GROUND CHICKEN MEATLOAF
This Ground Chicken Meatloaf recipe is fantastically cheesy, healthy and easy to make! Turn it into a loaf, meatloaf muffins or meatballs. Any way you shape it, you'll LOVE this healthy comfort dinner that's low in carbs too.

Steps:
- Preheat oven to 350 F.
- Add oatmeal, cheeses, diced onion, and salt to a large bowl and mix to combine.
- Add ketchup and egg to the bowl and mix.
- Add ground chicken and mix just until combined. Don't overmix which may cause the chicken to toughen.
- Press mixture into a loaf pan a spread about 1 Tablespoon of ketchup over the top. (See other shaping options and cook times below.)
- Bake uncovered for about 45 minutes or until the internal temperature reaches 165 °F. We suggest using a digital thermometer.
- Allow cooked chicken loaf to rest for about 5-10 minutes, then slice and enjoy!

SPICED CHICKEN MEATLOAF

Steps:
- Preheat oven to 350°F.
- In a large mixing bowl, combine the ground chicken, stuffing mix, cheese, egg, diced onion, salt, pepper and garlic seasoning. Mix well.
- Add ketchup and BBQ sauce to meat mixture and mix until well combined.
- Place meat mixture in greased loaf pan and bake for 50 minutes.
- Turn off oven and let sit in hot oven for another 15 minutes.

SPICY GROUND CHICKEN
I made up this recipe in my diet days when I tried to eat healthy. It is quick, tasty and low fat. You can either serve on top of rice or wrap in a soft tortilla for a great low fat and filling meal.

Steps:
- Slice all veggies.
- Spray a non-stick skillet with cooking spray or optional olive oil.
- Cook ground chicken until completely done, about 10 minutes.
- Remove from pan and set aside.
- Add onions and garlic to pan and sauté until translucent.
- Add zucchini, mushrooms, red and green peppers.
- Cover, stirring often until cooked.
- Don't drain liquid.
- Add cooked ground chicken and salsa to veggies.
- Mix well.
- Simmer about 10 minutes.
- Serve wrapped in a soft flour tortilla or over rice.
- DO NOT use ground chicken in the tube as it is dry and ruins the dish.
ZESTY MEATLOAF
This hearty meatloaf needs no sauce and makes great sandwiches the next day... IF you have any leftovers!

- Preheat oven to 350°F.
- Spray a pan & rack liberally with non-stick cooking spray.
- Combine all ingredients just until blended. Shape into a loaf and place in prepared pan.

- Preheat oven to 350 degrees.
- Combine chicken and bread crumbs in large bowl.
- Set aside.
- Cut the carrot& onion into chunks and add to blender.
- Add the remaining 7 ingredients to the blender.
- Process in blender until carrot is very fine.
- Pour blender mixture over meat mixture.
- Mix very well using your hands.
- Form mixture into a loaf and place in lightly greased 9" X 13" pan.
- Cover with foil and bake for one hour.
- Remove foil& continue baking for 15-30 minutes, until loaf is cooked through.

- Preheat the oven to 350 degrees. Remove the bell pepper and the jalapeno seeds and stems. Then chop all the produce into large chunks. Place the veggies in a food processor and pulse into a fine mash.
- In a large mixing bowl, combine the ground chicken, vegetable mash, panko, milk, egg, Italian seasoning, Worcestershire sauce, salt, and black pepper. Mix by hand until the mixture is very smooth and even.
- Set out a large rimmed baking sheet and line it with parchment paper. Divide the meat mixture into two equal portions. Use your hands to form each portion into two 10 X 4 inch loaves.
- In a small bowl, mix the ketchup and balsamic vinegar. Brush the glaze over both loaves. Bake for 35-40 minutes, or until the interior temperature reaches 165 degrees F.

BUFFALO MEATLOAF

- Soak breadcrumbs in milk until milk is absorbed.
- Beat eggs slightly, add in with breadcrumb mixture. Add ground meat, diced onion, salt, pepper and sage. Combine well.
- Grease loaf pan, pack mixture lightly into pan.
- Combine brown sugar, catsup, nutmeg and dry mustard for sauce and spread over top of loaf.

- Preheat oven to 350 degrees F (175 degrees C).
- Heat butter in a large heavy skillet over medium heat; cook and stir onion, green onions, carrot, celery, and garlic until fragrant, about 5 minutes. Cover skillet with a lid and cook, stirring occasionally, until carrot is tender, about 5 more minutes. Stir 1/3 cup ketchup, Worcestershire sauce, salt, and pepper into vegetable mixture; cook until warmed through, about 1 minute.

- Preheat oven to 350 F and line a sheet pan with parchment paper.
- Add the onion, garlic, parsley and basil to a food processor and pulse until finely chopped. Transfer to a medium sized bowl.
- Add 3/4 cup of marinara, bread crumbs, parmesan, egg, Italian seasoning, salt and pepper. Stir to combine. Add the ground chicken and mix to combine.
- Transfer the mixture to the prepared sheet pan and shape into an 8x4 inch loaf.
- Bake for 45 minutes.
- Remove from the oven and brush with remaining 1/4 cup marinara sauce. Top with the shredded mozzarella and continue baking for 10-15 minutes.
- Meanwhile, melt the butter in a medium skillet over medium heat. Add the panko and garlic powder. Toast, about 3-4 minutes. Transfer to a small bowl and let cool several minutes, before stirring in the parmesan, parsley and basil. Season with salt and pepper.
- Garnish the meatloaf with some of the bread crumb mixture and a sprig of basil. Serve remaining bread crumb mixture and more marinara sauce on the side.
