CRISPY GINGER BEEF
If you like sweet, spicy, crispy Chinese food- this is for you. Adapted from a recipe I saw on "Fixing Dinner" with Sandi Richard.

Steps:
- Place cornstarch in a large bowl.
- Add water gradually while whisking.
- Beat eggs into cornstarch mixture.
- Toss in beef and stir to coat.
- Pour 1 inch of oil into wok, heat until boiling hot, but not smoking.
- Add a quarter of the beef to the oil.
- Seperate with a fork and cook, stirring frequently, until crispy, Remove, drain on paper towel and set aside.
- Repeat until all the beef is cooked.
- Drain off all oil except for about 1 tablespoons and add carrots, onion, ginger, and garlic in that order.
- Stir fry briefly over high heat.
- Combine last 5 ingredients and add to vegetable mixture.
- Bring to a boil and then add beef.
- Heat thorough and serve immediately.
30 MINUTE SPICY GINGER SZECHUAN BEEF
No need to order take-out, this spicy ginger Szechuan beef is completely mouthwatering and ready in just 30 minutes! Perfect for a busy weeknight dinner!

Steps:
- Slice steak, across the grain, into 1/4 inch thick strips (see picture tutorial HERE), and place in a large plastic bag.
- Add mirin and soy sauce and massage into the meat. Add cornstarch, seal the bag and toss/massage to coat the meat.
- Let meat marinate for about 10 minutes or so.
- In a medium mixing bowl, whisk together sauce ingredients and set aside.
- Slice vegetables and set aside.
- Add sesame oil to wok (or large saute pan) and heat over MED-HIGH heat.
- Add beef to hot pan (just enough to cover the bottom of the pan - you'll probably want to do at least 2 batches), and saute about 2-3 minutes. Remove beef to a plate and cook remaining batches.
- Add sliced vegetables to the hot pan and cook about 1-3 minutes (depending on how tender you want them), stirring often.
- Pour in Szechuan sauce and cook about a minute, until slightly thickened.
- Add cooked beef and turn to coat in the sauce.
- Serve over Veetee Dine In Rice.
SPICY CRISPY BEEF
I've never found a recipe for crispy ginger beef like the ones in the restaurants. I have experimented, and found something pretty close. Serve with rice and some steamed veggies.

- Heat oil in deep-fryer to 375 degrees F (190 degrees C).
- Meanwhile, in a mixing bowl, combine cornstarch, salt and pepper together. Mix thoroughly. Toss the steak slices in the cornstarch mixture and coat well.
- Deep fry the coated steak slices until golden brown. Check to make sure they are cooked through. Remove from oil, and set aside.
- In another mixing bowl, combine the soy sauce, rice vinegar, rice wine and honey. Add sugar, chili paste, water, and ginger. Mix well and set aside.
- Heat a wok or deep frying pan over medium high heat. Add 1 tablespoon of oil, and quickly saute the onion, garlic and red pepper for 30 seconds. Add the sauce mixture, and cook another 30 seconds. Finally, add the strips of fried steak and toss to heat through and coat with sauce.

Steps:
- In a medium bowl, whisk together the marinade ingredients and add beef strips.
- Toss to coat well.
- Allow to marinade 30 minutes or overnight.
- In frying pan or electric wok, heat 2 tsp oil over medium heat.
- Stir fry beef mixture in oil 2-3 minutes or until browned.
- Remove from pan, and set aside.
- In pan add remaining 3 tsps of oil, and stir fry vegetables, garlic and ginger for 1 minute.
- Add beef back to pan and stir fry 2 minutes.
- Mix cornstarch and water together and add to frying pan.
- Cook, stirring constantly, until sauce is thickened.
- Serve with rice or oriental noodles.
SPICY GINGER BEEF
Freshly grated ginger adds a peppery heat to the hot red curry and sweet red chili sauce. All three heats combined give this beef entrée, rich and complimentary flavors. A Touch of Thai. Steps:
- Heat oil in a large skillet over a high heat.
- Add beef and one tablespoon of the ginger.
- Salt to taste and stir-fry until meat is barely cooked.
- With a slotted spoon, remove beef to a bowl, draining oil back into skillet.
- Add curry paste and onion to oil.
- Stirring, cook until curry is dissolved and fragrant.
- Add peppers and remaining ginger.
- Stir-fry until vegetables are tender crisp.
- Add sweet red chili sauce and soy sauce to vegetables .
- Stir to combine.
- Pour reserved meat, with accumulated juices into skillet.
- Cook until meat is just heated through.
- Add basil or parsley and mix until combined.
- Serve immediately.

- Cut beef into 1/4-in.-thick strips. In a large bowl, whisk the first 7 ingredients until blended. Pour 1 cup marinade into a shallow dish. Add beef; turn to coat. Refrigerate, covered, 2-8 hours. - Skewer meat cubes onto each of 16 small wooden skewers. Place in baking dish. Mix dressing, gingerroot and red pepper in small bowl. Brush half of the dressing mixture on meat. Cover. Refrigerate 1 hour to marinate. Refrigerate remaining dressing mixture.
- Preheat broiler. Remove skewers from marinade; discard marinade. Place skewers on foil-covered baking sheet. Sprinkle with cheese. Broil skewers, 4 to 6 inches from heat source, 8 to 10 min. or until meat is cooked through, turning skewers after 4 min.
- Heat reserved sauce. Use as a dipping sauce or drizzle over skewers.
