I found a wonderful cookbook at a garage sale last summer. It's 566 pages of recipes from the employees of Dayton's,Hudson's, and Marshall Fields. We tried this one and really loved it! It was submitted by Geri Phillips of Marshall Fields.

4 boneless skinless chicken breast halves
4 tablespoons butter
1/4 lb sliced fresh mushrooms
1 cup sour cream
1 (10 ounce) can cream of chicken soup
1/2 teaspoon garlic salt
1/2 teaspoon paprika
1 cup shredded swiss cheese

Steps:

  • Heat oven to 350 degrees F.
  • Saute chicken in butter until lightly browned.
  • Place chicken in greased 8x8 baking dish.
  • In skillet, saute mushrooms until lightly browned; add sour cream and soup.
  • Cook and stir for 1 minute, scraping bits from bottom of pan.
  • Add garlic salt and paprika.
  • Pour mixture over chicken.
  • Bake for 30-35 minutes, until juices run clear.
  • Sprinkle cheese over chicken; bake another 10 minutes, until cheese is melted and bubbly.

1 La Tortilla Factory Whole Wheat Low-Carb/Low-Fat Tortilla; Large**
3 baked corn tortilla chips (like Guiltless Gourmet's Yellow Corn Tortilla Chips)
1/3 cup frozen ground-beef-style soy crumbles (like Boca Ground Crumbles or MorningStar Farms Meal Starters Grillers Recipe Crumbles)
1/4 cup shredded fat-free cheddar cheese
1/4 cup shredded lettuce
1/3 tomato, diced
1 tbsp. fat-free sour cream
1/2 tsp. taco seasoning

Steps:

  • Combine frozen soy crumbles, cheese and taco seasoning in a small microwave-safe bowl. Heat in microwave for 30 seconds.
  • Warm tortilla for a few seconds in the microwave (making it easier to fold without ripping), and then lay it out on a flat surface.
  • Place the soy crumble mixture in the center of the tortilla. Flatten the mixture into a circle, keeping it about 2 inches from the edge of the tortilla.
  • Next, layer the tortilla chips on top of the soy crumble mixture. Evenly top with sour cream, lettuce and then tomato.
  • FOLDING INSTRUCTIONS: Starting at the bottom of the tortilla, fold edge up to the center of the tortilla. Then going around the edge of the tortilla, repeatedly fold overlapping sections to meet the center, for a total of about 6 folds (until filling is completely enclosed).
  • In a pan sprayed with nonstick spray, over medium heat, carefully place the folded tortilla in the center of the pan (folded side down). Heat for 3 - 4 minutes. Carefully flip the wrap with a spatula and heat for another 30 seconds. Enjoy!

6 boneless skinless chicken breasts
1 can (10.5 oz.) condensed cream of chicken soup
1 cup BREAKSTONE'S or KNUDSEN Sour Cream
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1/2 cup KRAFT Shredded Parmesan Cheese
1/2 cup (1 stick) butter

Steps:

  • Preheat oven to 350 degrees.
  • Grease a 9x13 baking dish.
  • If the chicken breasts are super thick, I slice them in half, horizontally, to get breasts with a more even thickness, otherwise you can just pound them slightly to flatten out the thick end. Evening out the thickness of the meat means it will cook more evenly.
  • Place the chicken breasts into the prepared pan.
  • Stir together the sour cream and soup. Spread the sauce in an even layer over the top of the chicken breasts.
  • Pour the contents of the stuffing box into a gallon-sized zip-top bag. Use a rolling pin to crush the stuffing mix into fine crumbs.
  • Once the stuffing is crushed, add the Parmesan cheese to the bag. Shake the bag so all the crumbs and herbs form the stuffing are combined with the Parmesan.
  • Sprinkle the Parmesan/stuffing mixture over the sauce on your chicken. Use it all. It will seem like a thick layer, but trust me, it's perfect!
  • Distribute the butter slices over the top of the crumbs.
  • Bake in a 350 degree oven for 45 minutes to an hour, depending on the thickness of your chicken breasts. Internal temperature of the chicken should be 165 degrees.

6 tablespoons all-purpose flour, divided
1 teaspoon paprika
1 ½ teaspoons salt, divided
¼ teaspoon ground black pepper
6 boneless, skinless chicken breast halves
¼ cup butter
2 tablespoons water
1 ¼ cups half-and-half
6 ounces fresh mushrooms, sliced
1 tablespoon lemon juice
1 ½ cups shredded Cheddar cheese

Steps:

  • In a shallow dish or bowl, combine 4 tablespoons flour, paprika, 1 teaspoon salt and pepper. Coat chicken breasts with the flour mixture. In a large skillet, brown the coated chicken in 1/4 cup of butter or margarine. Add the water, cover and let simmer covered for 25 to 30 minutes.
  • Meanwhile, preheat oven to 350 degrees F (175 degrees C).
  • When chicken breasts are done simmering, remove from the skillet and place in a 9x13 inch baking dish; save drippings. Combine remaining 2 tablespoons flour, 1/2 teaspoon salt and half-and-half. Mix together and stir mixture into reserved drippings in skillet. Bring to a simmer, stirring, and cook until thick and bubbly. Add mushrooms and lemon juice and stir together. Pour sauce over chicken and bake uncovered in the preheated oven for 30 minutes
  • Sprinkle with cheese and bake 3-5 minutes more until cheese melts.

1 tbsp olive oil
1 tbsp butter
1 small onion , thinly sliced
50g smoked bacon lardons
1 garlic clove , crushed
2 skin-on chicken breasts
1 tsp plain flour
50ml white wine
150ml double cream
½ tbsp Dijon mustard
½ small bunch of parsley , very finely chopped (optional)
mashed potato and steamed green veg, to serve

Steps:

  • Heat half the oil and butter in a large non-stick frying pan. Add the onion and a pinch of salt and fry for 10-15 mins or until golden brown and caramelised. Add the bacon, turn up the heat and cook for 5 mins or until golden brown. Add the garlic and cook for 1 min more. Scrape the mixture into a bowl and set aside.
  • Heat the remaining oil and butter in the same pan over a medium-high heat. Season the chicken skin and fry, skin-side down, for 8-10 mins or until deep golden brown and crisp. Flip over and fry for 5 mins on the other side.
  • Add the onion and bacon mixture back to the pan. Stir through the flour and cook for 2 mins. Pour in the wine, bring to the boil and simmer for a few minutes.
  • Stir through the cream and mustard and simmer over a low heat, uncovered, for 5 mins with the chicken skin-side up. Season to taste. Scatter with parsley, if you like, and serve with mashed potatoes and greens.

1 teaspoon salt
1/4 teaspoon pepper
3/4 cup powdered coffee creamer
1 tablespoon flour
3/4 cup mushroom, canned with liquid reserved
1 teaspoon paprika
1 teaspoon Worcestershire sauce

Steps:

  • Place chicken in shallow pan. Brush with butter. Sprinkle with salt and pepper. Bake at 400 degrees for 45 minutes.
  • While chicken is baking, drain mushrooms; measure liquid, adding water to make 1 cup.
  • In mixing bowl, combine creamer, flour, mushroom liquid, paprika, and Worcestershire sauce. Stir with a wire whip until blended. Add mushrooms.
  • Spoon sauce over baked chicken and continue baking 10-15 minutes longer.

0.5 (8 ounce) jar salsa, your choice
1 (14 1/2 ounce) soup can milk
0.5 (7 ounce) soup can water
2 tablespoons Wondra Flour
16 ounces spaghetti

Steps:

  • Place cream of chicken soup, tomatoes, salsa, milk and water in rice cooker.
  • Stir to combine. Add chicken. Set to "Cook.".
  • Check after about 30-45 minutes. If chicken seems done, take out and debone.
  • Thicken sauce with Wondra. Add chicken back to cooker. Set on "Cook" again.
  • Meanwhile, cook spaghetti. Chicken will be done by the time spaghetti is cooked.
  • Serve with crusty bread and a salad.
  • NOTE:.
  • This recipe could also be started the day before using so you can remove the chicken and cool it overnight; and by refrigerating the liquids overnight you can remove the layer of solidified fat.
  • Just bring the liquid and de-boned chicken up to a boil in the ricecooker and continue with the rest of it.

1 1/4 cups nonfat milk
1/4 small onion (about 1 1/2 tablespoon)
2 tablespoons grated carrots
4 peppercorns
1/8 teaspoon nutmeg

2 tablespoons flour
2 tablespoons instant nonfat dry milk powder
4 (5 ounce) boneless skinless chicken breasts
1/4 cup mushroom, minced
2 tablespoons pitted olives, minced

2 cups fat-free chicken broth

Steps:

  • To make the mock Bechamel sauce, add the nonfat milk, onion, carrots, nutmeg and peppercorn to a small saucepan. Bring the milk to boil over medium heat. Turn off heat, put a lid on the pot and let it seep for 10 minutes. Strain out the peppercorns, onion and carrots, reserving seasoned milk. Melt butter in saucepan, whisking in the flour and cornstarch. The mixture will be dry, add about 1/4 of the milk and continue to whisk to a paste. Add in the milk powder first, then remaining milk. Simmer until the sauce is thickened.
  • To poach the chicken: add chicken broth and bouquet garni to a large skillet and bring broth to a low boil. Broth should just cover chicken, add more broth if needed. Place chicken breasts into the pan and simmer for 15 minutes.
  • To assemble dish: Mix together the mock Bechamel with the olives, mushrooms, parsley, chives and garlich. Tear off four pieces of aluminum foil and prepare the dull side of the foil with a quick shot of cooking spray. Place a chicken breast in the center of each piece of foil, top with 1/4 of the sauce mixture. Fold packets, wrapping chicken tightly. Bake for 10-12 minutes at 425 degrees. Serve.

2 tablespoons vegetable oil
6 skinless, boneless chicken breasts
1 (10.75 ounce) can condensed cream of chicken soup
½ cup light whipping cream
½ cup dry sherry
1 teaspoon dried tarragon
1 teaspoon Worcestershire sauce
1 teaspoon chopped fresh cilantro
¼ teaspoon garlic powder
1 (6 ounce) can sliced mushrooms

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Pound the chicken breasts to an even thickness. Heat the butter or margarine and oil in a 9x13 inch baking dish and add the chicken. Coat the chicken with the butter or margarine mixture and bake in the preheated oven for 10 to 15 minutes or until breasts just cooked (the center should still be slightly pink).
  • In a medium saucepan over medium heat, warm the soup, cream, sherry, tarragon, Worcestershire sauce, cilantro, garlic powder and mushrooms. Pour sherry cream mixture over the baked chicken, return to oven uncovered and bake for an additional 15 to 20 minutes. Let cool slightly and serve.

1/3 cup dried breadcrumbs
7 teaspoons flour, divided
9 ounces boneless skinless chicken breasts
1 egg, slightly beaten
2 teaspoons margarine
2 teaspoons oil
1/2 cup sliced fresh mushrooms
1/4 cup canned chicken broth
1/4 cup dry white wine
1 ounce provolone cheese, cut into strips

Steps:

  • In a shallow bowl or on a paper plate, combine the bread crumbs and 2 Tbsp of flour; dip chicken into egg, making sure all sides are coated, then dredge in crumb mixture.
  • Repeat process, being sure to cover the chicken entirely.
  • In a 10 inch nonstick skillet, combine the margarine and oil.
  • Heat over a medium heat until the margarine is bubbly and hot.
  • Add chicken and cook, turning once, until both sides are lightly browned and chicken is cooked through, 2-3 minutes on each side.
  • Transfer to a plate and keep warm.
  • To the same skillet add the mushrooms and saute until lightly browned, 1-2 minutes; sprinkle with remaining teaspoon of flour and stir quickly to combine.
  • Add broth and wine.
  • Cook, stirring constantly, until mixture thickens, about 1 minute.
  • Return chicken to skillet and top evenly with cheese; cover and cook until cheese is melted, 2-3 minutes. Garnish with parsley.

This recipe is for chicken in a (French) supreme sauce. I had chicken supreme in Paris at Restaurant Polidor that was to die for. I have been trying to replicate it at home for a while. This is what I came up with. Besides the beautiful sauce in this recipe, my favorite part is the gallon of chicken broth I end up with when I'm finished. The cooking time of three hours assumes you can chop the vegetables while the chicken is boiling for the first time. This is a wonderful recipe for a rainy Autumn evening.

1 whole chicken (3-4 lbs)
salt
olive oil
3 carrots, unpeeled, coarsely chopped
2 celery ribs, coarsely chopped
2 small onions, peeled and quartered
4 garlic cloves, smashed, peeled and halved
2 bouillon cubes (optional) or 2 teaspoons , boullion paste (optional)
4 cloves
4 fresh thyme sprigs or 1 teaspoon dried thyme
4 peppercorns
1 european bay leaf
4 tablespoons flour
4 tablespoons butter
fresh ground pepper
1 teaspoon paprika
1/4-1/2 cup heavy cream
1 lb potato, peeled and cut into bite size pieces

Steps:

  • Put the chicken in a large pot and fill pot with cold water until the chicken is completely covered.
  • Salt the water and bring to a boil over high heat.
  • Immediately turn the water off, pour off the water and set the chicken on a paper towel and pat dry. Rinse the pot.
  • Salt the chicken. Add 2 tablespoons of olive oil to the pot over medium high heat and brown the chicken on all sides. Set the chicken aside once again.
  • Add the carrot, celery, onion, and garlic to the pot with more oil if needed. Saute approximately 4 minutes until the some of the vegetables begin to brown.
  • Deglaze the bottom of the pot with a small amount of water and increase the heat to high. Place the chicken back in the pot and cover with water once again.
  • Add the boullion, cloves, thyme, peppercorns and bay and bring to a boil. Reduce heat to low and simmer for 40-50 minutes.
  • While the chicken is simmering, boil the potatoes in salted water with about 1 tablespoon of olive oil added for about 15-20 minutes or until tender. Drain potatoes and set aside.
  • Remove the chicken from the water and set aside to cool. Pour 3 cups of the cooking liquid through a thin mesh strainer and keep warm in a small saucepan.
  • Once the chicken has cooled a bit, carve it and cut it into bite size pieces and place them in a bowl, putting any skin, scraps and the leftover carcass back into the large pot with the remaining cooking liquid (simmer this for a few more hours and you will have roughly a gallon of beautiful chicken stock).
  • In a 3 quart saucepan, melt the butter over medium heat and add the flour. Reduce the heat to low and cook this roux for about 5 minutes.
  • Remove the roux pan from heat and pour in reserved warm cooking liquid whisking continuously. Set over medium heat and add the paprika and season with pepper. Continue whisking until the sauce comes to a boil and thickens enough to lightly coat a spoon.
  • Add 1/4 cup of the heavy cream and bring to a boil again, whisking frequently.
  • Season the sauce with salt and more pepper if desired, stirring after each addition. This step may be the most important in the recipe; get the seasoning right!
  • Add more heavy cream if necessary until a spoon dipped in the sauce has a thick coating when removed. It should be velvety and smooth but not quite as thick as a cheese sauce.
  • Add the chicken and potatoes and simmer for 3 minutes to warm them up.

Breaded chicken breasts are sauteed until golden, then baked with Jack cheese, mushrooms, and a white wine sauce. This delicious chicken dish was taught to me by my mother. It calls for white Zinfandel wine, and has an amazing flavor. It is guaranteed to be one of your favorites, too. This dish goes well with asparagus, and some kind of pasta side (we like to make angel hair pasta with garlic herb butter). Enjoy!!

1 ½ cups grated Parmesan cheese
3 eggs, beaten
1 ½ cups Italian-style seasoned bread crumbs
3 tablespoons vegetable oil
4 skinless, boneless chicken breast halves
2 cups white Zinfandel wine
2 cups sliced fresh mushrooms
3 cups shredded Monterey Jack cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a medium baking dish.
  • Place Parmesan cheese, eggs, and bread crumbs in three separate small bowls. Heat the oil in a large skillet over medium-high heat. Dip each piece of chicken into the Parmesan cheese, then into the egg, then into the bread crumbs. Brown the chicken on both sides in the hot skillet, and then transfer them to the prepared baking dish.
  • Pour wine into skillet, and scrape up the browned bits. Add mushrooms and cook for 5 minutes, or until tender. Top each chicken breast with even amounts of Monterey Jack cheese, then spoon mushrooms over the cheese. Pour the remaining wine from the skillet over all. Cover dish with aluminum foil.
  • Bake 30 to 35 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.

1 whole chicken or 1 whole chicken parts
1 onion, cut in chunks
1 sweet pepper, cut in chunks
1 bay leaf
1 carrot, cut in chunks
2 stalks celery, cut in chunks
1/4 cup parsley
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
salt and pepper

Steps:

  • Put chicken in a pot big enough to hold it.
  • Add all ingredients.
  • Cover it with water, plus one inch more.
  • Bring it to a boil.
  • Boil vigoriously for 5 minutes.
  • Turn off fire, cover well, then let it rest undisturbed for one hour.
  • Remove chicken from the pot anytime.
  • Eat or debone, and use it to prepare other recipes.
  • If you decide to debone the chicken, do it before you refrigerate it.
  • Strain the stock and save it for recipes that require chicken stock.
  • Consider making gumbo, jambalaya, spanish rice, using boneless chicken and stock.
