Meanwhile take mahi mahi and cut into strips.
- Add olive oil, lime, salt and pepper and marinate for 20-30 minutes.
- Grill over coals or on a grill or under broiler for 6-8 minutes per side.
- Serve fish with salsa on top.

- With mortar and pestle, mash garlic and salt to form paste; place in a gallon bag.
- Add rum, lime juice, mint, cilantro, peppers, oil, honey, lime peel, cumin, salt and pepper.
- Add fish; turn and rub to distribute marinade evenly.
- Refrigerate for no more than 30 minutes so fish doesn't break down.
- Place fish on grill over medium heat or 4 to 6 inches from coals.
- Grill 8 to 10 minutes or until fish flakes.
- Turn once and spoon remaining marinade over fish halfway through grilling time.

Mahi-mahi is a dolphin-fish, not to be confused with dolphins or porpoises which are mammals. This is a deliciuos recipe that I stole from another cooking site! Cooking time does include marinading time.

- Combine fresh lime juice and enough Rose's Lime juice to make 1/3 cup. Add the oil, salt, celery salt, black pepper, hot-pepper sauce, scallion, water and honey in a small bowl and whisk to incorporate.
- Place Mahi-mahi in a zip-lock style bag and pour 4 tablespoons of the mixture over fish; turn to coat. Refrigerate 20 minutes, turning once. Reserve remaining mixture for sauce (warm slightly).
- Prepare a charcoal grill with hot coals, or heat a gas grill to high, or heat broiler. Position grill rack 6 inches from coals or broiler pan 3 inches from heat.
- Grease grill rack or rack of a shallow roasting pan. Place fillets on rack. Drizzle with half of lime juice mixture from marinade bag. Grill over hot coals on covered grill 2 minutes per side or until cooked through, or broil 4 minutes per side.
- Serve Mahi-mahi with remaining sauce warmed.
