SAUCY RASPBERRY CHICKEN
I first had this as a teenage babysitter, when the children's mom prepared it for us to eat while she was out. The kids loved it, and so did I! Now I make it for my own kids.

- Place chicken in a 3-qt. slow cooker. In a small bowl, combine the spreadable fruit, soy sauce, mustard and pepper; pour over chicken. Cover and cook on low for 5-6 hours or until meat is tender., Remove chicken to a serving platter; keep warm. Skim fat from cooking juices; transfer to a small saucepan. Bring to a boil. Combine cornstarch and water until smooth; gradually stir into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with chicken.

SLOW COOKER BARBECUE CHICKEN BREAST
A super easy recipe for barbecue chicken. You can also serve four people with this recipe, just add two more breasts and a second bottle of barbecue sauce.

- Season chicken breasts with salt and pepper on all sides. Place in slow cooker and pour 1/4 cup barbecue sauce and vinegar on top.
- Cook on Low for 3 hours.
- Combine brown sugar, onion powder, garlic powder, and red pepper flakes in a small bowl.
- Pour out all the liquid from the slow cooker and add remaining barbecue sauce. Sprinkle chicken with brown sugar-spice mixture.
- Cook on Low, stirring occasionally, until chicken is no longer pink in the center and the juices run clear, about 3 more hours. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- In slow cooker combine rice, chicken broth, and ginger.
- In a small bowl mix preserves and mustard. Stir into rice, and broth. Add chicken and pineapple.
- Cover and cook on low-heat setting for 3 hours or until liquid is absorbed and chicken is cooked to 170 degrees.

- Season the chicken with some salt and pepper. Heat a large skillet over medium heat and add the olive oil. Once the oil is hot but not burning, add the chicken and sear for 3 minutes on each side. Remove from the skillet and set aside.
- Using the same skillet, add the garlic and shallot and cook over medium heat for 1 minute. Add the chicken stock and wine and cook until slightly reduced, about 10 minutes. Add the sliced mushrooms and lower the heat to a simmer. Return the chicken to the skillet, cover and cook until the chicken is cooked through, an additional 10 minutes. Add the raspberries, butter, balsamic vinegar and lemon zest, and continue cooking, uncovered, for 1 minute.

- Season chicken with thyme and salt on both sides. Set aside.
- Heat oil in skillet over medium heat. Cook onion until browned and soft.
- Add chicken and cook until well cooked, about 8 minutes each side. Remove chicken and set aside.
- Add fruit spread, balsamic vinegar and pepper to oil in skillet. Cook for several minutes until ingredients are well combined and fruit spread is melted.

- Pour into a large re-sealable bag and add the chicken breasts. Make sure chicken is totally covered in the marinade, remove as much air as possible and marinate for at least 4 hours, if not overnight in the fridge. Adjust chicken breasts occasionally.
- Dump chicken, with the marinade, into the slow cooker. Cook covered on low for 5-6 hours or high for 2-3 hours, or until your chicken breasts are done.
- You now have a few options. You can serve chicken directly from your slow cooker. The other option is to make a gravy or sauce from the juices in your slow cooker. You have to try this at least once! Set your oven temperature to 200 or 250 degrees. Remove chicken to a pan or into an oven safe serving dish with a slotted spoon. Place in the oven to keep warm while you make your gravy. Turn your slow cooker up to high or pour liquid into a pot on your stove top. Bring to a boil, if it is not already. In a small cup combine water and cornstarch. Add to slow cooker and stir until incorporated. Stir covered on high for about 10-15 minutes or until sauce is thickened. Pour over chicken when serving. Enjoy!
