CHEESY POTATOES
These Cheesy Potatoes are absolutely drowning in cheese sauce! They go great paired with pork, chicken, or steak. Pure comfort food!

Steps:
- Place potatoes in a medium saucepan and cover with water. Add about a teaspoon of salt. Bring to a boil and simmer until just tender, but still a little firm.
- Drain potatoes and place in a greased 2-quart baking dish.
- Melt butter over medium heat in a medium saucepan. Sprinkle flour into pan. Stir and cook 1 minute.
- Gradually whisk in the milk. Bring to a boil and simmer until thickened.
- Stir in seasoned salt, pepper, and garlic powder.
- Remove from heat. Add Velveeta and stir until melted. Pour sauce over potatoes.
- Sprinkle cheddar cheese on top. Bake in a 350 degrees for 25 minutes.
EASY SPICY ROASTED POTATOES
Slight twist to an old favorite. Chili powder gives the potatoes and onions in this recipe some zing! I make these for breakfast every Sunday, and my family loves them!

- Preheat the oven to 450 degrees F (220 degrees C).
- Arrange the potatoes and onions in a greased 9x13 inch baking dish so that they are evenly distributed. Season with garlic powder, salt and chili powder. Drizzle with olive oil. Stir to coat potatoes and onions with oil and spices.
- Bake for 35 to 40 minutes in the preheated oven, until potatoes are fork tender and slightly crispy. Stir every 10 minutes. When done, sprinkle with cheese. Wait about 5 minutes for the cheese to melt before serving.

- Cover the potatoes in cold salted water, then bring to the boil. Simmer for 5 mins, until just tender. Drain and allow to steam dry for a few mins. Heat the oil in a frying pan and fry the spices for 1 min until fragrant. Tip in the potatoes and toss well so they are coated in the spices. Gently fry for 5-10 mins until slightly golden, then add peas, mix well and cook for 3-4 mins more. Season well before serving.

- Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and spread on a baking sheet.

- Preheat oven to 350 degrees.
- Mix together; melted butter, seasoned salt, minced garlic, cayenne pepper and black pepper. Set aside.
- Prepare potatoes and onions.
- Mix potatoes and onions together in large bowl and add butter mixture.
- Stir to coat well.
- Spray a square casserole dish with non stick cooking spray.
- Spread 1/2 of the potato onion mixture on bottom of dish.
- Place 1/2 of the cheese slices on top of potatoes.
- Repeat layers.
- Sprinkle bread crumbs on top to cover.
- Bake, uncovered for 1 hour at 350 degrees.
SPICY CHEESE NEW POTATOES
We have a LOT of new potatoes from our allotment when they're in season and, once the novelty wears off, boiled potatoes and butter can get a little tiresome, so I like to mess around with ideas to liven them up a bit. This is one of them. Please note that measurements are approximate as I eyeballed the amounts, so you may want to focus on the concept rather than the figures!

- Pre-heat oven to 200c.
- Slice new potatoes to about 0.5cm thick and par-boil for approximately 5-10mins until mostly cooked.
- Spread potatoes out in an oven proof dish and dot the butter about evenly over the top.
- Season with salt and pepper and cover with cheese (you can grate it or just put it on sliced - it works either way).
- Bake in the oven for approximately 10mins or until potatoes are cooked and cheese has fully melted.

- Preheat the oven to 400 degrees F (200 degrees C).
- Bake the potatoes for 1 hour. Remove the potatoes from the oven, but keep the oven on. Slice the potatoes in half lengthwise, and let them cool for 10 mins. Scoop out most of the potato flesh, leaving about 1/4 inch of flesh against the potato skin (you can save the potato flesh for another use, like mashed potatoes)
- Cut each potato half crosswise into 3 pieces. Place the olive oil in a small cup. Dip each potato piece into the olive oil and place it on a baking sheet. Repeat this with the remaining potato pieces
- Combine the salt and the spices and sprinkle the mixture over the potatoes. Bake the potato skins for 15 minutes or until they are crispy and brown. Serve them immediately.

- Preheat the oven to 350 degrees.
- Butter a 13x9x2-inch glass baking dish.
- Cook chopped bacon in heavy skillet over medium heat until brown and crisp.

- For the potatoes, preheat the oven to 220C/425F/Gas 7.
- Cut the potatoes into 2-3cm/1in squared cubes. Bring a pan of salted water to the boil and blanch the potatoes for 2-3 minutes to begin cooking. Drain well.
