1 pound ground beef
2 jalapenos, seeded and diced fine, plus whole or sliced, for serving
2 shallots, chopped fine
1/2 cup panko bread crumbs
1/4 cup heavy cream
1/4 cup grated spicy Monterey Jack cheese
Pinch garlic powder
Kosher salt
1/2 teaspoon cracked black pepper, plus pinch
1 cup creme fraiche
1/4 cup store-bought salsa verde
12 mini dinner rolls

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, add ground beef, jalapenos, shallots, panko, heavy cream, cheese, garlic powder, 1 tablespoon salt, and 1/2 teaspoon black pepper. Mix together well. Form into small patties and place in the oven for 12 to 15 minutes.
  • In a separate bowl, add creme fraiche, salsa verde, pinch of salt and pepper and mix together. Refrigerate until ready to serve with your sliders.
  • Lightly spread creme fraiche on both sides of buns. Place burgers in middle and pick it with a jalapeno.

3 cloves garlic, smashed

4 boneless chicken breasts, skin on, sliced into wide pieces and pounded to 1/2-inch-thick
2 cups ice
1 cup all-purpose flour
1 1/2 tablespoons sugar
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
1/4 teaspoon baking soda
8 ounces buttermilk
1 ounce unsalted butter, melted
1 1/2 whole eggs, beaten
1 cup honey
1/4 cup mayonnaise
3 tablespoons Sriracha
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon kosher salt
1/4 cup mayonnaise
1/4 cup sour cream
1 teaspoon Dijon mustard
1 teaspoon apple cider vinegar
2 cups thinly sliced green cabbage
1 cup grated carrot
1/2 cup thinly sliced red cabbage
1 Granny Smith apple, cored and julienned (skin-on)
1/2 small red onion, thinly sliced
Salt and freshly ground black pepper
2 cups all-purpose flour
1 tablespoon garlic powder
1 tablespoon onion powder
2 tablespoons kosher salt
1 1/2 teaspoons Italian seasoning
2 teaspoons paprika

2 eggs, beaten
1 cup buttermilk
1 teaspoon hot sauce, such as Tabasco
1/4 cup canola oil

Steps:

  • For the brine: To a saucepan, add 2 cups water, the salt, sugar, red chile flakes, peppercorns, garlic thyme leaves and bay leaf. Bring to a simmer to dissolve the sugar and salt. Once boiling, remove from the heat and add the ice. Once the liquid is cool, place into a freezer bag, and add the chicken to the brine, making sure it is completely submerged. Refrigerate for 1 hour.
  • For the waffle batter: Combine the flour, sugar, baking powder, salt and baking soda. In a separate bowl, beat together the buttermilk, butter and eggs. Make a well in the center of the dry ingredients and add the wet ingredients to the dry while stirring with a whisk. Mix until well combined and there are no lumps. Cover with plastic wrap.
  • Pour the waffle batter into the waffle iron and cook according to the manufacturer's instructions. Repeat for the remaining waffle batter.
  • For the mayo: Whisk together the honey, mayonnaise, Sriracha, garlic powder, onion powder and salt, and set in the refrigerator to allow flavors to come together.
  • For the slaw: Mix mayonnaise, sour cream, mustard and vinegar together in a large bowl. Then add green cabbage, carrot, red cabbage, red onion and apple. Season with salt and pepper. Stir well so everything is coated evenly. Keep the slaw refrigerated until ready to use.
  • For fried chicken: Combine the flour, garlic powder, onion powder, salt, Italian seasoning, paprika and black pepper. In a separate shallow dish, whisk together the eggs, buttermilk and hot sauce. Dredge each piece of chicken in the flour mixture, then into the egg, shake off excess, and then back into the flour mixture.
  • Heat the canola oil in a cast-iron skillet over medium-high heat. Brown the chicken in the hot oil until golden and crispy, 3 to 4 minutes per side. Place the cooked chicken onto a rack on a sheet tray and keep warm while you finish cooking the rest of the chicken. Place the chicken into a warm oven to keep warm and crisp while you prepare the sliders.
  • Spread the prepared mayonnaise on the bottom waffle and top with a couple of pieces of fried chicken to create a slider. Top with a pile of slaw. Finish with the second waffle piece and hold together with a bamboo skewer. Repeat for the remaining waffles and chicken. Cut into quarters and serve.

SPICY CHICKEN NOODLES

I think this spicy chicken noodles dish is perfect for using up leftover chicken, assuming it wasn't horribly overcooked in the first place. Steps:

  • Place carrots, cabbage, bell pepper, jalapeno pepper, green onions, and garlic in a mixing bowl.

Cook and stir until vegetables are hot and steamy, 1 or 2 minutes. Pour in sauce; cook and stir over high heat until sauce starts to bubble, about 1 minute. Add noodles and chicken. Steps:

  • Preheat oven to 350°. Spray baking pan with cooking spray. Mix pepper sauce and water in a recloseable plastic bag.
  • Mix all dry ingredients in a large recloseable plastic bag.
  • Put chicken in bag with hot pepper sauce and toss to coat.

4 thin-cut chicken breasts (chicken cutlets)
Kosher salt and freshly ground black pepper
1 cup all-purpose flour
1 teaspoon cayenne pepper
1 large egg, lightly beaten
1/4 cup buttermilk
1 tablespoon plus 1 cup Louisiana-style hot sauce
1 cup panko breadcrumbs
6 tablespoons salted butter, melted
1/4 cup olive oil
4 toasted buns
1/2 cup pickle chips, drained

Steps:

  • Sprinkle the chicken breast with salt and pepper and set aside. Mix the flour and cayenne in a shallow dish or bowl. Stir together the egg, buttermilk and 1 tablespoon hot sauce in a second shallow dish or bowl. Add the breadcrumbs to a third shallow dish. Coat each chicken breast by dredging in the flour mix, then dipping in the egg/buttermilk mixture and then finally in the breadcrumbs. Set aside.
  • To a bowl, add the remaining cup of Louisiana hot sauce and 2 tablespoons of the melted butter. Mix together and set aside.
  • Heat the olive oil and remaining 4 tablespoons butter in a large skillet over a medium heat. 1 medium onion, chopped
1 tablespoon chopped garlic
2 pounds bone-in, skin-on chicken thighs, about 8
1 sprig fresh thyme
1 sprig fresh rosemary
Kosher salt and freshly ground black pepper
1/2 cup water
2 teaspoons sugar
1 tablespoon apple cider vinegar
1/2 teaspoon red pepper flakes
1 head green cabbage
1/2 cup mayonnaise
1/2 cup barbecue sauce
1 tablespoon spicy brown mustard
1 tablespoon hot sauce
1 dozen small dinner rolls, sliced

Steps:

  • Add canola oil to a heavy bottomed pot with a tight fitting lid and put it over medium heat. Add the onion and garlic and saute until softened, about 4 minutes. Add the chicken thighs, skin side up, fitting them in tightly. Add the thyme and rosemary sprigs, season with salt and pepper, to taste, and pour in 1/2 cup water. When it comes to a boil, lower the heat, cover and simmer for 1 hour. Remove the chicken from the pot and let it cool. When it is cool, shred the meat, discarding the skin and bones. (Reserve the meat from 2 thighs for Round 2 Recipe Chicken Tacos with Cucumber Salsa.)
  • In a large bowl combine the sugar, vinegar, red pepper flakes and mix together. Shred half of the cabbage and add it to the bowl, then season with salt and pepper, to taste. (Reserve the remaining cabbage half for the Round 2 Recipe Chicken Tacos with Cucumber Salsa.) Toss to coat all of the cabbage, then cover and refrigerate until ready to use.
  • In a large bowl, whisk together the mayonnaise, barbecue sauce, mustard, and hot sauce. Taste and adjust the seasoning with salt and pepper, to taste. Add the shredded chicken and toss to coat.
  • Divide the shredded chicken evenly among each roll bottom. Top with some of the cabbage, cover with the roll top, and insert a toothpick to hold it all together. Arrange on a serving platter and serve.

2 tablespoons olive oil
1 large onion, thinly sliced (about 3 cups)
2 chipotle peppers in adobo, finely chopped
2 cloves garlic, minced
Kosher salt and freshly ground black pepper
1 1/2 pounds ground beef
4 ounces pepper jack cheese, cut into 12 equal pieces
1/4 cup ketchup
1 tablespoon balsamic vinegar
12 slider-size potato buns, split and toasted

Steps:

  • Heat the oil in a large skillet over medium heat and add the onions, spreading them into an even layer. Cook, without stirring, until the edges of the onions are beginning to brown, 5 minutes. Stir the onions and continue to cook, stirring occasionally, until browned and caramelized, another 20 minutes. Add the chipotles, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook until fragrant and well combined, 1 to 2 minutes, and remove from the heat.
  • Preheat the oven broiler. Divide the meat into 12 portions, about 2 ounces each. Form a patty around each piece of cheese and flatten to 2 1/2 to 3 inches in diameter. Put the wrapped patties on a foil-lined baking sheet and sprinkle all the patties with 3/4 teaspoon salt.
  • Broil until the cheese is melted and the burgers are still a bit pink inside, about 6 minutes. The burgers will be cooked to at least medium in order to melt the cheese but still stay juicy.
  • Mix the ketchup, balsamic and 1/4 teaspoon pepper in a small bowl. Brush the burgers with some of the ketchup sauce and divide the rest among the bottom halves of the buns. Place a burger on each bottom bun, top with some of the spicy onions and finish with a top bun. Serve warm.

I saw this recipe on one of Sandra Lee's shows and I had to try it. I have made some modifications to her recipe. My husband absolutely loves this, and I have made it for dinner using hamburger buns instead of the smaller "slider" rolls. Make this for any group of people and I guarantee it will be a hit - just make sure to have plenty of napkins on hand since eating these can get a little messy! On a side note - if you don't have time to make the chicken, a store-bought rotisserie one works fine in a pinch!

1 medium onion, chopped

1 tablespoon buffalo hot sauce (I use Frank's)
1 dozen small hawaiian roll, sliced

Steps:

  • In a large bowl combine the sugar, vinegar, red pepper flakes and mix together. Shred the half head of cabbage and add it to the bowl, then season with salt and pepper, to taste. Toss to coat all of the cabbage, then cover and refrigerate until ready to use (1 - 2 hours is best for the cabbage to absorb the vinaigrette).
  • Using a heavy-bottomed pot with a tight-fitting lid (tight lid ensures moist chicken), saute the onion and garlic in the canola oil over medium heat until softened, about 4 minutes. Add the chicken thighs, skin side up, fitting them in tightly. Add the thyme and rosemary sprigs, season with salt and pepper, to taste, and pour in 1/2 cup water. When it comes to a boil, lower the heat, cover and simmer for 1 hour. Remove the chicken from the pot and shred the meat when cool enough to handle, discarding the skin and bones.
  • In a large bowl, mix together the miracle whip (or mayo), barbecue sauce, mustard, and buffalo wing sauce. Taste and adjust the seasoning with salt and pepper, to taste. Add the shredded chicken and toss to coat.

1 cup flour
3 eggs, whisked
2 ½ cups panko bread crumbs

3 tablespoons lime juice

Steps:

  • Chicken: Sprinkle chicken generously with salt. Place flour in a medium-size shallow bowl. Place eggs in a second bowl, and panko in a third bowl. Add 1 teaspoon of salt to each bowl and stir to combine. Dredge each chicken piece in the flour, shaking off the excess. Move the chicken to the egg and dip to coat, then coat with an even layer of panko.
  • In a large skillet, heat ½ inch (1 ¼ cm) of vegetable oil to 350ºF. Place a few chicken pieces in oil, not crowding the pan, and cook for 3-4 minutes, until golden brown. Flip and cook for another 3-4 minutes on the second side or until internal temperature reaches 165ºF. Remove chicken from pan and drain on paper towels. Repeat with the rest of the chicken.
  • Slaw: Combine cabbage and carrots in a medium bowl. In a small bowl, whisk together Frank's Red Hot Sweet Chili Sauce, lime juice, vegetable oil, and salt to make dressing. Pour dressing over vegetables and toss to combine.

These spicy sliders are perfect in the summer when you are tired of the usual grilling fare! Serve with lettuce, tomato, and spicy ranch dressing.

1 pound ground chicken
1 pound ground pork
2 tablespoons chopped jalapeno peppers
2 tablespoons chopped fresh cilantro
1 tablespoon chopped garlic
1 tablespoon soy sauce
2 tablespoons olive oil, or as needed
salt and ground black pepper to taste
12 slider-sized burger buns
½ cup ranch dressing
¼ cup mayonnaise
2 tablespoons spicy salsa

Steps:

  • Combine chicken, pork, jalapeno peppers, cilantro, garlic, and soy sauce in a bowl. Mix well and form into 12 small patties. Place on a platter and brush with olive oil. Sprinkle with salt and pepper.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Place patties on the grill and cook, covered, until browned, 3 to 4 minutes per side. Do not press down. Place patties inside slider buns.
  • Mix ranch dressing, mayonnaise, and salsa together to make spicy ranch dressing. Serve alongside sliders.

Easy, spicy, crispy oven-fried chicken sliders are everything that you want from a fried chicken sandwich but without all the mess from the fryer and great for a party. Inspired by the movie "Lady Bird."

1 1/4 cups mayonnaise
3 tablespoons hot sauce (Frank's)
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon sweet paprika
1/3 cup pickled jalapeno pepper, finely chopped
6 boneless skinless chicken thighs
1 large egg, beaten to blend
1 tablespoon honey
kosher salt
1/2 cup extra virgin olive oil
2 1/2 cups panko breadcrumbs (Japanese bread crumbs)
12 potato rolls (preferably Martin's, buttered and toasted)
1/4 head iceberg lettuce, thinly sliced
sliced bread and butter pickles, and french fries (for serving)

Steps:

  • Whisk mayonnaise, hot sauce, onion, garlic, paprika, and jalapeños together in a medium bowl; set aside until ready to use.
  • Place a rack in middle of oven; preheat to 450°. Cut each chicken thigh in half crosswise; you should have 12 equal pieces. Whisk egg, honey and 1/4 cup spicy mayonnaise and 1 1/2 teaspoons salt, in a large bowl until completely combined. Reserve remaining spicy mayonnaise for the rolls. Toss chicken in the egg mixture until all pieces are coated and let sit uncovered at room temperature while you toast the bread crumbs.
  • Meanwhile, heat oil in a large skillet over medium-high heat. As soon as you see small wisps of smoke from the oil, add panko and 1/4 teaspoons salt and toss to coat. Cook, tossing often, until golden brown, 6-8 minutes. Let cool in pan 10 minutes.
  • Place a wire rack inside a rimmed baking sheet. Lift chicken from bowl, letting excess egg mixture drip back into bowl. Coat in toasted panko, pressing to adhere, then transfer to rack, spacing evenly apart. Repeat with remaining chicken and panko.
  • Bake chicken until cooked through, juices run clear when thighs are pierced with a knife, and panko mixture is slightly darkened in color, 15-20 minutes. Let chicken cool 10 minutes.
  • Liberally spread remaining seasoned mayonnaise over cut/toasted sides of buns. Build sandwiches with pickles, fried chicken, shredded lettuce, and more hot sauce, if desired.
  • Do ahead: spicy mayonnaise can be made 3 days ahead, cover and chill.
