This Crock Pot Beef and Three Bean Chili is a hearty, make ahead chili recipe that's loaded with vegetables, browned beef and so much flavor from all the spices! It can easily be made vegan or in the instant pot! It's the perfect comforting dinner!

1 lb. of ground beef
1 tablespoon avocado oil
1 1/2 cup of onion, diced
1 red pepper, diced
2 green pepper, diced
3 carrots, peeled and diced
1 teaspoon diced chipotle peppers in adobo sauce
28 oz. can of crushed tomatoes
15 oz. can of diced fire roasted tomatoes
15 oz. can tomato sauce, no salt added
1 cups of beef broth
1 1/2 tablespoons of cumin
2 tablespoons of chili powder
1 tablespoon of smoked paprika
1/2 tablespoon of coriander
1/2 tablespoon of oregano
15 oz. can of black beans, drained and rinsed
15 oz. can of kidney beans, drained and rinsed
15 oz. can of pinto beans, drained and rinsed
Green Onions, sliced
Shredded Cheddar Cheese
Avocado, diced
Jalapeno
Sour Cream

Steps:

  • Heat a skillet to medium high heat. Add avocado oil and onion to the skillet. Saute until translucent, about 2-3 minutes.
  • Next, add ground beef to the skillet. Cook until beef is no longer pink, breaking up the meat with a wooden spoon throughout the cooking process.
  • Once, meat is cooked through. Place ground beef mixture, red and green pepper, carrots, chipotle peppers, crushed tomatoes, diced fire roasted tomatoes, tomato sauce, beef broth, cumin, chili powder, smoked paprika, coriander and oregano.
  • Stir, cover, and cook on HIGH for 3-4 hours or LOW for 6-7 hours.
  • Then add black beans, kidney beans and pinto beans.
  • Cook for an additional 30 minutes. Season with salt and pepper as needed
  • Serve with shredded cheddar cheese, sliced green onions, and diced avocado.

1 teaspoon ground cumin

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Transfer beef to the bottom of a slow cooker. Add kidney beans, crushed tomatoes, tomato sauce, bell pepper, onion flakes, chili powder, and cumin. Stir well.
  • Cover and cook on Low until flavors have melded, at least 4 hours, up to 8 hours.

1 (28 ounce) can diced fire-roasted tomatoes
1 (16 ounce) can tomato sauce
1 (15.5 ounce) can pinto beans, rinsed and drained
1 (15.5 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can reduced-sodium black beans, rinsed and drained
1 small onion, chopped

1 serving homemade chili seasoning mix ((see recipe))
1 lb ground beef ((browned and drained of fat, we prefer 93% lean ground beef))
16 oz can tomato sauce ((plus a can full of water))
6 oz can tomato paste
14.5 oz can petite diced tomatoes ((diced, stewed, or crushed work too))
15.25 oz can black beans ((rinsed and drained))
2 15.25 oz cans dark red kidney beans ((rinsed and drained))
2 15.25 oz cans pinto beans ((rinsed and drained))
1/2 white onion ((chopped))
1 Tbsp garlic ((minced, 2-3 large cloves))

Steps:

  • Brown the ground beef in a large skillet over medium high heat, then drain off the excess fat and transfer to your slow cooker.
  • Add the chili seasoning mix and add remaining ingredients: tomato sauce (and full can of water), tomato paste, diced tomatoes, black beans, kidney beans, pinto beans, onion, and garlic.

  • Put first 13 ingredients in crock pot with 1 tablespoon of the sugar, mix well, add pinto beans.
  • Turn crock pot on low.
  • Heat some olive oil in a large skillet sauté garlic, onions and green pepper for 4-5 minutes.
  • Add to crock pot.
  • Dredge the beef in the flour and brown in skillet.
  • (add more oil, if necessary).
  • Add to crock pot stir well.
  • Cook 8-10 hours.
  • Taste check; for acidity if necessary add more sugar, salt.
