Spicy Chicken Meatballs with Arrabbiata Sauce image

This dish was inspired by R+D Kitchen and Milo + Olive, two of my favorite local spots in Santa Monica. Their chicken meatballs in tomato sauce are light but with a bit of heat and served without a strand of spaghetti in sight. Instead, they are ladled over arugula. For my version, I pair my spicy chicken meatballs with an equally spicy tomato sauce: Arrabbiata, which means "angry" in Italian. With fresh basil, bitter arugula, pungent red onion and a little Parm, this dish is perfect by itself, but if you want to push it into hearty territory, serve it over some spaghetti. Pile any leftovers onto an Italian roll for an epic sandwich the next day. Enjoy!

1/2 cup fine breadcrumbs
1/2 cup finely chopped onions
2 cloves garlic, minced
1/2 teaspoon dried oregano
2 teaspoons tomato paste
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
1 tablespoon parsley, finely chopped
1/4 cup finely grated Parmesan
Kosher salt and freshly ground black pepper
1 pound ground dark meat chicken
1/3 cup milk
1 large egg
Olive oil, for cooking
2 cups Arrabbiata Sauce (recipe follows), heated
1/2 red onion, thinly sliced
1/2 cup finely grated Parmesan
1 bunch arugula (about 6 ounces)
1/4 cup thinly sliced basil leaves
2 tablespoons extra-virgin olive oil
2 large cloves garlic, finely chopped
1/4 teaspoon crushed red pepper
One 28-ounce can whole tomatoes
1 teaspoon tomato paste
1/2 cup dry white wine
3/4 cup thinly sliced basil leaves
Kosher salt and freshly ground black pepper

Steps:

  • For the meatballs: Mix together the breadcrumbs, onion, garlic, oregano, tomato paste, cayenne, paprika, parsley, Parmesan and 1/2 teaspoon each salt and pepper in a large bowl; add the chicken, milk and egg. Gently blend together with your fingertips, then form into 2-inch balls. Don't compact the meatballs too much or they'll be dense and dry.
  • Heat a large skillet over medium-high heat and add a few tablespoons of olive oil to coat. Add the meatballs and cook until a deep golden brown, 2 to 3 minutes on each of their 4 sides. It's OK if they're not fully cooked through, as they'll finish cooking in the sauce. (If you're not cooking them in the sauce, then cook the meatballs over medium heat until cooked through, 3 to 4 minutes per side.)
  • For serving: Pour the hot Arrabbiata into the skillet with the meatballs. Reduce the heat to medium low, cover and cook until the meatballs are fully cooked through, 7 to 10 minutes.
  • Top with the red onions and Parmesan, then ladle over a handful of arugula in each serving bowl. Garnish with the basil and enjoy!
  • Heat the oil in a large skillet over medium heat. Add the garlic and crushed red pepper and cook, stirring, until fragrant, about 30 seconds. Add the tomatoes, tomato paste and wine and cook, stirring occasionally, until most of the alcohol has evaporated, about 5 minutes. Add the basil and cook, stirring occasionally, until the sauce has thickened.
  • Blend the sauce with an immersion blender (or in 2 batches in a blender) until smooth. Season with salt and pepper. Makes about 4 cups. Refrigerate any leftover sauce in an airtight container for up to 2 weeks or freeze for up to 3 months.

Recipe taken from Fine Cooking. This can be served over herbed couscous, steamed rice or whatever else tickles your fancy. For people out there who hate tomato chunks in their food, my husband for example, puree the tomatoes first. This said it makes about 30 meatballs. I ended up with 20.

1 cup fresh breadcrumb
1/3 cup milk
2 tablespoons olive oil
1 medium onion, finely chopped (about 1 cup)
2 teaspoons ground cumin, divided
1 teaspoon ground cinnamon
1/4 teaspoon cayenne, divided
28 ounces diced tomatoes with juice
kosher salt
fresh ground black pepper
1 lb ground beef (preferably 85% lean)
2/3 cup finely chopped fresh cilantro, divided

Steps:

  • Combine breadcrumbs and milk in mixing bowl and let sit 5 minutes.
  • Meanwhile, heat oil in a heavy 10" skillet over medium heat. Add onion and sauté till translucent, about 5 minute.
  • Add 1 tsp cumin, cinnamon and 1/8 tsp cayenne. Cook 30 seconds.
  • Add tomatoes and juices, 1 cup water, and 1/2 tsp salt. Increase heat to high and bring to a boil. Lower the heat to a steady simmer and cook for 15 minutes.
  • While the sauce simmers, prepare the meatballs. Mash the breadcrumbs and milk with a fork to a smooth paste. Add the beef, remaining 1 tsp cumin and 1/8 tsp cayenne, 1/2 the cilantro, 1 1/2 tsp salt, and several grinds of pepper. Mix with your hands until thoroughly combined.
  • Wet your hands to keep the mixture from sticking to them. Roll a couple of tablespoons into 1 1/2" balls; you should have about 30.
  • Nestle the meatballs into the sauce, cover, and cook for 10 minutes.
  • Remove lid and continue to simmer for another 5 minutes to thicken the sauce.
  • Stir in the remaining cilantro and season with salt and pepper to taste.

1 can (14-1/2 oz.) diced tomatoes, undrained
1-3/4 cups water
1/4 cup KRAFT Zesty Italian Dressing
1 canned chipotle pepper in adobo sauce
2 lb. lean ground beef
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1/2 cup water
1/4 cup chopped fresh cilantro
2 Eggland's Best® Eggs
4 cups hot cooked long-grain white rice

Steps:

  • Blend first 4 ingredients in blender until smooth; pour into large saucepan. Bring to boil.
  • Meanwhile, mix all remaining ingredients except rice just until blended; shape into 24 meatballs, using about 1/4 cup for each.
  • Drop meatballs gently into boiling tomato sauce; cover. Simmer on medium-low heat 20 to 25 min. or until meatballs are done (165°F). Serve with rice.

500g pork mince
2 large handfuls fresh breadcrumbs
1 egg
2 medium red onions , ¼ finely chopped, the rest sliced
small bunch coriander leaves and stems, finely chopped, plus extra leaves to serve
2 tbsp vegetable oil
2 garlic cloves , chopped
400ml passata
1 tbsp chipotle paste
potatoes or rice, to serve

Steps:

  • In a small bowl, mix together the pork, breadcrumbs, egg, finely chopped onions and the chopped coriander leaves. Season, mix well and shape into small meatballs. Over a medium heat, add 1 tbsp of the oil to a large frying pan and brown the meatballs on all sides, then remove from the pan and set aside.
  • Add the remaining oil, sliced onion, garlic, coriander stems and some salt. Cook for 5 mins, then add the passata and chipotle paste. Pour in 100ml water and stir well, then simmer for 10 mins before adding the meatballs and cooking for a further 5 mins. Serve with potatoes or rice and scatter with the extra coriander leaves.

All done in the microwave. Serve on their own or over pasta. A great dish to serve with a light green salad and fresh crusty bread or garlic bread.

1 onion, chopped
2 slices bacon, chopped
500 g beef mince
1/4 cup breadcrumbs
2 tablespoons parsley, roughly chopped
1 egg, lightly beaten
salt & freshly ground black pepper, to taste
125 g cheddar cheese, cut into 1cm cubes
2 (400 g) cans diced roma tomatoes
1/2 cup roughly torn basil leaves
1 garlic clove, finely chopped
2 tablespoons tomato paste
1 small red fresh chili pepper, seeded and finely chopped (optional)
salt & freshly ground black pepper, extra, to taste
crusty bread or roll, to serve

Steps:

  • Cook the onion and bacon in a large bowl on high for 3-4 minutes approx 850W. Remove from microwave, add mince, breadcrumbs, parsley, egg, salt and pepper and mix well.
  • Take 1 tablespoon of the mixture and flatten into a patty shape.
  • Place a cube of cheese in the middle of the meat, fold meat to enclose cheese and roll to form a ball.
  • Refrigerate meatballs for 10-15 minutes.
  • Place meatballs in a 3 Litre casserole dish. Cook uncovered on medium to High approx 650W for 4-6 minutes. Turn meatballs over and cook for a further 4-6 minutes.
  • Meanwhile combine the tomatoes, basil, tomato paste, chilli, garlic and salt and pepper in a bowl.
  • Drain any excess fat from meatballs after cooking and pour the tomato mixture over par cooked and drained meatballs.
  • Cook uncovered on medium high approx 650W for 10-12 minutes, stirring occasionally.
  • Serve with on their own with crusty bread or over pasta.

Here is a recipe from the Los Angeles chef Suzanne Goin that plays to children as well as to the most sophisticated of palates. It is for crisp lamb meatballs cooked through in a fragrant, vaguely North African sauce of tomato sauce zipped up with orange juice and warm spices, then topped with feta and mint. Ms. Goin first served the dish at one of her Los Angeles restaurants, and put it into ''The A.O.C. Cookbook'' (2013), devoted to that restaurant's food. A version of the dish was later introduced to the menu of her children's school. It can be cooked in an hour's time, not all of it busy, and served with pita or plain pasta, bulgur or couscous.

¼ cup heavy cream
2 egg yolks, extra-large
½ teaspoon ground cinnamon
1 teaspoon ground cumin

1 cup bread crumbs
¼ cup chopped parsley
1 28-ounce can whole tomatoes

Steps:

  • Preheat broiler. In a large bowl, mix together the onion, cream, egg yolks, cinnamon, cumin, red pepper and cayenne. Put the lamb in the bowl, and season it aggressively with salt and pepper. Add the bread crumbs and parsley, and combine the mixture well. Shape the meat into balls that are a little larger than golf balls.
  • Grease a baking pan with olive oil, and put the meatballs onto it, spaced evenly. Place beneath the broiler, and cook, turning once or twice, until the meatballs are well browned, approximately 5 to 7 minutes, then set meatballs aside. Turn oven to 400.
  • Meanwhile, make the sauce. Pass the tomatoes through a food mill, or whizz them quickly in a food processor. Heat a saucepan over medium-high heat for a minute, then add olive oil, rosemary and red pepper and shake to combine. Cook for another minute, then add onion, thyme, cumin, cinnamon, cayenne and bay leaf and sauté until the onions are translucent, approximately 5 to 7 minutes. Add tomatoes, sugar, orange juice and peel, along with salt and pepper.
  • Cook for 8 to 10 minutes over medium-low heat, until reduced by a third. Adjust seasoning.
  • Pour the tomato sauce into a large baking dish that you can put on the table. Transfer the meatballs to the sauce, putting them about ½ inch from each other. Bake for 15 or 20 minutes, until the sauce is bubbling and the meatballs are cooked through.
  • Top with crumbled feta and scattered mint.
