SPICY TUNA FISH SANDWICH
This is similar to classic tuna fish salad but with a kick. My boyfriend made this when we were out of relish and decided to substitute with jalapenos. It was awesome! I added the relish back in to give it a sweetness along with the spiciness.

Steps:
- Bring 1 1/2 inches water and lime rinds to a boil in a wide pot; season generously with salt. Add corn; boil until bright yellow and crisp-tender, 3 minutes. Transfer corn to a plate. Add shrimp and fish to pot; remove from heat, cover, and let stand until shrimp are opaque and fish is cooked through, 3 to 4 minutes. Transfer to plate; let cool about 5 minutes. Discard lime. Cut corn from cobs.

Let cool completely, stirring occasionally (or refrigerate, covered, up to 1 day). Season with salt and pepper. Serve seafood salad over lettuce, topped with corn nuts.
SPICY TUNA AND HUMMUS SALAD
Hummus replaces mayo in this recipe for a flavorful twist on a favorite sandwich food. Makes 4 generous-sized portions. Pack them individually for a quick and nutritious lunch. Serve with a handful of spinach and a slice of tomato on light whole wheat bread.

SPICY ASIAN TUNA SALAD
Do yourself a favor and try this fabulous variation on traditional tuna salad. It's good for everyday use on top of a salad with an asian vinagrette and can also be served with crackers at a dinner party. If you like a little crunch in your tuna salad feel free to substitute red onion for the green onion or add some chopped up celery. I created this recipe on a whim for use in my sushi rolls and have it posted under "Spicy Tuna Salad Sushi Roll" with a lot of detailed instructions on how to prepare the rolls.
