1 (4 to 5-pound) roasting chicken
1 large yellow onion, sliced
Good olive oil
Kosher salt
Freshly ground black pepper
2 lemons, quartered
2 tablespoons unsalted butter, melted
6 cups (3/4-inch) bread cubes (1 baguette or round boule)

Steps:

  • Preheat the oven to 425 degrees F.
  • Take the giblets out of the chicken and wash it inside and out. Remove any excess fat and leftover pinfeathers. Toss the onion with a little olive oil in a small roasting pan. Place the chicken on top and sprinkle the inside of the cavity with salt and pepper. Place the lemons inside the chicken. Pat the outside of the chicken dry with paper towels, brush it with the melted butter, and sprinkle with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken.
  • Roast for 1 1/4 to 1 1/2 hours, or until the juices run clear when you cut between the leg and the thigh. Cover with foil and allow to sit at room temperature for 15 minutes. (The onions may burn, but the flavor is good.)

These are very simple and very delish! I usually pound the breasts to about an inch thick, so they cook evenly. Depending on who is coming for dinner, I will add more seasonings to make it more spicy. Before adding the mayo mixture, I season the chicken with a bit of Lawry's salt. This is adapted from Paula Deen, (actually her sons) Food Network.

1/2 cup mayonnaise
1 lemon, zest finely grated
2 teaspoons paprika
1/2 teaspoon celery seed
1/2 teaspoon salt
1 teaspoon black pepper, freshly ground
1 pinch cayenne pepper
4 (8 ounce) boneless chicken breasts

Steps:

  • Preheat the oven to 425 degrees F.
  • Line a rimmed baking sheet with foil.
  • In a small bowl, whisk together the mayonnaise, lemon zest, paprika, celery seeds, salt, pepper, and cayenne.
  • Arrange the chicken on the prepared baking sheet.
  • Slather the mayonnaise mixture over the chicken.
  • Bake until the juices run clear when the chicken is pricked with a fork, about 20 to 25 minutes.

Simply delicious recipe that I adapted from Susan Herrmann Loomis's "French Farmhouse Cookbook", and a meal on Ed's "please make again" list. I serve this with a huge green salad loaded with tomatoes and cucumbers and top it with the warm, garlicky, chicken-roasted croutons...heaven on a plate.

9 ounces day-old French bread, cut into 1 1/2 inch cubes
3 cloves garlic, peeled & cut in half
1 (3 1/2 lb) whole chickens
sea salt, to taste
black pepper
1 teaspoon dried thyme
1/2 lemon

Steps:

  • Preheat oven to 450 degrees F.
  • Squeeze the lemon half into the chicken cavity then generously salt and pepper cavity, sprinkle in the thyme, and place the lemon half inside.
  • Roast chicken, breast side up, at 450 degrees F in a large baking dish for about 50 minutes or until golden and almost cooked through, basting a couple of times.
  • After 50 minutes, add the bread cubes and garlic to the roasting dish and stir around in the drippings a bit; roast for another 10 to 15 minutes, until chicken drumstick is easy to move around.
  • Remove chicken from the baking dish, salt and pepper it to taste, and let it rest on a warm platter, breast side down (to allow juices to settle).
  • Stir croutons and garlic together again (mashing the garlic as little as you go) in the chicken juices/drippings, and return to the oven for another 5 or 10 minutes until they are a deep golden color and crispy.
  • Carve chicken and serve on a platter; surround with the crouton/garlic mixture and drizzle any remaining chicken juices onto the croutons.
  • Croutons are AWESOME served warm on a cool green salad!

1 whole chicken (3 1/2 to 4 pounds), rinsed and patted dry
3 tablespoons extra-virgin olive oil
1 1/2 tablespoons chopped fresh thyme leaves
Coarse salt and ground pepper
1 lemon, halved
1 loaf crusty white bread (8 ounces), torn into chunks
1 bunch arugula (12 ounces)
2 teaspoons red-wine vinegar

Steps:

  • Preheat oven to 450 degrees. Place chicken on a rimmed baking sheet; rub with 2 tablespoons oil. Sprinkle with thyme. Season with salt and pepper. Squeeze lemon into cavity; place inside. Roast chicken until juices run clear when pierced between breast and leg or an instant-read thermometer inserted in thickest part of a thigh (avoiding bone) registers 165, 45 to 50 minutes. Transfer to a rimmed platter.
  • Place bread on sheet; toss with cooking juices. Season with salt. Bake until croutons are golden, 7 minutes. Pour any accumulated juices from platter into a bowl; add croutons, arugula, 1 tablespoon oil, and vinegar. Season with salt and pepper and toss. Carve chicken and serve with croutons and greens.

A post-marinade is exactly what it sounds like: a flavorful mixture you sink meat or fish into after it cooks. Often used with grilled meats, the technique works great with seared proteins as well, especially boneless, skinless chicken breasts, which don't have a lot of flavor on their own. These breasts are cooked using a combination sear-steam method that builds flavor and keeps lean breasts juicy. Finish with a tangy-spicy combination of lemon, garlic and red-pepper flakes and you'll reap all the benefits of a traditional marinade without having to plan ahead. If you have thinner breasts or cutlets, this is a particularly wonderful use for them, since they don't have a lot of time to pick up color and flavor before they cook through.

4 slices crusty bread (about 3/4-inch thick)
6 tablespoons olive oil
Kosher salt and black pepper
1 teaspoon fresh lemon zest plus 1/4 cup lemon juice (from 1 to 2 lemons)
1 garlic clove, grated or finely chopped
1 teaspoon dried oregano or thyme (or 1 tablespoon fresh)
1/2 to 1 teaspoon red-pepper flakes, to taste
4 boneless, skinless chicken breasts (1 1/2 to 2 pounds)
2 small heads Little Gem lettuce or 1 romaine heart, leaves separated and torn into bite-size pieces

Steps:

  • Heat oven to 375 degrees. Arrange the bread on a rimmed baking sheet; drizzle with 2 tablespoons oil and season with 1/4 teaspoon salt. Bake, turning once, until lightly golden and toasted, 10 to 15 minutes.
  • Meanwhile, in a small bowl, whisk together 3 tablespoons oil with the lemon zest and juice, garlic, oregano, red-pepper flakes and 1/2 teaspoon salt; set aside.
  • In a 10-inch skillet, heat remaining 1 tablespoon oil over medium-high. Season chicken with 1/2 teaspoon salt and 1/4 teaspoon pepper and add to skillet. Cook, turning once, until golden brown on both sides, about 5 minutes per side. Add 1/4 cup water to skillet, cover, and continue to cook until chicken is cooked through, 5 to 7 minutes. Uncover, remove from heat and add lemon juice mixture; turn chicken to coat.
  • Tear each piece of bread in half and toss with lettuce; divide among plates. Top with chicken, and drizzle with the lemony pan juices.
