1 pound ground beef
2 jalapenos, seeded and diced fine, plus whole or sliced, for serving
2 shallots, chopped fine
1/2 cup panko bread crumbs
1/4 cup heavy cream
1/4 cup grated spicy Monterey Jack cheese
Pinch garlic powder
Kosher salt
1/2 teaspoon cracked black pepper, plus pinch
1 cup creme fraiche
1/4 cup store-bought salsa verde
12 mini dinner rolls

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, add ground beef, jalapenos, shallots, panko, heavy cream, cheese, garlic powder, 1 tablespoon salt, and 1/2 teaspoon black pepper. Mix together well. Form into small patties and place in the oven for 12 to 15 minutes.
  • In a separate bowl, add creme fraiche, salsa verde, pinch of salt and pepper and mix together. Refrigerate until ready to serve with your sliders.
  • Lightly spread creme fraiche on both sides of buns. Place burgers in middle and pick it with a jalapeno.

2 medium finely diced and de-seeded jalapeno peppers
1 minced garlic clove
1 teaspoon finely chopped cilantro (optional)
1/2 cup whole kernel corn
2 tablespoons chili powder
3 ounces cream cheese, softened
1/2 cup shredded monterey jack cheese or 1/2 cup sharp cheddar cheese
1 (8 ounce) package egg roll wraps
oil (for frying)

Steps:

  • Pulse corn in a food processor or blender until chopped but not mushy.
  • In a medium bowl, mix corn, cilantro, garlic and jalapeño pepper.
  • Stir in chili powder and mix thoroughly.
  • Add cream cheese and shredded cheese and mix until well blended.
  • Place heaping teaspoonful of cheese mixture in center of egg roll, folding it up envelope style as directed on egg roll package, moistening edges with cornstarch and water mixture making sure it is well sealed.
  • Continue until mixture is all used.
  • Heat oil in pan to 350°F.
  • Carefully drop egg rolls into oil and fry until golden brown, turning once (approx 3-5 min).
  • Serve with guacamole or sour cream.

28 ounces pickled jalapeno peppers
granulated sugar

Steps:

  • Drain off peppers. Grind peppers in a food processor until consistancy of relish and place in a quart jar. Replace vinegar with sugar. Rotate jar every few hours until all sugar becomes liquid. Store in refrigerator and wait a few days and enjoy. Great on hotdogs. It will last almost forever in the frige, unless you're like me and can't resist.

2 ounces freshly squeezed lime juice
1 ounce triple sec
1 ounce simple syrup
kosher salt
1 wedge lime

Steps:

  • Fill a cocktail shaker with ice. Add tequila, lime juice, triple sec, and simple syrup. Cover and shake until mixed and chilled.
  • Place kosher salt on a plate. Run lime wedge around edge of glass and dip into kosher salt. Strain margarita into the glass.
