SPICY TURKEY ENCHILADAS

1 tbsp olive oil, plus extra for oiling
1 small onion, finely chopped
2 large garlic cloves, crushed
2 tbsp chipotle chilli paste (see know-how)
2 x 400g tins chopped tomatoes
250ml fresh turkey or chicken stock
Splash of red wine vinegar
8 small corn tortillas
400g leftover turkey, shredded
2 tsp smoked paprika
Pinch of cayenne pepper
1½ tsp ground cumin
5-6 pickled jalapeño slices, chopped, plus a splash of the pickling liquid
300ml soured cream
40g cheddar, grated

Steps:

  • Heat the oil in a frying pan over a low heat and gently fry the onion for 10 minutes until golden and translucent. Add the garlic and chipotle paste and fry for 2 minutes more. Add the tomatoes, 200ml of the stock and the red wine vinegar. Season with a pinch of sugar, sea salt and ground black pepper, then simmer for 15-20 minutes.
  • Preheat the oven to 180°C/fan 160°C/gas 4. In another lightly oiled frying pan, fry each tortilla for 30 seconds on one side until golden, re-oiling the pan each time. Set aside. Put the turkey in the empty pan and warm through with the spices, remaining stock and pickling liquid. Remove from the heat and stir in the jalapeño slices.
  • Divide the turkey mixture equally among the tortillas, then roll them up. Spread one third of the tomato sauce on the bottom of a large ovenproof dish, then nestle in the enchiladas in one layer. Top with the rest of the sauce, dot all over with dollops of soured cream and scatter with cheese. Bake for 20 minutes until bubbling and piping hot. Leave to stand for 5 minutes, then serve.

Easy Ground Turkey Enchiladas image

Easy enchiladas made with ground turkey, two cheeses and red enchilada sauce. Serve with some easy refried beans, recipe below in notes.

1 tablespoon olive oil
1 pound ground turkey
½ onion, finely chopped
2 cloves garlic, finely chopped
½ teaspoon cumin
½ teaspoon chili powder
½ teaspoon oregano
1¾ cups enchilada sauce
Kosher salt and fresh cracked black pepper
8 (8-inch) flour tortillas
3 cups shredded Mexican blend cheese, or colby or Monterey Jack
1 cup crumbled queso fresco (fresh Mexican cheese)
Optional: sliced green onions, chopped fresh cilantro and sour cream for serving.

Steps:

  • Preheat oven to 375º.
  • In large skillet, heat olive oil until shimmering. Pat turkey dry and add to pan, do not move, brown for about 6 minutes. Flip, brown other side for about 5 or 6 minutes. Add onion, garlic and spices and start breaking up turkey meat with a wooden spoon. Continue until no longer pink and onion has softened.
  • Add ¼ cup enchilada sauce to pan, stir to combine and season with salt and pepper. Cook 1 to 2 more minutes then remove from heat and set aside.
  • Spread ½ cup enchilada sauce in bottom of 9" by 13" baking dish. Place ⅛ of the turkey mixture on each flour tortilla, top with ¼ cup shredded cheese and tightly roll up. Place rolled enchiladas, seam side down, in baking dish.
  • Top with remaining 1 cup enchilada sauce, evenly top with remaining shredded cheese and then the crumbled queso fresco.
  • Bake for 20 minutes until hot and bubbly. If desired, garnish with green onions and cilantro and serve with more enchilada sauce and sour cream. Enjoy!

I like to get inspired by recipes and then tweak them into my own fabulous creations. Unsure of what to make for Sunday dinner, but needing a quick and economical solution to my dilemma, I came up with these. I served these with a salad that was topped with a fresh pineapple and fresh cilantro vinaigrette I concocted. I hope you love them as much as we did! This is a great idea to use up that left over rice. Also leave out the turkey for a vegetarian option.

1 lb lean ground turkey
1 teaspoon oil
1 1/4 ounces taco seasoning mix
1 red onion, finely diced
1 green pepper, finely diced
8 small sun-dried tomatoes (optional)
16 ounces salsa, chunky
1 (4 1/2 ounce) can green chilies, chopped, divided (optional)
1 (4 1/2 ounce) can jalapeno peppers, chopped (optional)
1 (16 ounce) can corn (optional)
1 (16 ounce) can black beans (or beans of your choice)
1 cup cooked rice (great idea for left over rice)
8 tortillas, whole wheat
2 cups cheese, divided (I recommend Mexican or Taco Blend)
6 ounces black olives, sliced for topping
8 ounces sour cream, for topping
1 bunch fresh cilantro, finely chopped

Steps:

  • Begin to brown the ground turkey in a frying pan. (make sure it is big enough to fit the rest of the diced vegetables).
  • Stir in all the veggies and let them cook down.
  • Add the taco seasoning mix as directed on the package. If you like cilantro you can add it to your taste at this point.
  • Heat your oven to 350 degrees.
  • Once the meat is cooked and the veggies have softened, you can add the canned peppers, beans, corn and about 1/4 of the salsa.
  • Lightly grease the bottom of a 9x13 inch baking dish.
  • Fill each tortilla with turkey mixture and your cooked rice and sprinkle with cheese before folding.
  • Fold tortillas over the filling and place seam-side down in the prepared pan.
  • Pour the rest of your salsa over the top evenly over the enchiladas. Cover with the remaining cheese.
  • Sprinkle the reserved chopped green chilies and the sliced olives on top of the cheese.
  • Bake in the preheated oven until filling is heated through and the cheese is melted and bubbling, about 25 -30 minutes.
  • Top with sour cream and fresh chopped cilantro and serve.

1 small onion
1 (4 ounce) can mild diced green chilies
1 (20 ounce) can enchilada sauce
10 flour tortillas
1 cup shredded cheddar cheese

Steps:

  • Brown ground turkey and onion together. Drain any liquid.
  • Add green chilies and about 1/2 cup of the enchilada sauce.
  • Place a couple spoonfuls of meat mixture into each tortilla and roll.
  • Place into a 9x13 baking dish.
  • Cover rolled enchiladas with remaining enchilada sauce.

An enchilada, by definition, is a corn tortilla filled with various ingredients and drenched in cheese and sauce. This recipe doesn't involve any rolling of tortillas, nor does it require copious amounts of cheese. However, every bite will remind you of the flavors of this popular comfort food.

1/2 cup whole wheat couscous
1 pound lean ground turkey
Salt and freshly ground black pepper
1 teaspoon olive oil
2 cups butternut squash, peeled, seeded and diced
1 cup broccoli florets
One 15-ounce can no-sodium-added black beans
One 10-ounce can enchilada sauce
1/2 cup salsa
Suggested toppings: chopped fresh cilantro, diced avocado, shredded cheese, lime juice

Steps:

  • Pour 1/2 cup of water into a small saucepan and bring to a boil over high heat. Pour the couscous into the saucepan and stir well. Turn off the heat, cover and let stand 5 minutes. Fluff with a fork and set aside.
  • Meanwhile, in a large skillet or wok, cook the ground turkey over medium heat, breaking it up with a wooden spoon, until cooked through and browned, about 5 minutes. Sprinkle with some salt and pepper. Transfer to a bowl and set aside. Drain the excess fat and wipe the pan clean. Heat the oil in the same pan over high heat, then add the squash and cook, stirring occasionally, until browned and softened, 8 to 10 minutes. Add the broccoli and cook, 3 to 5 minutes more. Add the turkey, beans, enchilada sauce and salsa and stir until all the ingredients are well combined.
  • Serve with the couscous and top with suggested toppings as desired.

4 cups turkey meat (I mixed white and dark, cooked, shredded)
3 ancho chilies, pods (dried)
1/2 cup apple cider vinegar
2 teaspoons kosher salt
4 ounces diced tomatoes with garlic onions and chilies (any brand, I used my homemade)
2 fresh garlic cloves
3/4 cup chopped cilantro
3/4 cup chopped green onion
1 cup crumbled mexican white cheese
1 (20 count) package medium flour tortillas
1 (8 ounce) package Mexican blend cheese, shredded
1 (8 ounce) container sour cream
1 (28 ounce) can green enchilada sauce (La Victoria, Old El Paso, etc.)

Steps:

  • Preheat oven to 350 degrees.
  • Place chili pods in small pan with enough water to cover them. Add 1 tsp Kosher salt. Bring to a boil, cover and reduce heat. Simmer for 30 minutes. Remove from heat and let cool until no longer uncomfortable to touch. Remove the stem and drop into the blender bowl. I don't bother to remove the seeds but it's up to you.
  • Add 8 ounces of diced tomatoes, garlic cloves, cider vinegar and the other tsp of Kosher salt. Blend on high until fully liquified. Set aside.
  • Place turkey meat in a large bowl. Add 1/2 cup of the chopped green onions and 1/2 cup of the chopped cilantro. Stir until well blended.
  • Now add the chili sauce to the meat and stir well. Add the Mexican crumbled cheese and stir until you are satisfied that all ingredients are well distributed througout.
  • Lightly cover the bottom and sides of two 9X13 baking pans with cooking spray. Take tortillas out of the package and wrap them in a moist, clean dish towel. Place in microwave for 30 to 45 seconds and bring them to your work area (careful, they may be hot! Using the microwave softens the tortillas and helps avoid tears).
  • Now is the time to stuff and cook. Remember that the number of enchiladas you have at the end is directly proportional to how fat you stuff them. As a rule, I use three slightly rounded tablespoons of the filling per tortilla. But, "slightly" means different things to different people so play with it. Arrange the stuffed tortillas in each pan so that there is no space between them. I ended up with a total of 14 enchiladas.
  • With a teaspoon, dot the top of the enchiladas with sour cream until you have used it all up. Now take a butter knife and spread the sour cream until it forms a thin layer.
  • Open the can of green enchilada sauce and pour over the enchiladas until the sauce comes up to at least half way up. The enchiladas DO NOT need to be fully covered by the sauce but do try to pour some of the sauce over the top of each one if possible.
  • Spread the 8 ounces of Mexican blend cheese evenly over all of the enchiladas. Spread the rest of the chopped green onions and cilantro evenly as well. For the final touch, decorate with the sliced black olives.
  • Put in the middle rack of your oven and bake for 45 minutes to one hour. Since oven temperatures vary, check your enchiladas often and they should be ready when the top reaches a nice, golden brown.
  • Enjoy! Or, as we say in my home country -- "Buen provecho".

14 ounces frozen spinach, thawed and drained
2 cups salsa
14 ounces diced tomatoes
10 flour tortillas
2 cups Mexican blend cheese
1 (8 ounce) package cream cheese
ground cumin

Steps:

  • Cook ground turkey in skillet until no longer pink over medium heat. Add drained spinach and 1 cup of salsa to turkey and cumin to taste (about 1 tsp). Cook about 5 minutes until all liquid is absorbed. Remove from heat and add cream cheese. Mix until melted.
  • Lay flour tortilla flat and place 1/3 cup mix, roll and place in greased 13x9 inch pan with flat side up. Bake for 20 minutes at 350 degrees.
  • Remove from oven and top with 1 cup salsa mixed with can of diced tomatoes and additional cumin to taste. Top with cheese. Return to oven for 5 minutes until cheese is melted.

15 -16 6-inch corn tortillas

1 (10 3/4 ounce) can low-fat cream of mushroom soup
1 (16 ounce) jar salsa
1 (16 ounce) can fat-free refried beans
1 (7 ounce) can corn, drained
nonstick cooking spray, like pam

  • Preheat oven to 350.
  • Brown meat well in a skillet, stirring to break it up.

I put this together for a light meal when I noticed that we had too big a collection of half-bags of frozen vegetables and little containers of leftover cooked veggies. The kind and quantity of the vegetables can vary according to what you have -- you just need to end up with between 2 and 3 lbs. Some people prefer a more generous amount of thickened sauce on their stir-fry dishes. With a diabetic in the house, I skip that part but I've included the directions if you want it.

1 lb ground turkey
2 -3 garlic cloves
1 onion, cut into thin wedges
1 pinch coriander seed, crushed
1/3 cup soy sauce, divided (or to taste)
1 -2 tablespoon dark brown sugar
1 tablespoon sherry wine (optional)
1 pinch red pepper flakes (to taste)

1/2 lb snap peas or 1/2 lb snow peas
1/2 lb broccoli floret
1/2 lb green beans

Steps:

  • Brown ground turkey in a little oil over medium-high heat. Drain any excess grease leaving just enough to accomplish the stir-frying process.
  • Add garlic, onion, coriander, and a tbs of the soy sauce. Stir well.
  • Begin adding the vegetables starting with long-cooking veggies like carrots and broccoli (especially if broccoli is still frozen), and working towards the quick-cooking greens but not adding those just yet.
  • Just before adding the greens -- right after adding the beans or snap peas -- add the remaining soy sauce, the sugar, the sherry, and the red pepper flakes. Stir well so that sugar dissolves and pepper flakes are well distributed.
  • Add the greens and complete the cooking.
  • Make the optional sauce if desired by whisking the cornstarch into the chicken stock. Pour into pan just before the greens are done and cook, stirring constantly, until the sauce has simmered for about one minute.
  • Serve over rice, ramen noodle, or other preferred, Asian starch.

This is a great way to use up leftover turkey after Thanksgiving that you're tired of trying to disguise into an non-turkey meal. I used a green enchilada sauce and omitted the tomatoes, but I've heard other people do a combination of green and red sauce and some say if you are using plum tomatoes to stick with a red sauce.
