AVOCADO DEVILED EGGS
This is a twist on the traditional deviled egg. I usually use 1 or 2 fewer yolks for the filling.

Steps:
- Scoop egg yolks into a bowl; add avocado, 2/3 of chopped turkey bacon, mayonnaise, lime juice, garlic, cayenne pepper, and salt. Mash egg yolk mixture until filling is evenly combined.
- Spoon filling into a piping bag or plastic bag with a snipped corner. Pipe filling into each egg white; top with a turkey bacon piece, jalapeno slice, and dash hot sauce.

SOFT SCRAMBLED EGGS WITH AVOCADO
Steps:
- Crack the eggs into a bowl. Add the cream and whisk until the eggs look foamy and light. Heat a 10-inch non-stick skillet over medium heat. Melt the butter until it foams, then turn the heat down to low and slowly pour in the eggs. Using a heat resistant rubber spatula, slowly stir the eggs from the outside of the pan to the center. Once the eggs begin to set, stirring slowly will create large, cloud-like curds. This sounds easy but perfect scrambled eggs that are soft and custard-like with no brown color are a sign of a really good cook. This process takes about 10 minutes. Season the eggs with a few cranks of black pepper and good salt, like fleur de sel. Serve with a few slices of avocado and a little chopped fresh chive.

- In a pot of boiling water add eggs. Simmer for 10 minutes and then transfer to an ice water bath to cool completely.
- Peel and cut eggs in half lengthwise. Scoop out the cooked yolk and process in the food processor with the avocado, lemon juice, jalapeño, cilantro, garlic powder, salt, pepper and water.
- Fill the whites with the deviled egg mixture. Finish with chopped chives, paprika and salt.

- Fill a large saucepan with water, add the vinegar and bring to a hard boil over a high heat. Once boiling, reduce the heat so the water is simmering, then use a spoon to swirl the water into a whirlpool. Crack in both eggs and cook for 2 1/2 mins.
- Meanwhile, in a small bowl, mash the avocado, feta, chilli flakes and lemon juice, and season well with black pepper. Toast the bread.
- Pile the avocado and feta on the toast, then put a poached egg on top of each.

Steps:
- Start by preheating the oven to 400°F.
- Cut the avocados in half and scoop out a bit of the flesh from the center (think about digging a little whole in the middle of the avocado without piercing through to the other side) and save the rest for a later salad.
- Add a small layer of harissa in the whole.
- Crack the egg into the whole - try to get the yolk in the whole while the white part spills over the pan and around the avocado.
- Add a pinch of salt and let this bake for 10 to 15 minutes.
- Once it bakes off, take it out from the oven and add on all your toppings with a squeeze of lime juice. Enjoy!

AVOCADO ANGEL EGGS
A great little appetizer from the California Avocado Commision. You may leave out the egg yolks or add them in!

- Slice each egg in half lengthwise removing egg yolks.
- Use egg yolks in another recipe. (Or, for a different twist, coarsely chop the yolks and add in with avocado).
- Cut avocado in half and remove seed. Peel avocado and cube.
- In a bowl combine the avocado, lemon juice and garlic mashing to blend. Stir in green onions and capers, if using.
- Fill each egg white with avocado mixture.
- Garnish with bell pepper. Serve. Enjoy!

SPICY AVOCADO-STUFFED EGGS

- In medium saucepan, combine eggs (in single layer) and cold water to cover. Bring to boil, turn off heat, cover pan, and let stand 18 minutes. Drain, add cold water to cover eggs, drain again, add several ice cubes to pan, and again add cold water to cover. Let stand until eggs are cold, about 3 minutes.
- Peel eggs and halve lengthwise. Carefully remove yolks and mash in large bowl with fork. Add mayonnaise, lime juice, wasabi paste, salt, and pepper and stir with fork until smooth. Fold in tomato, scallion, and chile. Fold in avocado. Spoon mixture into whites.
