SPICY MANDARIN ORANGE CHICKEN

1 1/2 cup rice
2 large boneless, skinless chicken breasts (cut into bite size chunks )
1/2 cup flour
1 tsp garlic powder
1 tsp onion powder
1/2 tsp salt
2 tsp orange peel (grated)
2 Tbsp olive oil
1/2 cup Frank's sweet chili sauce
1/4 cup orange juice
1 Tbsp minced onion
1 tsp minced garlic
1 tsp ground ginger
20 oz. can mandarin oranges (drained well)
Veggies (side dish or mixed in)

Steps:

  • Start cooking the rice and cut up the chicken.
  • Mix together the flour, garlic powder, onion powder, salt and orange peel in a plastic bag or container of some kind. Toss the chicken pieces in the bag until they are fully coated.
  • In a large skillet, heat the oil and then add the coated chicken pieces and toss often to brown all sides.
  • In a small mixing bowl, whisk together the sweet chili sauce, orange juice, minced onion, minced garlic and ground ginger. Once the chicken pieces have browned, pour the sauce over the top. Cover the skillet and let cook for 4 to 6 minutes, or until the chicken has cooked through. Stir once or twice to keep from sticking to the bottom of the skillet. If necessary, deglaze the skillet with orange juice.
  • Once the chicken has cooked through, stir in the mandarin orange segments and let warm over low heat for a few minutes.
  • Prepare veggies.
  • Serve Spicy Mandarin Orange Chicken over rice with side of veggies.

1 inch ginger (knob freshly grated or 1/2 teaspoon ground ginger)
3 cloves garlic (peeled and minced)
1 tablespoon Shaoxing wine (or a dry sherry - optional)
1 tablespoon soy sauce (or tamari for gluten free)
1 teaspoon sesame oil
white pepper (to taste or about 1/8 teaspoon)
1 teaspoon cornstarch
2 teaspoons sugar or sugar alternative (adjust amount depending on how sweet or sour your oranges are.)
1 tablespoon Shaoxing wine (or dry sherry - optional)
1 teaspoon vinegar (apple cider vinegar)
2 tablespoons soy sauce (or tamari for gluten-free)
1 teaspoon spicy black bean sauce (or spicy garlic sauce if desired)
1 teaspoon sesame oil
2 teaspoons mandarin orange zest (or orange zest)
9 tablespoons mandarin orange juice (or orange juice)
1 tbsp oil
1 to 2 whole green onions (chopped)
Slices of mandarin oranges (optional)
cooked rice (as desired - optional )

Steps:

  • Grind Sichuan peppercorns in a spice blender, mortar and pestle or with a heavy object over a tea towel. Set aside.

1/4 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon ground cinnamon

3/4 cup orange juice
1 tablespoon brown sugar
1 tablespoon soy sauce

Steps:

  • Flatten chicken to 1/2-in. thickness. In a large resealable plastic bag, combine the flour, salt, cinnamon, cloves and pepper. Add chicken, one piece at a time, and shake to coat. , In a large skillet over medium heat, cook chicken in oil and butter for 6-8 minutes on each side or until juices run clear. , In a small bowl, combine the orange juice, brown sugar and soy sauce. Remove chicken and keep warm. Add orange juice mixture to skillet; bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. This is a light and easy chicken dish with a brightly-flavored sauce of Mandarin orange juice, lemon juice, soy sauce, and honey. The chicken is then served with the oranges and topped with slivered almonds and chow mein noodles on a bed of rice. The whole thing takes about 15 minutes to prepare and about 30 minutes to cook, so long as you defrosted the chicken ahead of time. Enjoy!

1 (11 ounce) can mandarin oranges, reserve liquid
3 tablespoons honey
1 lemon, juice of
2 tablespoons soy sauce
1 teaspoon dried ginger
3/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper
2 lbs boneless skinless chicken breasts, cut into strips
2 tablespoons butter
2 tablespoons oil
chopped cashews or slivered almonds, as garnish
3 cups hot cooked rice

Steps:

  • Make the sauce by combining reserved orange juice with honey, soy sauce, lemon juice,, and ginger in a small bowl.
  • Blend well and set aside.
  • Combine flour with salt and pepper in a shallow pie pan.
  • Set aside.
  • Trim off any fat and white veins from chicken breasts and slice each breast into about three strips.
  • Dry between double layers of paper towels.
  • Heat butter and oil in large skillet or wok over medium-high heat.
  • Coat all sides of chicken strips in seasoned flour and brown lightly in skillet.
  • Reserve browned pieces on a plate lined with paper towels.
  • When all chicken is browned, pour sauce into wok or skillet.
  • Place chicken in the sauce and turn to coat.
  • Reduce heat to medium-low, cover, and simmer for 20 to 30 minutes, or until chicken is tender and white throughout and sauce begins to caramelize on the chicken.
  • Turn several times during cooking to coat evenly with sauce.
  • Meanwhile, prepare rice.
  • When chicken is done, remove from heat and quickly stir in the Mandarin oranges.
  • Sprinkle with your chosen garnish and serve over rice.

1 egg white
2 tablespoons cornstarch
1 tablespoon soy sauce
4 boneless skinless chicken breasts, cut into 1 inch pieces
1/2 cup Bisquick baking mix
1/3 cup water
1 1/2 tablespoons sesame seeds
4 cups vegetable oil
1 (8 ounce) can mandarin orange segments, drained reserving juice
2 medium carrots, sliced thin
2 large green peppers, sliced thin
1 small red onion, sliced into thin wedges
1/2 cup ketchup
1/4 cup brown sugar
2 tablespoons cornstarch
2 tablespoons vinegar
1 teaspoon chicken bouillon granule

Steps:

  • In a large mixing bowl combine the egg white, 2 T's cornstarch, and soy sauce.
  • Whisk well.
  • Add chicken pieces.
  • Toss well to coat, set aside.
  • In a medium mixing bowl combine the bisquik, water and sesame seeds.
  • Mix well.
  • Add to chicken mixture, stirring well to coat.
  • In a large, deep skillet heat oil, or plug in your deep fryer.
  • Combine mandarin juice and enough water to make 1 and 1/4 cups.
  • Pour into a large skillet and bring to a boil.
  • Add carrots.
  • Cover and reduce heat to a simmer.
  • Cook for 3 minutes.
  • Add peppers and onions.
  • Cook 1 minute.
  • Combine ketchup, sugar, cornstarch, vinegar and bouillon granules,, mixing well.
  • Stir into vegetable mixture.
  • Stir well and remove from heat.
  • Cook chicken pieces in batches, drain on paper towels.
  • When chicken is cooked, heat vegetable mixture, allow to thicken then add chicken.
  • Serve over hot rice.
  • I like this over a spinach and mushroom salad-the heat wilts the spinach "just right".
  • Serves 4.

This is very similar to the Mandarin chicken served in the malls, except I use white meat chicken. Boneless chicken thighs are what the restaurant uses. It's quick, easy and delicious. Sometimes I'll make this, then a quick trip to the local Chinese take-out for vegetable lo mein and eggrolls for a cheap, tasty Chinese meal that's almost homemade. You'll be amazed at how authentic this tastes! *Note: I have adjusted the amount of sugar to reflect comments written in reviews. If you like it sweet, use the full 2/3 cup.

1 whole boneless skinless chicken breast, cut into 4 equal pieces (1lb)
vegetable oil cooking spray
2/3 cup sugar (or less, according to taste)
1/4 cup soy sauce
1 tablespoon lemon juice

1/2 teaspoon minced fresh garlic
1/2 teaspoon minced fresh ginger
1/4 cup water
4 teaspoons cornstarch

Steps:
