Steps:
- Preheat the oven to 200 degrees F.
- Toss the chicken wings in a bowl along with a sprinkling of salt, half of the lemon juice and 1/4 cup olive oil. Transfer wings to a baking sheet and roast until the fat has begun to render and the skin starts to get crispy, 25 to 30 minutes.
- Very carefully slice the carrots on a mandoline, then drop the slices into a bowl of ice water until ready to serve. Before serving, drain the carrots and add them to a serving dish. Drizzle with olive oil and season with salt.
- Add the carrot juice, habanero, honey, white wine vinegar and the remaining lemon juice to a saucepan over medium-high heat. Bring to a boil and cook until reduced by half, 20 minutes. Finish the sauce with the butter, stirring until completely melted and fully integrated. Taste and adjust the seasoning as needed. Keep warm.
- Add 4 inches of oil to a large Dutch oven and heat to 375 degrees F. Remove the chicken wings from the oven and, in batches, fry them in the oil until the skin is crispy, 4 to 5 minutes. Remove each batch of fried wings to a large bowl, add some of the reduced carrot sauce and toss to coat. Serve the wings on a platter, garnished with the blue cheese. Serve with the dressed carrots.

Different layers of flavors create a buffalo wing sauce with a nice bite! Not too hot and not too mild. Serve with ranch or blue cheese dressing.

- Toss chicken wings in a large bowl with apple cider vinegar, garlic salt, paprika, red pepper flakes, onion salt, and black pepper to coat; cover bowl with plastic wrap.
- Marinate chicken in refrigerator 1 to 4 hours.
- Scatter flour over the chicken wings; toss to coat. Discard any remaining marinade.
- Preheat oven to 425 degrees F (220 degrees C).
- Heat shortening in a large skillet over medium-high heat; fry chicken in hot shortening until golden, 5 to 7 minutes per side.
- Arrange fried chicken pieces onto a baking sheet.
- Bake chicken in preheated oven until no longer pink at the bone and the juices run clear, about 20 minutes; remove chicken to a platter lined with paper towels to drain.
- Melt butter in a large skillet over medium heat. Cook garlic in melted butter until translucent, about 2 minutes.
- Stir hot sauce into the butter and garlic mixture; reduce heat to low and simmer sauce 5 minutes. Transfer sauce to a large bowl.
- Move drained chicken in batches to the bowl with the sauce and turn to coat. Drizzle any remaining sauce over wings to serve.

- In deep chicken fryer or large deep skillet, cover bottom of pan with vegetable oil and heat over medium heat til oil is hot.
- Add wings and drummettes, place on tight fitting lid, and turn down heat to medium-low.
- Cook about 20-25 minutes til chicken pieces are done, turning several times.
- *Cooking them with a lid on keeps them moist and tender.
- While chicken is cooking, melt butter in medium-sized frying pan.
- Stir in hot sauce, bbq sauce, chili powder, pepper and garlic powder.
- Cook on low about 5 minutes.
- When chicken is done, add pieces to sauce and toss.
- Serve now, or bake in 375 oven for 3-5 minutes if desired.
- Serve with celery ribs, and bleu cheese dressing topped with crumbled cheese for dipping.

Steps:
- In a bowl mix Frank's Hot Sauce, 1 tablespoon olive oil, 1 tablespoon garlic powder, 1 teaspoon onion powder, 1/2 cup honey, and paprika.
- Preheat oven to 350 degrees.
- Make sure chicken is completely thawed, and place on enough foil to completely seal around chicken , making sure it is placed in a single layer.
- Pour 2 tablespoons olive oil, 1 tablespoon garlic powder, and 1 tablespoon onion powder over chicken.
- Pack the foil around the chicken and place in preheated oven for 50 minutes.
- Remove chicken from oven and dip each piece in the bowl of sauce, placing on broiler rack pan. Make sure all chicken is in single layer.
- Turn oven to broil.
- Place chicken in oven for 10 minutes or until browned. Watch carefully. Remove from oven, turn and return to oven for this side to brown.
- When browned, place chicken on serving platter along with carrot and celery sticks. Have blue cheese dressing and ranch dressing for dipping.
