Hot 'n' Spicy Omelet image

Red pepper flakes add plenty of fiery zip to this omelet from Dixie Terry of Goreville, Illinois. "It's a favorite at our house - for breakfast, brunch or supper - with sausage or bacon, home fries and hot biscuits," she shares.

1 tablespoon butter
1 tablespoon canola oil
8 large eggs
2 tablespoons water
4 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon crushed red pepper flakes

Steps:

  • In a large nonstick skillet, melt butter and oil over medium-high heat. Whisk the eggs, water, garlic, salt and pepper. Add egg mixture to skillet (mixture should set immediately at edges). , As eggs set, push cooked edges toward the center, letting uncooked portion flow underneath. When the eggs are set; fold in half. Invert omelet onto a plate to serve. Sprinkle with red pepper flakes.

This is one of the best omelets you get from vendors on the streets to have between bread slices with maybe some ketchup and green chutney applied to each slice. Have a bite of our street cuisine.

1 teaspoon vegetable oil
1 spring onion, sliced finely
1 medium red onion, chopped (I prefer the spring onions)
1 -2 green chili, chopped fine,to taste
2 cloves garlic, finely chopped
1/2 inch gingerroot, finely chopped
1/4 teaspoon turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
2 eggs, beaten
freshly chopped coriander
freshly chopped mint
3 -5 drops lime juice
salt

Steps:

  • Heat the oil in frying pan (I use a non stick pan) and fry the onion, chilli, ginger, garlic until translucent.
  • Add turmeric and saute for a minute more.
  • Add the other spices and cook for a few minutes more stirring now and then.
  • Take them off the flame.
  • Beat the eggs lightly and add salt to taste.
  • Now add the cooked mix to the eggs.
  • Add the green leaves chopped, (cilantro and mint).
  • Now add it back to the pan which will have some grease in it.
  • Cook for a few minutes and then flip over after sprinkling some lemon drops on the first side.
  • You can also place this under a grill to do the second side.
  • This goes very well with chapatis/ rotis too.

1/2 cup Basic Green Chutney or store-bought
1 tablespoon vegetable oil
1 small onion, finely chopped
4 to 5 ounces fresh spinach (1 small bunch) trimmed, washed, and finely chopped
salt, to taste

Steps:

  • 1. Prepare the chutney. Then, place it in a fine-mesh strainer set over a bowl to drain out most of the juices. (Press on it slightly just before using.)2. Heat the oil in a small nonstick wok or saucepan over medium heat and cook the onion, stirring, until golden, about 5 minutes. Add the spinach and cook, stirring, until it wilts, about 1 minute.   • Wash the green chilies and allow them to dry for a while. Slit them with a knife. Please do wear a mask & ventilate your kitchen well.
  • Heat a pan with oil and fry the chilies till they wilt off fully and begin to get discolored. Add garlic cumin, turmeric to the hot pan. Cool completely.
  • Optionally you can also fry the coconut and peanuts until golden and aromatic. Then cool completely & add them to the blender.
  • Then add the chilies, salt, vinegar and left over oil in the pan to the blender jar. Blend everything well to a coarse green chilli chutney.
