SWEET AND SPICY SAUSAGE AND MINI RAINBOW PEPPERS

Steps:
- Add peppers, olive oil, vinegar, sugar, granulated garlic, salt and pepper to a large skillet and toss to coat. Place the skillet over medium-high heat and saute the peppers until they start to get slightly tender, 3 to 5 minutes. Nestle in the sausages amongst the peppers and lower the heat to low, then cover and gently simmer until the sausages are about 145 degrees F, 5 to 10 minutes.
- Meanwhile, preheat a grill or grill pan over medium-high heat. Remove the sausage from the skillet and grill until charred and the internal temperature reaches 165 degrees F, about 10 minutes. Place back in the skillet with the mini sweet peppers and serve.

- Cut the sausage into bite sized pieces. In a large skillet add a small amount of oil and brown the sausage in two batches. Remove the sausage from the pan with a slotted spoon and place into a chafing dish or crock pot. In a small sauce pan combine the crushed pineapple, brown sugar, and creole mustard. Bring to a boil; boil just until the sugar is dissolved. Pour over the sausage and stir to coat the sausage. Keep warm in chafing dish or crock pot for serving.
BIG OL' MESS (SMOKED SAUSAGE IN SPICY SWEET SAUCE)
This is a grilling recipe, and one that easily transfers to the campfire when camping. You can make it up ahead of time, put it into a cooler of ice and skip the mess at the campsite. A great dish from Marlboro.

- Make an aluminum foil bag. Use 2 12" x 18" sheets of heavy-duty foil (or double regular foil) and, (after the ingredients are in the bottom half), crimp the top half on.
- Put the sausage, green pepper and onions in the bottom half of the foil bag.
- Mix the Tabasco up with the sweet and sour sauce and pour it over the sausage mix. Seal the foil bag with the top half. Make sure it is "leak-proof".
- Place on the grill (gas or charcoal) and cook for a total of 45 minutes, turning after each 15 minutes.
- You can slit the bag open when done and serve from it at the campsite.
- If you are cooking this in the hot coals of a campfire, reduce the total cooking time by about 15 minutes and turn every 5 minutes.

GRILLED SAUSAGE WITH SPICY SAUCE
Steps:
- Soak 8 to 10 wooden skewers in water for about 20 minutes.
- Preheat a grill to medium and brush with the oil. Thread the sausage onto the skewers, leaving space between each piece. Grill until slightly crisp, 3 to 4 minutes per side.
- Mix the ketchup, mustard and hot sauce in a bowl. Serve with the sausage for dipping.
- Serve this dish with Tangy Corn Relish.
- Preheat a grill to medium-high. Brush the corn with 1 tablespoon olive oil and sprinkle with the cumin, and salt and pepper to taste. Grill until golden and toasted on all sides, 5 to 8 minutes, turning as needed.
- Combine the remaining 2 tablespoons oil, the sweet piquante peppers, onion, gherkins, parsley, jalapeno and sugar in a large bowl and season with salt and pepper. Slice the corn kernels off the cobs and toss with the relish. Cover and refrigerate for at least 30 minutes.
SPICY SAUSAGE DOGS

- Preheat a grill pan over medium heat.
- In a large pot over medium heat, stir together the lager, chili sauce, vinegar, brown sugar, curry powder and hot sauce. Cook until reduced by half, 3 to 5 minutes.
- While the sauce is reducing, grill the sausages on the grill pan until browned and cooked through, turning every so often, about 12 minutes. Set aside.
- Brush the onions with olive oil, season with salt and pepper and grill on the same pan you grilled the sausages. Cook until brown and golden, about 10 minutes.
- Put the grilled sausages in the pot with the sauce, then add the onions. Cook together for 1 to 2 minutes.
- Serve the sausages on crusty rolls topped with the onions and lots of sauce.

SPICY SAUSAGE PASTA
The kind that can be whipped up in thirty minutes or less from start to finish and only mess up one dish. And of course, they need to knock-my-socks-off with flavor as well! I am so in love with this spicy, creamy, cheesy pasta for all of those reasons. It is just packed with so many incredible flavors. This came from Kevin & Amanda. When I made this recipe I made minor changes to the recipe. I used vegetable oil, mozzarella flavored sausages, half & half, and cheddar cheese. Next time I plan to not use Rotel as this was a bit to spicy for my families taste.

- Add olive oil to an oven-safe skillet over medium high heat until just smoking. Add sausage and onions and cook until lightly browned, about 4 minutes. Add garlic and cook until fragrant, about 30 seconds.
- Add broth, tomatoes, cream, pasta, salt and pepper and stir. Bring to a boil, cover skillet, and reduce heat to medium-low. Simmer until pasta is tender, about 15 minutes.
