APPLE SPICE MUFFINS

These moist muffins are full of chopped apples and a touch of cinnamon!

Number Of Ingredients 12

3/4 cup fat-free (skim) milk
1/4 cup canola or soybean oil
1 teaspoon vanilla
1 egg
2 cups Gold Medal™ all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 medium unpeeled apple, finely chopped (1 cup)
1 tablespoon sugar
1/4 teaspoon ground cinnamon

Steps:

  • Heat oven to 400°F. Grease bottoms only of 12 regular-size muffin cups with shortening or cooking spray, or line with paper baking cups.
  • In large bowl, beat milk, oil, vanilla and egg with fork or wire whisk until well mixed. Stir in flour, 1/2 cup sugar, the baking powder, salt and 1/2 teaspoon cinnamon all at once just until flour is moistened (batter will be lumpy). Stir in apple. Divide batter evenly among muffin cups. In small bowl, mix topping ingredients; sprinkle over batter.
  • Bake 25 to 30 minutes or until golden brown. If baked in greased pan, let stand about 5 minutes in pan, then remove from pan to cooling rack; if baked in paper baking cups, immediately remove from pan to cooling rack. Serve warm if desired.

200g self-raising flour
1 tsp baking powder
1 tsp cinnamon
50g wholemeal flour
100g golden caster sugar
2 eggs
125ml semi-skimmed milk
4 tbsp sunflower oil
2 apples , grated
100g sultana

Steps:

  • Heat oven to 180C/160C fan/gas 4. In a large bowl mix the self-raising flour, baking powder, cinnamon, wholemeal flour and golden caster sugar.
  • In another bowl, mix the eggs, semi-skimmed milk and sunflower oil. Pour the wet ingredients into the dry and mix well, then stir in the grated apples and sultanas.
  • Divide the mix between 12 muffin cases and bake for 25 mins. Cool on a wire rack, then pack in a container for lunch.

3 cups self raising flour
1 egg, lightly beaten
1/4 cup oil
3/4 cup buttermilk
1 cup spicy apple mix

Steps:

  • Mix all ingredients together until just combined.
  • Do not over mix.
  • Spoon into greased or non-stick muffin tins and bake at 190 C approximately 20 minutes.
  • SPICY APPLE MIX 1 apple, cut into small pieces 1/2 cup sultanas 1/4 tsp cinnamon 1/4 tsp mixed spice pinch nutmeg 2 Tbs brown sugar 1/4 cup water Place all ingredients in a microwave dish.
  • Cover with plastic wrap and cook on HIGH four minutes.
  • Stir and cook for another minute or until apple is soft.

Steps:

  • Heat oven to 180C/160C fan/gas 4. In a large bowl sift and mix the flour, baking powder, cinnamon/spice and caster sugar. If you have self raising flour mix then you only need 1tsp of baking powder.
  • In another bowl, mix the eggs, milk and oil. Pour the wet ingredients into the dry and mix well, then stir in the grated apples and sultanas.
  • Divide the mix between 6-8 muffin cases and bake for 25 mins. Allow to cool slightly before eating.

100ml rapeseed oil
100ml natural yogurt
50ml runny honey
2 eggs
1 tsp vanilla extract
200g self-raising flour
1 tsp bicarbonate of soda
1½ tsp ground mixed spice
1 apple , grated
1 carrot , grated
50g sultanas , raisins, chopped nuts or seeds (optional)

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line a muffin tin with nine cases (alternatively, use squares of baking parchment). Mix the oil, yogurt, honey, eggs and vanilla in a jug. In a bowl, combine the flour, bicarb, mixed spice and ¼ tsp salt. Pour the yogurt mixture into the flour mixture and add the apple and carrot, as well as any extra ingredients you're using. Mix with a spatula until well combined, then spoon the mixture into the muffin cases.
  • Bake for 20-22 mins, or until a skewer inserted into the middle of a muffin comes out clean. Leave to cool for at least 5 mins. Can be stored in a tin for three days or frozen for two months; defrost overnight before serving.
