SPICED STRIP LOIN STEAK

1 tsp each peppercorns, coriander seeds, ground cumin, coarse salt 5 mL
1/2 tsp red pepper flakes 2 mL
2 Sterling Silver® Striploin Steaks (10 oz/300 g each)

Steps:

  • Preheat barbecue to medium-high. Using a mortar and pestle or small food processor, grind peppercorns, coriander, cumin, salt and red pepper flakes. Rub meat with spice blend.
  • Grill steaks for 3 to 4 min. per side, turning once, for medium rare or until instant-read thermometer registers 135°F (57°C). Remove steaks from grill and let rest for 5 min. Slice steak across the grain and divide evenly among 4 plates.
  • No BBQ? Preheat broiler to high. Rub steaks with spice blend. Preheat 1 tsp (5 mL) olive oil in an oven-safe skillet over high heat. Sear steaks for 30 sec. per side. Transfer skillet to oven on a rack 4 in. (10 cm) below broiler. Broil for 3 to 4 min. per side for medium rare, or until instant-read thermometer registers 145°F (63°C).

4 (8 ounce) beef strip steaks, 8 oz. each
2 tablespoons butter
3 medium onions, chopped
1 garlic clove, smashed and chopped
1 tablespoon parsley, chopped
1/4 cup raspberry vinegar
1/2 cup taco sauce
oil, for brushing steaks
salt
pepper

Steps:

  • Preheat grill to high.
  • Brush steaks with oil and cook 8-10 minutes depending upon taste (turning 3-4 times). Season after searing.
  • Meanwhile heat the butter in a saucepan (nice if you have a side burner).
  • Cook onions, garlic and parsley 3-4 minutes over low heat.
  • Add vinegar; cook another 3-4 minutes over medium high heat.
  • Season and stir in the taco sauce; cook 2-3 minutes on low and serve the sauce with the steak.

4 New York strip steaks, 1 1/2 to 2 inches thick (2 1/2 pounds total New York strip)
1 -2 teaspoon olive oil
2 teaspoons kosher salt
2 teaspoons black pepper, coarsely ground
1 teaspoon garlic powder
1 teaspoon sweet paprika
1/2 teaspoon cayenne pepper (hot paprika fine too)
1/2 teaspoon thyme, ground
1/2 teaspoon brown sugar
1/2 teaspoon orange peel, dried (optional)

Steps:

  • Let the steaks come to room temperature. Pat dry with paper towels. Rub both sides of each steak with the oil and set aside.
  • In a small bowl, combine the remaining ingredients with the orange peel, if desired, to create the spice rub. Sprinkle the rub on both sides of the steaks, pressing to adhere to the surface of the meat (some spice rub will be left over).
  • If using a gas grill, preheat to medium- to medium-high, depending on your grill. If using a charcoal grill, distribute the hot charcoal or wood briquettes evenly under the cooking area for direct heat. Oil the grate.
  • Grill for about 7 minutes per side, or until an instant-read thermometer registers 140 degrees for medium-rare. Let steaks rest, covered, for 5 minutes before serving.
