CRISPY SPICY FRENCH FRIES
I found the recipe on the internet. It's amazing. I have also used frozen french fries instead of fresh potatoes and it came out great.

Steps:
- Slice potatoes into French fries, and place into cold water so they won't turn brown while you prepare the oil.
- Heat oil in a large skillet over medium-high heat.
- While the oil is heating, sift the flour and spices into a large bowl.
- Gradually stir in enough water so that the mixture can be drizzled from a spoon.
- Dip potato slices into the batter one at a time, and place in the hot oil so they are not touching at first.
- The fries must be placed into the skillet one at a time, or they will clump together.
- Fry until golden brown and crispy.
- Remove and drain on paper towels.
TOTALLY TANGY BAKED FRENCH FRIES
Southwestern flavors blend with spicy mustard for a zippy alternative to deep-fried fries. Feel free to increase the cayenne, red pepper, and chili powder if you like them spicier. You won't want to let the ketchup bottle near the table!

- Preheat an oven to 375 degrees F (190 degrees C). Grease a large baking sheet.
- Fill a large bowl with cold water, add the potatoes, and allow to soak for 10 minutes.
- Whisk together the oil, vegetable juice cocktail, chili powder, ground cumin, onion granules, garlic powder, cayenne pepper, sugar, and salt in a large bowl. Drain the potatoes, and pat dry with paper towels. Toss the potatoes with the oil and spice mixture; stir until evenly coated. Arrange fries in a single layer on the prepared baking sheet.

- Wash the potatoes, then cut them lengthwise into 1/2" thick slices. Then cut each slice lengthwise into 1/4" sticks. Fill a large bowl with cold water and soak the potato slices for about 1 hour. Drain the potatoes and pat them dry with paper towels.
- Preheat oven to 425ºF. In a large bowl, toss the potatoes with canola oil to coat. Mix the cornstarch, smoked paprika, salt, black pepper, cumin, and garlic powder in a small bowl, and add to the potatoes. Toss until potatoes are evenly coated in the seasoning mixture.
- Place potatoes in a single layer on 2 parchment-lined baking sheets and bake for 40 minutes, flipping the potatoes halfway through. Check the potatoes and continue baking another 5-10 minutes until desired crispness is reached. Serve with your favorite dipping sauce.

- Position racks in the upper and lower thirds of the oven and preheat to 450 degrees F. Line 2 rimmed baking sheets with foil, then divide the fries between them. Bake, tossing once or twice, until crisp and golden brown, 30 to 45 minutes. Transfer to a large bowl.
- Place the chiles in a bowl, cover with a plate and shake to release the seeds. Fish out the chiles, leaving the seeds behind.
- Heat the vegetable oil in a large skillet over medium heat. Add the cumin seeds, peppercorns, chopped chiles and 1 teaspoon salt and cook, stirring, until toasted, 2 to 3 minutes. Stir in the scallions and remove from the heat.
- Toss the fries with the spiced oil and season with salt. Remove and discard any large chile pieces.

- Preheat oven to 425 degrees. Prepare a large baking sheet with a wired rack and spray with olive oil cooking spray.
- In a large bowl, add the cut matchstick potatoes and cover with cold water. Soak the potatoes for at least 10 minutes and up to 30 minutes to absorb the starch from the matchstick potatoes.
- While the potatoes soak, in a large plastic zipper seal bag, place the Cheez-It Grooves Hot & Spicy crackers. Lay the plastic bag on the counter. Use a rolling pin to crush the crackers into a fine crumble.
- Transfer the crumbled Cheez-It Groove crackers to a shallow bowl, add the Panko bread crumbs, Parmesan Cheese, and dried parsley. Combine the flavors.
- In a separate bowl, add the egg whites.
- Drain and dry the potatoes on a paper towel.
- Coat the matchstick potatoes in the egg whites and then into the Cheez-It Grooves crumble. Place crumble coated potatoes onto the prepared baking rack. Continue until all the matchstick potatoes are coated with the Cheez-It crumble. Spray the matchstick potatoes with the olive oil cooking spray.
- Place the baking sheet into heated oven. Check the French fries after 20 minutes. They should be crispy and should not need more than 30 minutes in oven, depending how thick you cut your matchsticks.
- Serve immediately. Delicious with low-fat ranch dressing
