1 lb cabbage kimchi (can be bought ready made in a Korean grocery)
2 stalks spring onions
1/8 lb oyster mushroom
1 1/2 teaspoons garlic powder
1/2 teaspoon salt
1/2 lb wheat flour
175 -200 ml water
cooking oil

Steps:

  • Dice the kimchi, oyster mushrooms and spring onions into small pieces.
  • In a big bowl, mix the flour with water and the garlic and salt until batter is evenly blended.
  • Add the kimchi, spring onions and mushrooms to the batter and mix well.
  • Scoop a full ladle of the batter and fry the pancakes in a heated frying pan with cooking oil, making sure that both sides are cooked evenly until light brown. The pancakes should be about 5" in diameter.

1 (12 ounce) box whole wheat rotini pasta
2 cups garlic mushroom marinara sauce
1 cup chopped kimchi
½ cup shredded cooked chicken
½ cup diced white onion
1 tablespoon red chile paste
1 tablespoon butter
1 tablespoon chopped scallion

Steps:

  • Bring a large pot of heavily salted water to a boil; cook the rotini at a boil until tender yet firm to the bite, about 15 minutes; drain and transfer to a bowl.
  • Bring marinara sauce to a simmer in a saucepan. Add kimchi, chicken, onion, and red chile paste; stir until completely mixed and heated through, about 5 minutes.
  • Mix butter into pasta and toss to coat. Pour marinara sauce over pasta and top with scallions.

I buy kimchi by the gallon at our local Korean market, but you can even buy it at Walmart on the fresh vegetable isle. These are great as a snack or part of a Korean dinner. Be sure to dip them in a good soy sauce dipping sauce! YUM!

1 cup flour
1/2 cup water
1/2 teaspoon salt
1 cup cabbage kimchi, minced
2 tablespoons green onions, minced
1 teaspoon garlic clove, minced
2 teaspoons sesame oil

Steps:

  • Mix flour, water and salt together and combine with the rest of the ingredients to create a thick "pancake" batter.
  • Heat 2 Tablespoons oil. Place 1/4 of the batter in the pan to form a pancake. Fry until both sides are golden. Reduce heat to low and cook all the way through.
  • Repeat with remaining portions.
