SWEET ORANGE CHICKEN DRUMSTICKS

1/2 cup finely chopped yellow onion
1/4 cup fresh orange juice (from 1 large orange)
1/4 cup ketchup
1/4 cup orange marmalade
1/4 cup apple cider vinegar
2 tablespoons low-sodium soy sauce
1 tablespoon Dijon mustard
1/2 teaspoon Chinese five-spice powder
1/2 teaspoon paprika
1/4 teaspoon freshly ground black pepper
1 garlic clove, minced
8 skin-on chicken drumsticks (about 1 pound)
Chopped fresh parsley, for sprinkling

Steps:

  • Add the onion, orange juice, ketchup, orange marmalade, apple cider vinegar, soy sauce, Dijon, five-spice, paprika, black pepper and garlic to a large resealable plastic bag. Close the bag and shake to incorporate. Add the chicken drumsticks to the bag. Reseal and marinate for at least 1 hour in the refrigerator. (Chicken can be prepped the day before and refrigerated overnight.)
  • Preheat oven to 400 degrees F.
  • Pour the entire contents of the bag onto a foil-lined sheet tray. Bake, turning the drumsticks halfway through baking, until the chicken is cooked through, the juices run clear and an instant-read thermometer inserted into the thickest part of meat (avoiding bone) registers 160 degrees F, about 25 minutes.
  • Remove to a platter and let rest 5 minutes, then sprinkle with parsley and serve warm.

1 pound multicolor fingerling potatoes, halved lengthwise
1 pound green beans, trimmed
1 cup thinly sliced red onion
2 tablespoons olive oil
¾ teaspoon kosher salt, divided
½ teaspoon ground pepper, divided
4 large chicken drumsticks (1 1/2-2 lbs. total), skin removed
1 orange
3 tablespoons apricot preserves
1 tablespoon reduced-sodium soy sauce or tamari
3 cloves garlic, minced

Steps:

  • Preheat oven to 425 degrees F.
  • Place potatoes, green beans and onion on a large rimmed baking sheet. Drizzle with oil and sprinkle with 1/2 tsp. salt and 1/4 tsp. pepper. Nestle chicken into the vegetables.
  • Grate 1/2 tsp. zest from orange and squeeze it to get 2 Tbsp. juice. Combine the zest and juice, preserves, soy sauce (or tamari), garlic and the remaining 1/4 tsp. each salt and pepper in a small bowl. Brush the chicken with half of the glaze.
  • Roast the chicken and vegetables for 15 minutes. Stir the vegetables; turn the chicken and brush with the remaining glaze. Continue roasting until the chicken registers at least 165 degrees F on an instant-read thermometer and the potatoes are tender, about 20 minutes more.

1 tablespoon salted butter
1 1/2 pounds green beans, trimmed
1 red bell pepper, finely chopped
1 teaspoon red pepper flakes
Kosher salt

Steps:

  • Add the oil and butter to a skillet over medium-high heat. When the butter is melted and hot, add the green beans and bell pepper and toss to coat. Add the red pepper flakes and some salt and toss again. Cook, stirring frequently, until the beans are crisp-tender, about 5 minutes.

2 cloves garlic, finely minced
1 lb fresh green beans
2 tablespoons orange marmalade
1 teaspoon dried rosemary, crushed
1 teaspoon grated orange zest
1/4 teaspoon salt
1 tablespoon butter

Steps:

  • Trim beans and break into 1 inch lengths, wash.
  • In medium saucepan bring water and garlic to a boil.
  • Add green beans, reduce heat to low, cover and simmer for 10 to 15 minutes or until beans are crisp tender.
  • If any water remains at end of cooking, drain and return beans to pan.
  • Turn up heat to medium add remaining ingredients and heat to boiling, stirring occasionally.
  • Serve immediately.

8 chicken drumsticks
2 tablespoons McCormick® TASTY Jazzy Spice Blend

Steps:

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a small bowl, whisk together the orange marmalade, sambal olek, kosher salt. Set aside.
  • Season the drumsticks all over with the Jazzy spice blend and place on the prepared baking sheet.
  • Bake the drumsticks for 35-40 minutes, brushing liberally with the marmalade mixture during the last 10 minutes of cooking, until well-glazed and the internal temperature reaches 165°F (75°C).

  • Heat oven to 400º F. In a small bowl, mix the marmalade and chili-garlic sauce. Season the chicken with ½ teaspoon salt and ¼ teaspoon pepper. Roast on a foil-lined baking sheet until cooked through, 30 to 35 minutes, brushing with the marmalade mixture during the last 10 minutes of cooking. Meanwhile, bring a pot of salted water to a boil.
