Spicy Rice and Beans image

Make this as spicy as you wish,add more or less,cumin, coriander, chili powder and jalapeno. We like it hot!! from Company's comming - diabetic cooking.

1 cup onion, chopped
3 cloves garlic, smashed
1/2 cup celery, chopped
1 jalapeno pepper, seeded and finely diced
1 tablespoon canola oil
1 teaspoon ground cumin
1 teaspoon ground coriander
2 teaspoons chili powder
1 1/2 cups long grain brown rice, uncooked
1/2 cup grated carrot
2 3/4 cups water
1 tablespoon vegetable bouillon granules
1 bay leaf
1 (14 ounce) can red kidney beans or 1 (14 ounce) can pinto beans, drained
1 cup chopped tomato
1/2 cup fresh corn or 1/2 cup frozen corn
1 tablespoon fresh cilantro, chopped (optional)
2 tablespoons fresh parsley

Steps:

  • Saute onion, garlic, celery and jalapeno pepper in canola oil in large non stick frying pan for 3 minutes, stirring occasionally.
  • Add cumin, coriander, chili powder and rice.
  • Cook on medium, stirring occasionally until golden.
  • Stir in carrot, water, bouillon powder and bay leaf.
  • Cover; Simmer on medium low for 20 minutes.
  • Stir in beans, tomato and corn.
  • Cover; heat for 15 to 20 minutes until liquid is absorbed.
  • Remove and discard bay leaf.
  • Stir in cilantro and 1 tablespoon parsley.
  • Garnish with remaining parsley.

1 pound ground beef
1 medium onion, chopped
2 cups cooked rice
1 can (16 ounces) Ranch Style beans (pinto beans in seasoned tomato sauce)
6 ounces process cheese (Velveeta), cubed
3 tablespoons water

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the rice, beans, cheese and water. Cook and stir over medium-low heat until cheese is melted.

This recipe is quick and easy to make. It has alot of flavour and heats up well the next day. If you are cooking for a larger group its really versatile. Cups of beef broth need to=cups of rice thats all you need to remember. This is a fun recipe to play around with. For an Italian flavour substitute Italian seasoning for the spicy pepper medley etc.

1 lb lean ground beef or 1 lb ground chicken
1 (40 g) package onion soup mix
1 tablespoon Clubhouse spicy pepper medley
1 teaspoon garlic powder
1 (28 ounce) can diced tomatoes
1 medium green pepper, diced (optional)
3 cups beef broth
3 cups instant rice (Minute Rice or Uncle Ben's)
1/2 cup vegetable juice or 1/2 cup tomato juice

Steps:

  • In a Dutch oven: brown ground beef with garlic powder and green pepper until beef and pepper are cooked through; drain off excess fat.
  • Add onion soup mix, pepper medley, can tomatoes, beef broth and vegetable juice; mix well.
  • Bring contents to a boil and simmer for 5-10 minutes until onions in soup mix are soft; add rice. Cover pot and remove from heat. Let stand for 6-7 minutes or until rice is cooked through.

2 tablespoons vegetable oil
1/2 pound extra-lean ground beef or ground turkey
1 cup chopped onions
1 cup chopped bell peppers
2 cloves garlic, minced
1 tablespoon lemon juice
1 tablespoon prepared mustard
1 teaspoon chili powder
2 tablespoons soy sauce
Dash cayenne pepper
1 cup tomato sauce
2 cups cooked or canned black beans , rinsed and drained
Kosher salt and freshly ground black pepper, to taste
3 cups cooked rice
Optional: cilantro, freshly chopped
Optional: avocado, sliced
Optional: tomato, sliced

Steps:

  • Gather the ingredients.
  • Heat the vegetable oil in a large skillet over medium heat. Add the ground beef and onions and cook, stirring frequently until the beef is no longer pink. Add the bell peppers and garlic and continue cooking for 2 to 3 minutes.
  • In a small bowl combine the lemon juice, mustard, chili powder, soy sauce, and cayenne pepper with a small amount of tomato sauce; whisk until thoroughly blended. Stir in the remaining tomato sauce and then add the sauce mixture to the ground beef in the skillet. Add the drained black beans and cook for 20 to 30 minutes. Taste and season with salt and freshly ground black pepper, as needed.
  • Serve the ground beef and beans with hot cooked rice. Garnish with chopped fresh cilantro and avocado or tomato wedges, if desired.

1-1/2 pounds boneless round steak
1 tablespoon prepared mustard
1 tablespoon chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 garlic clove, minced
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 medium onion, chopped
1 teaspoon beef bouillon granules
1 can (16 ounces) kidney beans, rinsed and drained
Hot cooked rice

Steps:

  • Cut steak into thin strips. Combine mustard, chili powder, salt, pepper and garlic in a bowl; add steak and toss to coat. Transfer to a 3-qt. slow cooker; add tomatoes, onion and bouillon. Cover and cook on low for 6-8 hours. Stir in beans; cook 30 minutes longer. Serve over rice.
