Known as tinga in Mexico, this popular tostada topping is tastiest with the addition of crumbled Mexican chorizo (a fresh sausage, unlike dried Spanish chorizo).

For the spicy chicken topping:
1/4 cup kosher salt, plus more to taste
2 pounds skinless, bone-in chicken thighs
1 (28-ounce) can whole tomatoes, drained
3 canned chipotle chiles in adobo, plus 2 tablespoons adobo sauce
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground cinnamon
Pinch of ground cloves
1 medium white onion, diced
4 garlic cloves, crushed
4 ounces fresh Mexican chorizo (about 1/2 cup), casings removed, crumbled, fried until almost crisp (optional)
For the tostadas:
16 small corn tortillas or store-bought crispy tostada shells
Vegetable oil (for frying; if needed)
Kosher salt (if needed)
1 1/2 cups Creamy Black Bean Spread
Shredded iceberg lettuce, thinly sliced white onion, crema (Mexican salted cream) or sour cream, queso fresco, cilantro leaves with tender stems (for serving)

A candy or deep-fry thermometer

Steps:

  • Make the spicy chicken topping:
  • Fill a large pot with 8 cups water; stir in 1/4 cup salt. Add chicken and simmer over medium-low heat until just cooked through, about 45 minutes. Drain, then chop or tear chicken into bite-size chunks. Discard bones.
  • Meanwhile, purée tomatoes, chiles, adobo sauce, pepper, cinnamon, and cloves in a blender until smooth.
  • Cook onion in a large skillet over medium-high heat, stirring occasionally, until sweet and charred (you want more char than "caramelization"), 8-10 minutes. Add garlic and cook, stirring occasionally, until golden brown and fragrant, about 3 minutes longer.
  • Add tomato mixture to skillet (it will splatter), reduce heat, and simmer, partially covered, about 30 minutes. Add chicken and chorizo, if using, and cook, stirring occasionally, until chicken is well-coated and moist and liquid is reduced and thickened, about 10 minutes more. Season with salt, if needed.
  • Assemble the tostadas:
  • If frying tortillas, fit a large skillet with candy or deep-fry thermometer; pour in oil to measure 1". Heat over medium-high until thermometer registers 375°F. Fry tortillas in batches until crispy, turning every 30 seconds, about 2 minutes total. Drain on paper towel-lined baking sheets and season with salt.
  • Spread 1 Tbsp. Creamy Black Bean Spread on a tostada shell. Top with 1/4 cup spicy chicken topping, then lettuce, onion, crema, queso fresco, and cilantro. Repeat with remaining tostada shells. Serve at room temperature.
  • Do Ahead
  • Spicy chicken topping can be chilled for up to 3 days. Reheat and let cool to room temperature before using.

2 lbs boneless pork butt, trimmed of excess fat and cut into 1-inch pieces
2 medium onions, 1 quartered and 1 chopped fine
5 medium garlic cloves, 3 peeled and smashed and 2 minced
4 sprigs fresh thyme
1 teaspoon salt
2 tablespoons olive oil
1/2 teaspoon dried oregano
1 (14 1/2 ounce) can tomato sauce
1 tablespoon dried chipotle powder
2 bay leaves
3/4 cup vegetable oil
12 corn tortillas (6-inch)
salt

Steps:

  • Bring pork, quartered onion, smashed garlic, thyme, 1 tsp salt and 6 cups water to simmer in large saucepan over medium-high heat, skimming off any foam that rises to the surface. Reduce heat to medium-low, partially cover and cook until pork is tender, 75-90 minutes. Drain pork, reserving 1 cup cooking liquid. Discard onion, garlic and thyme. Return pork to saucepan and using potato masher, mash until shredded into rough 1/2" pieces. Set aside.
  • Heat olive oil in 12" nonstick skillet over medium-high heat until shimmering. Add shredded pork, chopped onion and oregano; cook, stirring often until pork is well browned and crisp, 7-10 minutes. Add minced garlic and cook until fragrant, about 30 seconds.
  • Stir in tomato sauce, chipotle powder, reserved pork cooking liquid and bay leaves; simmer until almost all liquid has evaporated, 5-7 minutes. Remove and discard bay leaves and season to taste with salt.
  • To fry tostadas, heat vegetable oil in 8" heavy bottomed skillet over medium heat to 350 degrees. Using fork, poke center of each tortilla 3-4 times (to prevent puffing and allow for even cooking). Fry 1 at a time, holding tortilla down to keep it submerged. Drain on paper towel lined plate and season with salt to taste.
  • Spoon small amount of shredded pork onto center of each tostada and serve with garnishes.

This is inspired by the famous Contramar Tostada, with some of the same flavors but a very different composition.

2 to 3 cups vegetable oil
Eight 4-inch corn tortillas
12 to 16 ounces number 1 grade ahi tuna
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 shallot, finely minced
1 lime, cut into supremes (see Cook's Note), juice reserved
1 watermelon radish, peeled, or 4 regular radishes, julienned
1/2 bunch fresh cilantro, leaves picked, stems discarded
2 to 3 chipotles in adobo sauce
1/2 cup mayonnaise
Juice of 1/2 lime
1/8 cup pure olive oil
Kosher salt

Steps:

  • For the tostadas: Preheat the vegetable oil in a deep-fryer to 350 degrees F. Line a plate with paper towels.
  • Fry the tortillas flat until completely crisp, about 1 minute. Drain on the paper towels.
  • Cut the tuna into 1/4-inch cubes, discarding large pieces of sinew, and place in a small bowl. Dress the tuna with 2 tablespoons olive oil and some salt and pepper and mix well. Add the shallot. Drain the juice from the lime supremes and add to the radishes in a small bowl. Add the supremes to the tuna mixture and mix well. Chop half the cilantro and add to tuna mixture. Add the remaining tablespoon olive oil to the radishes and season with salt and pepper.
  • For the chipotle aioli: Place the chipotles, mayo and lime juice in a mortar and pestle and blend until smooth. Slowly add the oil and season with salt. Spoon into a bowl.
  • To compose, spread about 1 1/2 tablespoons chipotle aioli on each of the tostada rounds. Place the tuna mixture on top of the chipotle aioli. Top the tuna with the radish mixture and the remaining cilantro leaves.

6 (6 inch) corn tortillas
2 tablespoons vegetable oil (such as canola, or as needed)
1 (16 ounce) can refried beans
1 tablespoon taco seasoning
1 lb lean ground beef
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano leaves
1/2 teaspoon dried chipotle powder (to taste)
1/2 teaspoon sea salt (to taste)
1/2 teaspoon black pepper (to taste)
1 large garlic clove, pressed
1 cup iceberg lettuce, finely chopped
2 medium roma tomatoes, washed, seeded and diced
3/4 cup pico de gallo
2 medium avocados, stone removed, peeled and diced
1/2 cup pickled red onions (as needed)
1 cup queso fresco, crumbled (substitute cotija cheese or feta)
1/2 cup sour cream (or crema)
6 tablespoons cilantro, chopped (for garnish)
6 large lime wedges (for serving)

Steps:

  • Preheat oven to 170ºF/75ºC.
  • Brush on some vegetable oil on one side of each tortilla; set aside.
  • Warm up a panini press on medium-high heat.
  • When hot, working with one at a time, place a tortilla, oiled side down, and brush the top with oil. Place the press on top and cook for between 40 to 60 seconds or until golden brown. Flip it and cook the other side.
  • Transfer the cooked tortillas in a single layer on a baking sheet lined with a wire rack and transfer them to the preheated oven to keep them warm while looking after the toppings.
  • In a bowl, add refried beans with Old El Paso Taco Seasoning. Combine the ingredients until well blended.
  • In a medium skillet over medium-low heat, add the refried bean mixture and warm it up, stirring often. When the refried bean mixture is warmed, turn the heat to the lowest setting until ready to serve.
  • In another medium skillet over medium heat, add ground beef and, breaking the meat into small pieces, cook it halfway.
  • Season the meat with ground cumin, oregano leaves, chipotle powder, ground sea salt and freshly ground black pepper. Stir well until nicely mixed and continue cooking until the meat is no longer pink.
  • Add pressed garlic and sauté for only 1 minute.
  • Using a slotted spoon, scoop the meat into a bowl, leaving the fat behind.
  • To assemble, spread some refried bean mixture onto a grilled tortilla, about 2 tablespoons.
  • Scoop some ground beef mixture on top then some chopped iceberg lettuce, diced Roma tomatoes, Pico de Gallo or Fire Roasted Salsa, avocados, pickled red onions, and cheese.
  • Drizzle on crema and sprinkle on chopped cilantro. Serve them with a couple of lime wedges.

1 teaspoon salt
1/2 teaspoon coarsely ground pepper

1 bone-in pork loin roast (about 3 pounds)

1 medium green pepper, chopped
1 cup salsa
1/2 cup frozen corn, thawed
1/2 cup canned black beans, rinsed and drained
1 teaspoon paprika

1/4 teaspoon hot pepper sauce
1/4 cup minced fresh cilantro
