SPICY SWISS CHARD AND ARTICHOKE DIP

Steps:
- Preheat the oven to 375 degrees F and butter a 9-by-13-inch baking dish. Heat 1 tablespoon butter in a large sauté pan over medium heat. Add the garlic and cook until fragrant, 1 to 2 minutes. Add the bacon and cook until crispy and browned, another 5 minutes. Remove all but 1 tablespoon of the bacon fat. Add the chard and cook, stirring occasionally, until wilted, 4 to 5 minutes. Stir in the artichoke hearts, pickled jalapeños and sun-dried tomatoes; heat through, about 1 minute.
- In a medium pot, melt the remaining 3 tablespoons butter over medium-high heat. Add the flour and cook, whisking, until golden, about 2 minutes. Reduce the heat to medium and slowly whisk in the milk. Cook, whisking constantly, until thickened, about 5 minutes. Add the sauce to the chard mixture. Stir in the ricotta, cream cheese, cheddar and parmesan. Season with salt and pepper.
- Transfer to the baking dish. Sprinkle with more parmesan. Bake until golden brown and bubbling, about 20 minutes. Serve with pita chips or crackers.

An easy dip to put together in the crockpot for all occasions. This dip is enjoyed by everyone I have made it for; some even forgo dinner for this. Can be lightened up by using light and fat free ingredients.

STEAMED WHOLE ARTICHOKES WITH SPICY LEMON CAPER MAYONNAISE
This is a dish that takes you straight to a French bistro. I love it because we cook the artichokes whole and eat the whole thing! While the recipe calls for a steaming method, you can easily submerge them in a large pot of boiling, lightly salted water and cook until tender. When I was living in Paris, a glass of cheap, dry white wine with a few ice cubes and this artichoke with the spicy dipping sauce made for a classic bistro appetizer moment. Pull off the leaves, dunk in the sauce and enjoy. Scoop the fuzzy "hay" off the top of the artichoke to find the heart in the center-the best part! Don't like spicy? Simply make the sauce without the hot sauce or pepper flakes.

- Place each artichoke on its side on a flat surface. Use a serrated knife to saw off the stem at the base of the artichoke so it can sit upright on a plate without falling over once cooked.
- In a large pot, add 3 inches of water. Insert a steamer basket. Place the artichokes top-down in the basket, wedged in a single layer. Cover. Bring the water to a boil over high heat and cook until tender when pierced with the tip of a knife, 30 to 35 minutes. If the pot runs out of water while cooking, simply add more to the bottom.
- In a medium bowl, whisk together the mayonnaise, oil, capers, mustard, vinegar, hot sauce and red pepper flakes. Taste and adjust the seasoning. Garnish with the chives.
- Serve the artichokes with the dipping sauce.

- Using electric mixer, beat first 8 ingredients in large bowl to blend.
- Fold in artichokes, mozzarella, green onions and jalapeno.
- Transfer to 11x7x2-inch glass baking dish.
- Preheat oven to 400 degrees F.
- Place pita triangles in single layer on baking sheet.
- Brush with oil and sprinkle with salt.
- Bake until crisp, about 10 minutes.
- Remove from oven& keep the oven on.
- Bake dip until bubbling and brown on top, about 20 minutes.

- Use a food processor with metal blade to finely grate Parmesan cheese.
- Add the cream cheese, mixing well.
- Transfer cheese mixture to a mixing bowl.
- Chop jalapeño peppers in processor, add drained artichoke hearts and process just until coarsely chopped.
- Add artichoke/jalapeño mixture and the jalapeño sauce to cheese mixture.
- Mix well.
- If needed, add small amount of additional marinade to obtain desired consistency.
- Salt and pepper to taste.
- Refrigerate until ready to serve.
- Serve with a variety of crackers or chips.

SPICY SPINACH ARTICHOKE DIP
I got this recipe out of a flyer for Tabasco sauce years ago. Every time I make it, it's a huge hit. Ordering this at restaurants now is a major disappointment. I always add more cheese and Tabasco sauce and leave out the salt, but it's a personal choice.

Steps:
- Preheat oven to 350.
- Melt butter over medium heat in large saucepan or skillet.
- Add chopped onions and cook until tender, about 5 minutes.
- Add artichokes and spinach (thawed and drained), cream cheese, sour cream, Tabasco sauce, salt and cheeses.
- Cook until heated through.
- Pour into a ½ quart casserole dish.
- Sprinkle remaining cheese on top.
- Place in oven until cheese is melted and slightly brown.
- Remove and serve immediately with choice of chips (recommend Tostito Golds).
