1 large tomatoes, chopped
1/2 teaspoon garlic powder
1 1/2 teaspoons chili powder

Steps:

  • Saute all ingredients in a large frying pan over medium high heat for 5 minutes.
  • Add a little water if necessary, to prevent sticking. Serve over rice or cous cous.

1 (15 ounce) can chickpeas, drained
1 tablespoon vegetable oil
1 1/2 teaspoons chili powder (or more)
1 teaspoon paprika
1 teaspoon cornflour
1/2 teaspoon cumin
1/2 teaspoon oregano
1/3 teaspoon garlic powder or 1/3 teaspoon onion powder
1/3 teaspoon cilantro (ground coriander)
1 dash cayenne pepper (or to taste)
1 -2 teaspoon nutritional yeast
salt (to taste)

Steps:

  • Preheat oven to 375ºF/190ºC.
  • Mix chickpeas and oil.
  • In a small ball mix together corn flour & spices (except salt). Add to chickpeas and toss to coat.
  • Bake on a baking sheet about 40 min.(or until crunchy).
  • - Sprinkle with salt.

TWISTED MAD MEX STYLE SPINACH AND PORTABELLO BURRITO



Twisted Mad Mex Style Spinach and Portabello Burrito image

When I was in college, I would frequent a tiny joint across the street from my apartment in Pittsburgh called Mad Mex. EVERYTHING was good there! One of my favorite menu items was this enormous burrito stuffed with spinach, mushrooms, rice, and beans. I've tried to re-create it "MY WAY" over the years, and even my son LOVES this flavorful burrito.

3 medium sized portabello mushrooms, gently cleaned and sliced
4 cups fresh spinach, cleaned and stems removed
3 garlic cloves, minced
1/4 cup white onion, minced
2/3 cup long grain rice, plain
1 1/3 cups chicken stock
1/2 cup diced tomato
1 teaspoon ground cumin
1 (15 ounce) can black beans, drained and rinsed
2 teaspoons salt
1 teaspoon pepper
4 tortillas, fresh and warm
1/2 cup diced scallion
1/4 cup shredded monterey jack cheese
1/4 cup Mexican crema
1 1/2 tablespoons adobo sauce, from a can of Chipotle Peppers
1/2 teaspoon honey
4 slices bacon, cooked and crumbled
salt
pepper

Steps:

  • To start the rice, put chicken stock in a heavy pot and bring to a boil. Add rice and tomatoes. Season with a little salt and pepper. Reduce heat to a low simmer and cover. Simmer for about 15 minutes. Add the black beans and cumin. Simmer for another 3-5 minutes, or until all liquid is absorbed. You may want to hit it with just a bit more salt and pepper to your liking.
  • Warm Olive Oil in a skillet at medium high heat. Add onion and cook for about 2 minutes, until translucent. Add garlic, spinach and mushrooms. Lower heat to medium. Cook until spinach is wilted and mushrooms are cooked through. Do not burn the garlic!
  • Mix together the crema, adobo sauce, and honey in a bowl. Season to your liking with salt and pepper.
  • To assemble the burrito, scoop the spinach-mushroom mixture and rice-bean mixture into a tortilla. Add a sprinkle of cheese, some bacon pieces, chopped scallions, and a drizzle of the crema sauce. Roll your burrito and enjoy!

A moreish vegan snack, flavoured with smoked paprika, cumin and coriander. Simply spice, roast and get stuck in!

1 x 400g can chickpeas, drained
1tsp rapeseed oil
2tsp smoked paprika
2tsp ground cumin
2tsp ground coriander
½tsp cayenne pepper

Steps:

  • Heat oven to 200C/180C fan/gas 4. Tip the chickpeas into a bowl and toss with the rapeseed oil, smoked paprika, cumin and coriander along with a big pinch of salt. Toss well until the chickpeas are well coated, then tip out onto a baking tray and bake for 35 mins, moving them round the tray halfway through so they dry out evenly and are crunchy. Leave to cool, then store in an airtight container.

EASY PUNJABI-STYLE CHICKPEA AND POTATOES



Easy Punjabi-Style Chickpea and Potatoes image

I came up with this when I was in the mood for spicy potatoes, and immediately thought of my favorite side dish at the Jackson Diner buffet. This is a great sidedish but I also like it as a main meal too, with some rice or naan. Green peas would work in this recipe too, either as a third main ingredient or to replace the chickpeas, but I love the richness of the chickpeas and couldn't get over not only how close it was to Indian restaurant quality, but also how simple and quick it was to make! By accident better yet! You'll find it hard to believe it's homemade and from canned food better yet. The taste is very hot and spicy, and what I love the most is the way the kick sneaks up on you after a minute! :) Important note-- I created this dish by accident so I just ballparked the spices before tweaking measurements. This yields about 4 cups (I'd have about a 2-cup serving with one more leftover for the next day), so if you're planning on a potluck, larger amount to cook for your family, OAWC/OAMC, etc. you might want to use the multiplier on here to figure out the correct proportions for the ingredients.

1 (16 ounce) can diced new potatoes
1 (16 ounce) can chickpeas
1/4 cup canola oil
2 tablespoons garam masala (sometimes I like to up it to 2.5 tbsp)
1 tablespoon curry powder (as hot as you'd like, I like it hot)
1 1/2 teaspoons coriander
1 teaspoon cumin
3/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika

Steps:

  • Rinse and drain the chickpeas and potatoes thoroughly.
  • In a saucepan, mix them together with the canola oil so all the pieces are thoroughly coated. I listed 1/4 cup to start with-- but add more if there's not enough to coat the food.
  • Add all the seasonings listed, then mix together until thoroughly blended.
  • Turn on high heat until oil starts bubbling.
  • Lower the heat to medium-low, cover, and let simmer for 10 minutes, stir it occasionally to make sure pieces don't get stuck to the bottom of the pot.
  • Remove from the heat element and let sit on a trivet for 5 minutes still covered.
  • Uncover and enjoy! It's like eating samosa filling! Great with naan, a good curry, or as a wonderful side dish/accompaniment to prantha, bhajia, rice and dal, curried vegetables, or mash it up a bit to use for samosa and masala dosa filling.

6 cups of cooked chickpeas
4 garlic cloves
3 tablespoons olive oil
1 -2 teaspoon dried red chili pepper flakes
1 teaspoon black onion seeds
1 teaspoon whole cumin seed
1 teaspoon black mustard seeds
1/2 teaspoon ground cardamom
1 limes, juice of, small or 1/2 lemon
sea salt

Steps:

  • Preheat the oven to 200°C/400°F
  • Peel and chop the garlic cloves rather coarsely.
  • Toss all the ingredients together thoroughly. Spread evenly over a baking sheet. Bake for 30 minutes, stirring around midway through. Take out and let cool. [Edit: this baking time turns out peas that are a mix of crunchy ones and ones that are still a bit soft - I like this variety.
  • Since all ovens vary, you will need to test the doneness. If you like your peas to be a bit soft, bake them for a shorter time; if you like them very crunchy leave them in longer.].
  • Store this in an airtight container in the refrigerator. Makes a great beer snack.
  • You can make it sweet-spicy by sprinkling over some brown or raw sugar to while it's still hot from the oven.
