LIME-CILANTRO TILAPIA

Steps:
- In a shallow bowl, mix flour, salt, pepper and 1/4 teaspoon cumin. Dip fillets in flour mixture to coat both sides; shake off excess., In a large nonstick skillet, heat oil over medium heat. Add fillets; cook, uncovered, 3-4 minutes on each side or until fish flakes easily with a fork. Remove and keep warm., To the same pan, add broth, cilantro, lime zest, lime juice and remaining cumin; bring to a boil. Reduce heat; simmer, uncovered, 2-3 minutes or until slightly thickened. Serve with tilapia.

- wisk together first 5 ingredients until smooth.
- marinate tilapia filets in sauce for 2 minutes.
- remove from marinate and press into panko breadcrumbs on both sides panko will adhere loosely to the fish, so just press breadcrumbs loosely to surface and gently place on a broiler pan that has been misted with cooking spray, a light coating of cooking spray on top of the filets.
- broil for 5 minutes.

GINGER LIME TILAPIA
My husband won't eat fish unless its Tilapia, so I've had to find ways to make it interesting. This is my favorite variation I've done so far. I generally serve this with fresh snow peas or green beans splashed with teriyaki sauce.

Steps:
- Mix together the lime zest, ginger, paprika, garlic powder, red pepper flakes, salt and pepper.
- Sprinkle mixture on both sides of each tilapia filet.
- Heat olive oil in a pan. Add the fish filets to the pan and cook on medium-high for 4 minutes on each side.
- Sprinkle finished filets with lime juice.
ASIAN-STYLE GRILLED TILAPIA
I have to put this recipe somewhere before it gets thrown away!! It was in the paper as a "Quick Meal". I just love tilapia!! Feel free to add more garlic or ginger to this sauce....the more the merrier, right?

Steps:
- Combine the soy sauce, sugar, garlic, lime juice, ginger and red pepper flakes in a wide, shallow baking pan that will hold all of the fish in a single layer.
- Stir briefly to dissolve the sugar.
- Add the tilapia, then turn it over so that it's coated all over with the marinade.
- Set aside for 20 min or so.
- Heat the broiler to high, and move the oven rack to position closest to heat.
- Slide the pan into the oven, and broil the fish for 5 minute Keep the oven door ajar so the broiler element stays lit.
- Turn the pan around (back to front), and broil for 5 more minute.
- If the juices in the pan appear to burn, add a little water to the dry spot to prevent burning.
- The fish should be opaque and flaky.
- Spoon the sauce over the fish when serving.

TILAPIA WITH SPICY COCONUT SAUCE

- Instructions.
- Preheat oven to 375°.
- Slice ends off sweet potatoes and cut in half.
- Wrap each sweet potato half with foil and place in oven.
- Bake for 40 to 45 minutes until soft.
- Lightly coat a medium saucepan with olive oil.
- Heat over medium heat and add red curry paste. Simmer briefly.
- Add coconut milk and bring to a boil. Simmer 2 minutes, stirring constantly with a wire whip. Keep warm.
- Peel skins from baked sweet potatoes and place in a large mixing bowl. Add brown sugar, lime juice and salt.
- Mash with potato masher until smooth.
- Stir in cilantro.
- Steam sugar snap peas until tender, about 5 minutes.
- Increase oven temperature to 400°. Rub 1 teaspoon olive oil over each fillet of fish. Season with salt and pepper. Sear fish in a large sauté pan for about 1 minute on each side over medium heat. Transfer to oven and bake for 5 to 10 minutes or until cooked through.
- Place 1/2 cup mashed sweet potatoes and 1/2 cup sugar snap peas on plate. Top with fish fillet.
- Serve with 2 tablespoons curry sauce.
