SPICY CILANTRO LIME SHRIMP RECIPE

Lime juice, cilantro, butter and a healthy dose of crushed red peppers, make these shrimps amazingly delicious!

2-3 Tablespoon Butter
2-3 cloves Garlic (chopped)
7 ounces Shrimp
½ Teaspoon Salt
¼ Teaspoon Black Pepper
2 Tablespoon Lime Juice
1 Tablespoon Cilantro (aka Coriander)
½ Tablespoon Red Chili Pepper Flakes
Lime Wedges (to decorate, optional)

Steps:

  • Heat up a skillet and melt your butter. Keep over a medium to low heat setting.
  • Stir in chopped garlic and sauté over a lower heat setting. The garlic shouldn't turn brown.
  • Stir in fresh shrimp and spread out in the pan. Keep on a medium heat setting.
  • Sauté shrimps for about 2 minutes and season with salt and black pepper.
  • Turn all the shrimps so that they get evenly cooked on all sides.
  • Finish cooking shrimp over a medium heat setting. Cook them until they look cooked through but still juicy. Don't overcook!
  • Take the pan from the heat and stir in lime juice.
  • Top with chopped fresh cilantro/coriander and crushed red pepper flakes.
  • You can garnish it too with lime wedges. The dish will look all the more delicious!

1/3 cup chopped fresh cilantro
1-1/2 teaspoons grated lime zest
1/3 cup lime juice
1 jalapeno pepper, seeded and minced
2 tablespoons olive oil
3 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon pepper
1 pound uncooked shrimp (16-20 per pound), peeled and deveined
Lime slices

Steps:

  • Mix first 9 ingredients; toss with shrimp. Let stand 15 minutes., Thread shrimp and lime slices onto 4 metal or soaked wooden skewers. Grill, covered, over medium heat until shrimp turn pink, 2-4 minutes per side.

3/4 teaspoon coarse salt
3/4 teaspoon smoked paprika (or 1 teaspoon paprika)
1/2 teaspoon ground cumin
1/2 teaspoon curry powder
1/8 teaspoon cayenne pepper
1/8 teaspoon ground cinnamon
1 1/4 pounds large shrimp, peeled and deveined
1 tablespoon unsalted butter
Chopped cilantro (optional), for serving
Lime wedges (optional), for serving
Toasted whole-wheat naan (optional), for serving
Plain yogurt (optional), for serving

Steps:

  • Combine salt, paprika, cumin, curry powder, cayenne, and cinnamon. Sprinkle over shrimp and toss to combine.
  • In a large skillet, melt butter over medium-high. Add shrimp and cook, stirring occasionally, until opaque throughout, 3 to 5 minutes. Serve shrimp with cilantro, lime wedges, naan, and yogurt.

3 large garlic cloves, minced and mashed
1 1/8 teaspoons salt
1/2 cup fresh lime juice
1/4 cup orange marmalade
1/4 cup finely chopped fresh cilantro
4 tablespoons olive oil
1 tablespoon soy sauce
1/2 teaspoon red pepper flakes (adjust to taste)
1/2 teaspoon fresh ground black pepper
1 lb large shrimp, peeled and deveined (20-24 to the pound)

Steps:

  • Mix together garlic and 1 teaspoon salt.
  • Whisk together garlic paste, lime juice, marmalade, cilantro, 3 tablespoons oil, soy sauce, red pepper flakes, remaining 1/8 teaspoon salt and pepper in a small bowl.
  • Transfer 1/3 of mixture to small serving bowl and reserve for dipping sauce.
  • Combine shrimp with remaining mixture in a large sealable plastic bag and seal bag, pressing out excess air.
  • Marinate shrimp, refrigerated, turning bag once, for 15 minutes.
  • Drain shrimp and gently pat dry.
  • Shrimp can be cooked on the girll or. . .
  • Pan Fried:
  • Heat 1 1/2 teaspoon oil in a large non-stick skillet over moderately high heat.
  • Add half of shrimp and cook, turning occasisionly until shrimp is cooked through, about 3 minutes total.
  • Tranfer to a platter and cook the remaining shrimp in 1 1/2 teaspoons of oil.
  • Garnish with cilantro and serve with dipping sauce.

2 limes, juiced and zested
1/2 cup cilantro, fresh, roughly chopped
1 teaspoon cumin, ground
4 tablespoons olive oil, extra virgin
2 lbs large shrimp, peeled and deveined, tails intact
fresh cilantro stem, for garnish
3 ripe avocados, scooped out
3 tablespoons fresh lime juice
3/4 cup sour cream (can use light)
1 jalapeno, seeded and minced
salt

Steps:

  • In a large mixing bowl, combine the lime juice and zest, cilantro, cumin and oil and whisk well. Add the shrimp and toss to coat. Do not marinate shrimp longer than 5 minutes or the lime juice will begin cooking the shrimp.
  • Preheat a barbecue or grill pan to medium-high heat. Season the shrimp with salt and pepper to taste and grill for 2-3 minutes on each side or until lightly charred and cooked through, making sure not to overcook the shrimp. Remove the cooked shrimp from the grill and place on a serving platter, with a small serving bowl of the Spicy Hass Avocado Puree. Garnish the shrimp with fresh sprigs of cilantro and serve.
  • Avocado Puree: Add the avocado, lime juice, sour cream and jalapeno to a blender and puree until smooth, scraping the sides of the blender as needed. Season with salt to taste. Place in a covered, airtight container and refrigerate until serving.

1/4 cup oil
1/4 cup water
1/2 cup chopped green onion
1/2 cup cilantro leaf
2 -3 garlic cloves (less if you're sensitive to garlicky things)
1/2 teaspoon salt
2 limes, juice of
1/2 cup sour cream
1 lb shrimp, peeled and deveined, tails removed
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon southwest seasoning
1/4 teaspoon cayenne pepper (more or less to taste)
2 -3 cups shredded green cabbage
8 small corn tortillas
1 -2 avocado
Cotija cheese, and additional cilantro for topping
lime wedge, for serving

Steps:

  • Pulse all the sauce ingredients except the sour cream in a food processor. When mostly smooth, add the sour cream and pulse until combined. Taste and adjust as needed. Set aside.
  • Heat a drizzle of oil a large skillet over medium high heat. Pat the shrimp dry with paper towels and sprinkle with the spices. Add the shrimp to the hot pan and saute for 5-8 minutes, flipping occasionally, until the shrimp are cooked through.
  • Toss some of the sauce (not all) with the cabbage until it the cabbage is coated to your liking. It should resemble a coleslaw - you want it to be enough sauce so the cabbage is weighed down a little bit. Use leftover sauce on top of the tacos or in other recipes.
  • To serve tacos, smash a spoonful of avocado on the tortillas, top with a few pieces of shrimp, top with coleslaw, and finish with Cotjia cheese, cilantro, and lime wedges.
