BREAD MACHINE FOCACCIA BREAD

Bread Machine Focaccia Bread image

A tasty bread machine focaccia bread recipe with Italian herbs and Parmesan cheese.

Provided by Donna Urso

Categories     bread

Time 2h20m

Number Of Ingredients 12

1 c water, 80°F
1/3 c olive oil
2 tsp sugar
1 tsp Kosher salt
3 cups bread flour
1 teaspoon bread machine yeast (or substitute 1 1/2 tsp active dry yeast)
1 tsp chopped fresh rosemary
1 tsp dried Italian herb mix
1/4 c extra virgin olive oil
6-8 garlic cloves, chopped fine
1 Tablespoon fresh rosemary, chopped
1/3 cup shredded Parmesan cheese

Steps:

  • Add the ingredients, except rosemary and Italian herb mix, to the bread machine. Set the machine on the dough setting. At the first pause in the cycle add chopped herbs. Continue through the dough cycle.
  • While the dough cycle finishes, make the topping.
  • Heat the extra virgin olive oil in a small pan over medium heat. When hot add the chopped garlic. You'll hear it sizzle.
  • Immediately remove the pan from the heat and add the chopped rosemary. Set aside to cool.
  • When the dough cycle completes, press the dough into a well-oiled 9x13-inch pan.
  • Make indentations in the dough with your fingers. Cover the pan with plastic wrap and let the dough rise for thirty minutes, or until it is nearly double in size.
  • Preheat your oven to 400°F. Once again press indentations into the dough with your fingers.
  • Spoon the olive oil topping evenly over the dough. Some of the oil and herbs will settle into the indentations. That will make your bread yummy.
  • Sprinkle with shredded Parmesan cheese. Be generous with your cheese.
  • Bake the focaccia bread for 20 minutes, or until done. Let the baked focaccia bread sit for at least 15 minutes before cutting.

FOCACCIA (BREAD MACHINE)

Focaccia (Bread Machine) image

My family loves this bread & it is so easy to make. I serve it with Italian food. It is adapted from a recipe in Pizza, Focaccia, Flat, & Filled Breads From your Bread Machine. You may substitute herbs in the topping, or use fresh. The original recipe calls for a roasted vegetable topping, but I am going to post that as a separate recipe because the bread alone is great. (Cooking time includes rising times & will vary with your bread machine cycle).

FOCACCIA (USING BREAD MACHINE FOR THE DOUGH)

Focaccia (Using Bread Machine for the Dough) image

This bread is SO appealing and very versatile too! We often have it in the summertime quartered and sliced horizontally and filled with barbecued chicken thighs, lettuce, sliced red onions, tomatoes and avocado and some Paul Newman's Own Ranch Dressing! Simply divine!! The preparation time I have given does not include the time it takes for the Bread Machine to make the dough or the time it takes for the dough to rise.

Time 15m

Yield 1 loaf of Italian Flat Bread, 4 serving(s)

Number Of Ingredients 8

2 teaspoons dried yeast
3 cups bread flour
1 teaspoon salt
1 tablespoon sugar
1 teaspoon rosemary (dried)
1 teaspoon oregano (dried)
1 tablespoon oil
1 1/2 cups water

Steps:

  • Place all of the above ingredients, accurately measured and in the order I have listed them, in the Bread Machine.
  • Select the 'dough' cycle.
  • When the cycle is complete, take the dough out of the Bread Machine, and proceed with the following steps: On a lightly floured surface, gently knead the dough for about 10 minutes.
  • (you may need to add extra flour during this time) Place the 'Focaccia' dough in a well grease bowl, cover and leave to rise in a warm (and draught free) place for about 1/2 an hour.
  • Then, knead the dough lightly (in the bowl) for about 1 minute.
  • On a lightly floured surface, roll the dough into a rectangular shape (about 20 cm x 30 cm)
  • Place on a well greased baking tray (or sponge roll tin) and leave to rise again, in a warm place, this time for about 1 hour (or until it has doubled in it's original size) Now pour and smooth over with your fingers, 1 tablespoon of olive oil.
  • 'Poke' the dough with 2 fingers at intervals over the surface, and sprinkle liberally with rock salt or equal measurements of olive oil and Basil pesto mixed together with grated Parmesan or Romano cheese, top with chopped up sun-dried tomatoes and sliced black olives!
  • YUM!
  • Bake at 225°C for about 15 minutes or until golden brown!

ITALIAN PARMESAN BREAD FOR BREAD MACHINE

Italian Parmesan Bread for Bread Machine image

I've been making this bread for years without measuring, and finally decided to write it down. My most requested bread from my bread-lovin' son. Makes the house smell divine!! You can easily increase the amounts of seasonings to your taste. (NOTE: Many people seem to be needing to add extra water, so I'm adding an adjustment to the recipe.)

FOCACCIA FARCITA (FILLED ITALIAN HEARTH BREAD)

Focaccia Farcita (Filled Italian Hearth Bread) image

There's nothing as wonderful as a freshly baked focaccia. Adapted from "Bread" by Treuille and Ferrigno. i even love this plain, without any filling. You can use anything for the filling; iI've included another variation. Generally, any Italian-style ingredients such as roasted peppers, sun-dried tomatoes, olives, capers, fresh herbs (esp basil/oregano) or grilled aubergines, will complement this bread. Just remember that any topping/filling must be cooked in the same time that it takes the bread to bake. Therefore, vegetables need to be chopped/sliced, and partially cooked (roasting/parboiling before they are used. Prep time includes dough rising/proving.

200 g gorgonzola, crumbled
200 g mozzarella cheese, sliced

  • This action is called CHAFING.
  • Leave to rest 10 minutes.

  • Arrange the cheeses and basil on top, then seal the filling using the second round.

  • Top with rosemary sprigs.
  • Bake in a preheated oven at 400°F/200°C for 30-45mins until golden.

  • Variation- use 1 lb cherry tomatoes (drizzle with 1 TB olive oil, season with salt and pepper, then bake at 400°F for 20 mins), 5 oz mozzarella and 4 oz rocket (arugula) as filling.

ITALIAN BREAD FOR THE BREAD MACHINE

Italian Bread for the Bread Machine image

I am in Australia at the moment & my sister has a bread machine. I wanted to try a flavored loaf & this was the result. You could also add a handful of black olives if you'd like which I would have, but my sister doesn't like them. The prep time includes 40mins to roast the garlic, & 20mins to chop, grate, etc. all add-ins. Cook time is for the machine.

FOCACCIA FLAT BREAD HOMEMADE (BREAD MACHINE)

Focaccia Flat Bread Homemade (Bread Machine) image

My version of Italian flatbread, brushed with olive oil and flavored with grated Parmesan cheese, galic salt bread heavenly. Cut it into squares and top with Prosciutto Panino rolled in Mozzarella cheese and toasted under the broiler for 5 min.... oh my, this is dangerously good! It is so easy to make. Can't wait to have this with a bowl of soup or top with Pizza topping, or to just dip in garlic olive oil. BREAD MACHINE STUFFED ROSEMARY FOCACCIA

Bread Machine Stuffed Rosemary Focaccia image

Based on a recipe from Lora Brody's cookbook, Pizza, Focaccia, Flat, and Filled Breads From Your Bread Machine - Perfect Every Time. She says, "Just when you thought things couldn't get better bread-wise, along comes a whole new concept: two layers of rosemary-scented dough surrounding a savory filling of oil-cured olives, sun-dried tomatoes, and cream cheese (or goat cheese if you wish). The cream cheese makes a smooth mild filling while the goat cheese has a more assertive flavor. Think of this as a pizza with hidden filling. "The focaccia dough can be made up to three days ahead, placed in a large plastic bag or in an oiled bowl and covered with plastic wrap, and refrigerated. Alternatively, the cooled baked focaccia can be wrapped in plastic and frozen for three months. Defrost the wrapped focaccia at room temperature, then warm it in a 250°F oven for fifteen minutes."

Time 1h20m

Yield 8-10 serving(s)

Number Of Ingredients 12

1 tablespoon yeast
3 cups white bread flour
1 1/2 teaspoons salt
1 teaspoon black pepper, coarsely ground
1 teaspoon dried rosemary or 1 tablespoon fresh rosemary leaf
1/4 cup olive oil
1 1/4 cups water
1/2 cup sun-dried tomato packed in oil, drained and cut into 1/2-inch pieces
1/3 cup oil-cured black olive, pitted and cut in half
4 ounces cream cheese or 4 ounces goat cheese
2 tablespoons oil, from the tomatoes
coarse salt

Steps:

  • Place all the ingredients in the machine in the order according to the manufacturer's instructions and program for "manual" or "dough", and press "start". Add just enough extra water, if necessary, to make a soft, slightly tacky dough. At the end of the final knead, remove the dough from the machine to a lightly floured work space.
  • Knead the dough several times, adding just enough flour to keep it from sticking to the surface.
  • Cover it with a clean cloth while you prepare the filling.
  • TO FINISH THE FOCACCIA.
  • Spray a 9- or 10-inch springform pan with nonstick vegetable spray or coat it lightly with vegetable oil.
  • Cut the dough in half and stretch or roll one half in a circle large enough to fit the 9- or 10-inch bottom of the springform pan, and place it in the bottom of the prepared pan.
  • Sprinkle the tomatoes, the olives, and pinches of the cream cheese (or crumbles of the goat cheese) over the dough, leaving a 1-inch border of dough around the circumference. Moisten the outer edge of the dough with water.
  • Roll the remaining dough out to the same size as the first one and place it over the filling. Pinch the edges of the two doughs together to seal.
  • Using the tip of a knife, carve three 1/2-inch vent strips in the top layer of dough.
  • Cover the pan with plastic wrap and set it in warm place to rise for 30 minutes, or until doubled in bulk.
  • Preheat the oven to 475°F with the rack positioned in the middle of the oven.
  • Before placing the pan in the oven, using your fingertips, make indentations in the top of the dough. Drizzle on the tomato oil and sprinkle with the salt.
  • Bake for 20 to 25 minutes, or until the top is golden brown.
  • Release the springform sides and allow the focaccia to cool for 10 minutes before cutting.
  • Serve hot or at room temperature.

ITALIAN BREAD (BREAD MACHINE)

Italian Bread (Bread Machine) image

I love this recipe because it is very quick and easy. The ingredients for this recipe are always in most peoples houses. I've been known to whip up a loaf in the morning when I realized I was out of bread for school lunches. I don't always use the egg white in the recipe unless you want a crispy crust. Most times I just brush on butter after if comes out of the oven. This recipe is tried and true and loved by all in my circle of family and friends; enjoy. Notes: Easy and with no milk. I have also added Parmesan, thyme, garlic after the flour and salt just to give it an added flavor change every now and then. Serving Ideas: Wonderful w/ pastas or stews.
