SPICY ORANGE-GINGER CHICKEN
This is Szechuan type of stir fry. You can vary the spiciness by the amount of chili sauce you add. It is a very colourful dish which is nice with rice to soak up the delicious sauce.

Steps:
- Halve the peppers, remove the ribs and seeds, and cut into strips.
- Using vegetable peeler, remove the rind (orange part only) from the orange.
- Cut the rind into very thin julienne strips about 3 inches long.
- Squeeze the orange.
- Add more frozen juice if necessary to make 3/4 cup.
- In a bowl, combine orange juice, chili sauce, sherry, sugar, and cornstarch.Stir until smooth
- In wok, heat oil over high heat and stir-fry chicken until browned and cooked through.
- Remove chicken.
- Add orange rind, garlic and ginger and stir-fry until aromatic.
- Add peppers and stir fry for 2 minutes.
- Add the chili sauce mixture and return the chicken to the wok.
- Cook until the sauce is thickened.
SPICY GROUND CHICKEN
I made up this recipe in my diet days when I tried to eat healthy. It is quick, tasty and low fat. You can either serve on top of rice or wrap in a soft tortilla for a great low fat and filling meal.

Steps:
- Slice all veggies.
- Spray a non-stick skillet with cooking spray or optional olive oil.
- Cook ground chicken until completely done, about 10 minutes.
- Remove from pan and set aside.
- Add onions and garlic to pan and sauté until translucent.
- Add zucchini, mushrooms, red and green peppers.
- Cover, stirring often until cooked.
- Don't drain liquid.
- Add cooked ground chicken and salsa to veggies.
- Mix well.
- Simmer about 10 minutes.
- Serve wrapped in a soft flour tortilla or over rice.
- DO NOT use ground chicken in the tube as it is dry and ruins the dish.

- In a saucepan combine tomato sauce,corn starch,ginger,pepper and garlic salt in a sauce pan.
- Bring to a simmer and reduce heat and cook down until slightly thick.
- Cook chicken breasts in olive oil over medium high heat.
- After removing chicken add peppers and onions to pan.
- Sauté until caramelized.
- Add to ginger sauce.
- Serve over chicken breasts.

CHICKEN STIR-FRY WITH MIXED PEPPERS
I used green peppers only for this stir-fry. Try to use a mix of hot and sweet peppers, and feel free to use red, yellow or orange ones if you want to introduce some color. The chicken is "velveted" before stir-frying; a good name for this technique as the texture of the chicken remains velvety and moist after stir-frying.

- In a large bowl stir together the egg white, cornstarch, 1 1/2 teaspoons of the rice wine or sherry, salt to taste and 1 1/2 teaspoons water. When you can no longer see any cornstarch add the chicken and stir together until coated. Cover the bowl and place in the refrigerator for 30 minutes.
- Combine the remaining rice wine or sherry, the hoisin sauce, soy sauce, and sugar in a small bowl and set it near your wok.
- Fill a medium-size saucepan with water and bring to a boil. Add 1 tablespoon of the oil and turn the heat down so that the water is at a bare simmer. Carefully add the chicken to the water, stirring so that the pieces don't clump. Cook until the chicken turns opaque on the surface but is not cooked through, about 1 minute. Drain in a colander set over a bowl.
- Heat a 14-inch flat-bottomed wok or 12-inch steel skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Add the remaining oil by pouring it down the sides of the pan and swirling the pan, then add the garlic, ginger and chile and stir-fry for no more than 10 seconds. Add the peppers and stir-fry for 1 minute. Add the chicken, cashews and hoisin sauce mixture and salt to taste. Stir-fry for 1 to 2 minutes, until the chicken is cooked through, and serve with grains or noodles.

THAI GINGER CHICKEN (GAI PAD KING)
My family loved ordering this dish at our local Thai restaurant, but then they closed down for some unknown reason (they were always busy). So I decided to recreate this traditional dish at home. My husband says it's just like the restaurant...maybe even better? Please note that some people like to eat the ginger, while others don't but like the flavor it gives off. You can easily double this recipe to serve a larger group...plus it makes great leftovers.

- Bring the rice and water to a boil in a saucepan. Reduce heat to medium-low; cover and simmer until the rice is tender and the liquid has been absorbed, 20 to 25 minutes.
- Meanwhile, heat a wok or large skillet over medium-high heat. Stir in the garlic and chicken; cook for 2 minutes. Add the fish sauce, oyster sauce, sugar, ginger, red pepper, mushrooms, and onions. Cook and stir until the chicken is no longer pink and the vegetables are nearly tender, about 3 minutes. Dissolve the chile paste in the chicken broth, then add to the chicken mixture. SPICY GINGER CHICKEN
This simple dish will be familiar to many people-it shows up in Chinese restaurants as well. Chicken and ginger go together beautifully, and some people love this dish with beef instead. - Put oil into wok or frying pan. When hot, add garlic and stir-fry until brown.
- Add onion and chicken; stir-fry until chicken begins to turn white.

TURMERIC-BLACK PEPPER CHICKEN WITH ASPARAGUS
In this sweet and spicy stir-fry, black pepper, honey and rice vinegar help accentuate turmeric's delightfully earthy qualities. Thinly sliced asparagus doesn't need much time to cook, but feel free to swap with any other vegetables that cook in just a few minutes, like thinly sliced green beans, frozen peas or baby spinach. - In a small bowl or measuring cup, stir together 1/4 cup water with the honey, pepper and 1/2 teaspoon salt; set honey mixture aside.
- In a medium bowl, stir together the flour, turmeric and 1 teaspoon salt. Add the chicken and toss until coated.
- In a medium (10-inch) nonstick skillet, heat the oil over medium-high. Add the chicken and cook until the turmeric is fragrant and the chicken is golden brown on both sides, 2 to 3 minutes per side. Add the asparagus, season with salt, stir to combine and cook until crisp-tender, 1 to 2 minutes.
- Add the honey mixture and cook, stirring, until the chicken is cooked through and the sauce has thickened, 2 to 3 minutes.
- Remove from heat and stir in the vinegar, if using. Season to taste with salt and pepper. Serve with lime squeezed over top, if you like.
