Cooked cauliflower is puréed and combined with cheese, spinach, garlic and jalapeño in this tasty and different dip. Serve with pita chips or toasted baguette.

Number Of Ingredients 8

Florets from 1/2 head cauliflower (about 2 1/2 cups), steamed until very soft and cooled
4 ounces Neufchâtel cheese
1/4 cup mayonnaise
1 jalapeño pepper, seeded and finely chopped
2 cloves garlic, chopped
3/4 teaspoon fine sea salt
12 ounces (about 3 1/2 cups) shredded Cheddar and Monterey Jack cheeses
3 lightly packed cups (about 5 ounces) baby spinach leaves

Steps:

  • Preheat the oven to 375°F.
  • Pulse cauliflower in a food processor until very smooth.
  • Add Neufchâtel, mayonnaise, jalapeño, garlic, salt and all but 1/2 cup of the cheese shreds and pulse until very smooth.
  • Add spinach and pulse until chopped.
  • Scrape into a 1-quart ovenproof baking dish or casserole, sprinkle with remaining cheese and bake until hot and bubbling, about 35 minutes.

The most negotiable part of Buffalo wings, it turns out, are the wings. Buffalo crudités can be just as crisp, Buffalo chicken dip just as tangy, and Buffalo cauliflower dip just as spicy and alluring. The whole dip - from caramelizing cauliflower to stirring together the creamy hot sauce base and baking on the generous layer of cheese - is made in one pan. You can bring the pan right to the table with dippers of choice and watch it disappear. Just because classic dishes are made a certain way - and Buffalo wings have a cult following, no doubt! - don't be afraid to riff on them once in awhile. That's how new classics are made.

Number Of Ingredients 11

1 small head cauliflower (about 1 1/2 pounds), cored and cut into small florets (about 4 cups)
1 tablespoon olive oil
Kosher salt and black pepper
2 tablespoons unsalted butter
1/2 cup Buffalo-style hot sauce, such as Frank's
4 ounces cream cheese, cut into pieces and softened (about 1/2 cup)
1/4 cup sour cream
1/2 cup freshly shredded Cheddar (about 2 ounces)
1/4 cup crumbled blue cheese (about 1 ounce)
1 1/2 teaspoons finely chopped chives or scallions, or to taste
Celery sticks, carrot sticks, bread, potato chips or tortilla chips, for serving

Steps:

  • Heat oven to 375 degrees. In a 9-inch cast-iron or ovenproof skillet, toss the cauliflower with the olive oil and season with salt and pepper. Cover with a lid or aluminum foil and cook on the stovetop over high to steam, 5 minutes.
  • Uncover the skillet and cook, stirring occasionally, until the cauliflower is fork-tender and caramelized in spots, about 10 minutes.
  • Stir in the butter. Once melted, stir in the hot sauce and simmer until the sauce has reduced by half, about 3 minutes.
  • Turn off the heat, then stir in the cream cheese and sour cream until combined. Sprinkle the Cheddar on top.
  • Bake until bubbling around the edges and the cheese has melted, about 10 minutes. If you'd like the top to get browned, run it under the broiler for 1 to 2 minutes.
  • Immediately sprinkle with blue cheese and chives. Serve with vegetables, bread or chips for dipping.

Yogurt can be substituted for the mayonnaise to cut down on the fat and calories. Preparation time listed includes chopping and steaming the cauliflower.

2 cups vegetable oil for frying
1 head cauliflower
2 eggs
2 tablespoons milk
1 1/2 cups Original Bisquick™ mix
1/3 cup cornstarch
2 teaspoons paprika
1 teaspoon chili powder
1/2 teaspoon ground red pepper (cayenne)
3/4 teaspoon salt
1 cup reduced-fat sour cream
1 packet cheese powder (from box of white Cheddar macaroni and cheese dinner)
1 package (1 oz) ranch dressing and seasoning mix (milk recipe)

Steps:

  • In 10-inch skillet, heat oil over medium heat.
  • Cut cauliflower into florets; discard stems
  • In medium bowl, beat eggs and milk with whisk. In large bowl, stir together Bisquick mix, cornstarch, paprika, chili powder, ground red pepper and salt.
  • Dip cauliflower florets into egg, then into Bisquick mixture; dip again into egg and coat with Bisquick mixture. Place in hot oil; fry until golden brown. Transfer fried cauliflower to clean plate lined with napkins or paper towels.
  • In small bowl, beat sour cream, cheese powder and dressing mix with whisk until well blended.
  • Serve cauliflower immediately with sour cream dip. Enjoy!
