SPICY OVEN BAKED CHICKEN WINGS
Steps:
- Preheat Oven for 400F
- Pat chicken wings down to dry. Place chicken wings in a large bowl
- Add 2 tbsp olive oil, 1 tbsp cayenne pepper, 1 tbsp garlic powder, 2 tsp salt, 1 tsp black pepper and 1/2 cup Frank's Buffalo Wing Sauce. Mix well until all wings are evenly coated.
- Spread the chicken wings out evenly on the baking sheet and bake for 30 minutes. Flip each chicken wing and then bake for another 15 - 30 minutes or until desired crispness is achieved.
- Remove from oven and serve immediately.

CLASSIC HOT WINGS

- Preheat the oven to 325 degrees F. Heat 3 inches of canola oil in a heavy pot to 375 degrees F.
- Add half the chicken wing parts to the oil and fry them until they're golden brown and fully cooked, 5 to 7 minutes. Remove and drain on paper towels. Repeat with the other half of the wing parts. In a saucepan, heat the cayenne sauce and butter over medium-low heat. Add the Worcestershire and hot sauce. Let it bubble up, and then turn off the heat. Place the wings in an ovenproof dish and pour the hot sauce over the top. Toss to coat, and then bake in the oven for 15 minutes.
- Serve with blue cheese dip, celery sticks... and your favorite cold, fizzy beverage.
SPICY HERB BAKED WINGS

- Prep the rub: Pour about an inch of olive oil into a small pan over medium heat. When the oil begins to shimmer, add the rosemary and cook, turning the sprigs, until the leaves darken and become crispy, about 2 minutes. Transfer to a paper towel-lined plate. Add the sage to the same pan and cook until the leaves darken, slightly curl and stop sizzling, 30 seconds to 1 minute. Transfer to a paper towel-lined plate.
- In a dry medium pan over low heat, combine the cumin, red pepper flakes, peppercorns and garlic powder. Toast the spices, tossing constantly to avoid burning, until fragrant, about 5 minutes. Remove from the heat and allow to cool completely.
- Remove the rosemary leaves from their stems, then put the herbs and spices in a spice grinder and pulse until finely chopped and combined. Remove and add 1 tablespoon salt.
- Prep the wings: Massage the wings with the herb rub and place them on a wire rack set inside a baking sheet. Let the rub set at room temperature, about 30 minutes. While the wings rest, preheat the oven to 400˚.
- Bake the wings: Transfer the baking sheet with the rack and wings to the oven and bake until the wings are crispy, flipping halfway through, 40 to 50 minutes. Serve warm.

- Cut chicken wings into three sections discard wing tips. Place wings in a greased 15x10x1-in. baking pan. Combine the butter, hot pepper sauce, garlic salt and paprika; pour over wings. Bake at 375° for 30 minutes. Turn; bake 20-25 minutes longer or until chicken juices run clear., Meanwhile, for sauce, combine the sour cream, onion, milk, cheese, garlic salt and mustard in a blender. - Soak the wings in buttermilk, 4 hours or up to overnight.
- Pre-heat oven to 385 degrees.
- Drain wings in colander.
- Mix all dry ingredients (except chili flakes).
- dredge wings in coating mixture and place on greased tray or baking sheet.
- spray wings lightly with non stick spray to help them crisp and "fry" in the oven.
- Bake wings about 35-40 minutes until crisp and lightly browned.
- While wings bake, put honey and chilis in a saucepan over low heat. The honey will get thin very quickly and once it does you can turn off the heat.
- When wings come out of the oven, place wings in large bowl or plate and drizzle spicy honey mixture all over the wings!
- Dig in and enjoy!

- In a bowl combine all of the dry ingredients and set aside until needed.
- Cut off the wings tips and halves the wing and drum. Place the wings and drum into a large mixing bowl and coat with the oil. Mix well and add all of the seasoning and blend into the chicken wings. Let the mixture set in refrigerate overnight.

BAKED HOT WINGS.
I was looking to find a recipe that was not overpoweringly spicy, somewhat healthy and less messy than wings doused in sauce. This is what I came up with. Once cooked, the wings can be put in a crock pot and they get more tender and flavorful the longer they are in there, but they start to fall off the bone and are messier.

Steps:
- Remove the excess skin from the wings.
- Bake at 350 for 25 minutes, or until fully cooked, on a rack to allow the grease to drip off.
- Cool completely.
- Combine all the other ingredients.
- Completely cover the wings or toss in the sauce.
- Marinate in the sauce at least 2 hours (preferably overnight).
- Bake at 350 for 15 minutes on a rack.
- Wings can be coated again in the sauce or served as they are.
