SPICY SESAME TUNA SALAD

1/4 cup mayonnaise
1/4 cup toasted sesame oil
2 tablespoons lime juice
1 tablespoon chili-garlic paste
1 tablespoon toasted black sesame seeds
1/4 teaspoon red pepper flakes
Four 5-ounce cans tuna in water (no salt added), drained
1/2 bunch green onion, greens sliced
Kosher salt

Steps:

  • Combine the mayonnaise, sesame oil, lime juice, chili garlic paste, black sesame seeds and red pepper flakes in a large bowl. Fold in the tuna and green onions and season with salt. Refrigerate for 1 hour before serving.

8 slices bread, toasted

  • Stir tuna, Cheddar cheese, diced jalapeno, mayonnaise, relish, lemon juice, and pepper together in a bowl. Spread tuna mixture on a slice of toast and top with remaining slice to make a sandwich.

3 tablespoons fresh lime juice, squeezed rinds reserved
Kosher salt and freshly ground pepper
3 ears corn, shucked
3/4 pound medium shrimp (preferably wild), peeled and deveined
3/4 pound skin-on red-snapper fillet
2 medium tomatoes, cored and coarsely chopped (1 1/2 cups)
1 jalapeno, thinly sliced into rounds
1/2 white onion, finely chopped (3/4 cup)
3/4 cup chopped cilantro
3 tablespoons safflower oil
1 head Boston or Bibb lettuce, leaves separated
Corn nuts, for serving (optional)

Steps:

  • Bring 1 1/2 inches water and lime rinds to a boil in a wide pot; season generously with salt. Add corn; boil until bright yellow and crisp-tender, 3 minutes. Transfer corn to a plate. Add shrimp and fish to pot; remove from heat, cover, and let stand until shrimp are opaque and fish is cooked through, 3 to 4 minutes. Transfer to plate; let cool about 5 minutes. Discard lime. Cut corn from cobs.
  • Stir together corn, tomatoes, jalapeno, onion, cilantro, lime juice, and oil. Remove skin from fish; flake into bite-size pieces and stir into corn mixture with shrimp. Let cool completely, stirring occasionally (or refrigerate, covered, up to 1 day). Season with salt and pepper. Serve seafood salad over lettuce, topped with corn nuts.

4 large tomatoes, chopped
1/2 cup red onion, finely diced
2 cups cilantro, lightly packed and chopped
1/2-3/4 cup fresh lime juice
2 jalapeno peppers, seeded and minced (optional)
1 teaspoon salt
1 head boston lettuce
24 baked corn tortilla chips

Steps:

  • Place tuna in a medium bowl and break into large pieces with a fork.
  • Add tomatoes, onion, cilantro, lime juice, peppers, and salt.
  • Stir to mix.
  • Cover and refrigerate 30 minutes or up to 6 hours.

1 small avocado (chopped)
1 small tomato (chopped)
3 tbsp mayonnaise
2 tbsp taco sauce
1 tbsp sour cream
4 pickled jalapeño slices (finely chopped)
2 tsp lemon juice
2 tsp lime juice
1 tbsp chopped cilantro (optional)

Steps:

  • In a small bowl, whisk together the mayonnaise, sour cream, taco sauce, lemon and lime juices and salt until smooth. Add the finely chopped jalapeño pepper and stir until combined.
  • In a larger bowl, add the tuna and use a fork to break it up. Add the chopped avocado and tomato. Add the mayonnaise and taco sauce dressing and stir until well combined.
  • This salad can be stored in an air-tight container in the refrigerator for up to 2 days. I do not recommend freezing this recipe.

1 teaspoon salt
2 teaspoons cayenne pepper
1/3 cup lemon juice
3 large cloves garlic, minced
3 large shallots, minced
2 teaspoons ground cumin
1 bunch cilantro, leaves only, finely chopped
6 (6 ounce) pieces of tuna fillet
Vegetable oil, for greasing the grill
Lemon wedges, for garnish

Steps:

  • In a small mixing bowl, combine the olive oil, salt, cayenne pepper, lemon juice, garlic, shallots, cumin, and about 3/4 of the cilantro (reserve the remaining cilantro for garnish).
  • Place the tuna fillet in a large glass or ceramic dish. Rub your fingers over the fish to check for and remove any remaining bones, and pour the marinade over the tuna. Make sure the fish are evenly coated on both sides and marinate for 1 hour in the refrigerator, turning once.
  • Brush a grill or broiler pan with vegetable oil and heat it to high heat. Grill the fillets for 4 to 5 minutes on each side, until done to your liking. Garnish with the remaining cilantro and the lemon wedges.
