7 ounces rice noodles
1 cup carrots (julienned or spiralized)
½ cup red peppers (julienned)
Fresh cilantro (for serving)
Roasted peanuts (for serving)
Lime wedges (for serving)
3 tablespoons soy sauce (or Tamari sauce)
3 tablespoons rice vinegar
2 tablespoons creamy peanut butter (smooth)
2 tablespoons toasted sesame seed oil
½ tablespoon Sriracha (or to taste)
½ tablespoon cane sugar (optional)
1 inch fresh ginger (peeled and finely chopped)
2 garlic cloves

Steps:

  • Cook rice noodles according to package instructions. Most brands of rice noodles only require the rice noodles be placed in boiling water for 5 minutes and stirred a couple times. Drain the pasta.
  • While the rice noodles cook, pour the Tamari sauce, rice vinegar, peanut butter, olive oil, Sriracha sauce, cane sugar, ginger and garlic into a small blender or food processor to make the dressing.
  • Transfer the cooked noodles to a large bowl. Then add the spiralized carrots, red peppers and cilantro to the cooked noodles.
  • Pour the dressing over the rice noodles and vegetables, and toss to combine.
  • Serve with roasted peanuts, chopped green onions, fresh cilantro and lime wedges, if desired.

1/4 cup extra-virgin olive oil
1/4 cup rice vinegar

2 tablespoons low-sodium soy sauce (gluten free if needed)
1 tablespoon Sriracha pepper sauce ( or garlic chile sauce, plus additional to taste)

1 1/2 teaspoon crushed red pepper flakes
1/2 cup agave liquid
1/3 cup soy sauce (low sodium)

1 cup shelled edamame (if frozen, thaw )
1 bunch cilantro (chopped)

½ lb. of Capellini pasta (or Soba Noodles)
1 bag of Trader Joe's Cruciferous Crunch Salad Mix
¼ Cup of Scallions, chopped
¼ Cup of Shredded Carrots
2 Tbsp. of Unsalted Peanuts

  • Heat a sauté pan over medium heat and add the chicken breast pieces and about ¼ cup of the Spicy Peanut Vinaigrette. Sauté until the chicken is cooked through, stirring often. Set aside to let cool.

6 tablespoons sesame oil
5 tablespoons honey
5 tablespoons soy sauce

3 cups fresh green beans, ends trimmed and cut in half
1 large sweet onion, thinly sliced

  • Cook the pasta in a large pot of boiling salted water until only JUST firm-tender; drain VERY well, and transfer to a large bowl.

  • Mix half of the dressing into the pasta; toss well to coat.
  • Cover the pasta and chill for 2 hours (or more).
  • In a skillet heat the remaining tablespoon of sesame oil over high heat.

  • Add in the beans and onions, red bell peppers with the chopped peanuts to the cold pasta.
  • Add a little more dressing to coat, and season with black pepper if desired.

1/2 cup Mae Ploy Sweet Chili Sauce - it's in the Asian section of your grocery store
1/4 cup heavy cream
2 tablespoons soy sauce
2 tablespoons lime juice
1 tablespoon heaping tablespoon peanut butter
2 cloves minced garlic
-------------------------Salad Ingredients-----
2 heads romaine lettuce
1/3 head green cabbage - thinly sliced
1/2 red onion - thinly sliced
1 cucumber - peeled and sliced into bite sized pieces

Steps:

  • Combine the dressing ingredients, Mae Ploy Sweet Chili sauce, heavy cream, soy sauce, lime juice, peanut butter, and minced garlic in a saucepan. Heat ingredients over medium heat, stirring until they are all well blended. Remove pan from heat and let the dressing cool down to room temp.
  • In a big salad bowl, combine, the romaine lettuce cut into bite sized pieces, green cabbage, red onion, and cucumber, toss to combine.
  • When salad dressing is room temp, pour it over the chopped salad and toss to combine.
  • Serve immediately.

1 pound linguine, broken in half
4 tablespoons oriental sesame oil
3 tablespoons honey
3 tablespoons soy sauce
3 tablespoons balsamic vinegar
1/4 teaspoon cayenne pepper
3 red bell peppers, seeded, thinly sliced
3 cups snow peas
1 large red onion, thinly sliced
3/4 cup honey-roasted peanuts, coarsely chopped
1/2 cup chopped fresh basil

Steps:

  • Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain very well. Transfer to large bowl.
  • Whisk 3 tablespoons sesame oil, honey, soy sauce, vinegar and cayenne pepper in small bowl to blend. Season with salt. Mix half of dressing into pasta. Heat remaining 1 tablespoon oil in heavy large pot over medium-high heat. Add bell peppers, peas and onion and sauté until just beginning to wilt, about 2 minutes. Add vegetables to pasta. Mix in peanuts, basil and enough dressing to coat. Serve, passing any remaining dressing separately.

1/4 Red Cabbage shredded
1 Avocado Sliced
2 Carrots julienned
2 Small cucumbers julienned
4 Spring Onions sliced into thin rounds
4 Large Broccoli florets chopped small
8 Radishes sliced thin
1 Handful chopped coriander
Garnish: Toasted sesame seeds, sliced red chillis
SPICY PEANUT DRESSING
180g Peanut butter - I used @manilife deep roast crunchy
60ml Rice vinegar
80ml Soya sauce
1 tbsp Brown sugar
1 cm Knob fresh ginger
2 Garlic cloves
1/2 Red chilli or more if you like it spicy
2-4 tbsp Water - adjust depending on your desired consistency

Steps:

  • Cook quinoa according to packet instructions, set aside
  • Blitz all dressing ingredients in a food processor until it forms a runny consistency
  • Add all salad ingredients to a bowl and mix well
  • Drizzle with the peanut dressing, garnish with toasted sesame seeds and chopped red chillis.
  • Enjoy!

6 tablespoons creamy peanut butter (do not use old-fashioned style or freshly ground)
1/4 cup low-salt chicken broth
3 tablespoons rice vinegar
3 tablespoons soy sauce
1 1/2 tablespoons sugar
1 tablespoon oriental sesame oil
1 tablespoon minced peeled fresh ginger
1/2 teaspoon cayenne pepper
8 ounces linguine
1 large orange bell pepper, cut into matchstick-size strips
1/2 cup chopped green onions
5 large lettuce leaves
1/4 cup chopped fresh cilantro
1/4 cup chopped salted peanuts

Steps:

  • Combine first 8 ingredients in small bowl; whisk to blend. Set dressing aside.
  • Cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain pasta; rinse with cold water and drain again. Transfer pasta to medium bowl. Add bell pepper and green onions. Pour dressing over; toss to coat. Season salad with salt and pepper. Line serving bowl with lettuce leaves. Transfer salad to prepared bowl.
