2 teaspoons ground coriander
2 teaspoons ground cumin

2 pounds pork tenderloin
3 tablespoons pomegranate molasses
2 tablespoons red wine vinegar
1 heaping tablespoon Dijon mustard
1 tablespoon honey (or more to taste)
Kosher salt and freshly ground black pepper
2/3 cup extra-virgin olive oil
3 cups fresh cilantro leaves
1/2 cup grated Parmigiano
1/4 cup pine nuts
3 jalapenos, blistered and chopped
2 cloves garlic, chopped
Kosher salt and freshly ground black pepper

1 cup extra-virgin olive oil
1 1/4 pounds Brussels sprouts, trimmed and halved
2 tablespoons canola oil
Kosher salt and freshly ground black pepper
3 tablespoons butter
2 tablespoons pomegranate molasses
Toasted hazelnuts, finely chopped, for garnish
Pomegranate seeds, for garnish
Fresh cilantro leaves, for garnish

Steps:

  • Preheat the oven to 375 degrees F.
  • For the pork tenderloin: To a bowl, add the paprika, brown sugar, coriander, cumin, mustard powder, chili powder, 1 tablespoon salt and 2 teaspoons pepper, and stir to combine.
  • Heat 2 tablespoons of the canola oil in a cast-iron pan over high heat until the oil begins to shimmer. Sprinkle the tenderloin on both sides with the seasoning mixture. Sprinkle with salt and pepper. Place the pork in the pan and sear on all sides until golden brown, about 8 minutes.
  • Transfer the pork to a wire rack set over a baking sheet. Put the pan into the oven and roast the pork to medium (an internal temperature of 130 degrees F), about 10 minutes. Remove from the oven, tent loosely with foil and let rest for 10 minutes before slicing into 1/2-inch-thick medallions.
  • For the pomegranate sauce: Whisk together the pomegranate molasses, vinegar, mustard and honey in a medium bowl. Season with salt and pepper. Slowly whisk in the olive oil until emulsified.
  • For the pesto: Combine the cilantro, cheese, pine nuts, jalapenoes, garlic, and some salt and pepper in a food processor and process until coarsely chopped. With the motor running, slowly add the olive oil and process until emulsified. Scrape into a bowl.
  • For the Brussels sprouts: Put the Brussels sprouts on a baking sheet , toss with the canola oil and sprinkle with salt and pepper. Roast in the oven until light golden brown and a knife inserted into the centers goes in without any resistance, 20 to 30 minutes.
  • When ready to serve, reheat the brussels sprouts in a saute pan with the butter. Then add the pomegranate molasses.
  • Plating: Place 2 pork medallions cut-side up on a plate. Top with some pomegranate sauce across the pork and a dollop of jalapeno pesto on the top of each pork medallion. Add some Brussels sprouts on the side, garnish with hazelnuts, pomegranate seeds and cilantro.

2 to 3 lb pork loin roast
PASTE
2 tsp brown sugar
2 tsp coriander, ground
1 1/2 tsp cumin, ground
1/4 tsp salt
1 tsp garlic, minced
1 tsp chili paste
1 tsp white vinegar
1 tsp olive oil, light

Steps:

  • 1. Mix all the paste ingredients with the olive oil in a small bowl to make the paste. If your roast is large, make a double batch of paste.
  • 2. Rub the paste all over the roast and put into a Ziploc bag and let rest in the refrigerator for at least a few hours.
  • 3. Oven: pure convection: 350 degrees or Oven: bake: 375 degrees Let roast come to room temperate while oven is preheating.
  • 4. Use a baking sheet (lined with foil)or a broiler pan. Line the bottom of the broiler pan with foil for a little easier cleaning.
  • 5. Remove the roast from the bag and lay in pan, fat side up. Bake: 1 - 1 1/2 hours depending on the size of the roast. Pure Convection: 1 - 1 1/2 hours depending on the size of the roast. Use a meat thermometer inserted in the middle of the roast...145 to 155 degrees for pork to be done. Check temp after an hour and adjust time if needed.
  • 6. Let the roast stand for 5 minutes, tented with foil before slicing.

2 Tbs. extra-virgin olive oil
2 cups thinly-sliced onions
Gray salt
freshly-ground pepper
1-1/2 tsp. finely-chopped fresh sage
1/2-cup water
4 lbs. pork leg or shoulder, at room temperature
About 1/4-cup Fennel Spice (recipe follows)
1 cup fennel seeds
3 Tbs. coriander
2 Tbs. white peppercorns
3 Tbs. kosher salt

Steps:

  • PORK: Heat the olive oil in a large saute pan over medium heat until hot. Add the onions and a pinch of salt and pepper. Reduce the heat to medium-low and cook for about 1 minute. Add the sage and cook until the onions stop releasing water (about 3 minutes). Add the water, cover and cook until the onions are very tender (about 10 minutes). Uncover and saute until the onions are very soft and the pan is dry again (about 2 minutes). Season well with salt and pepper.
  • Preheat the oven to 275 degrees F. Peel back the pork skin and spread the onions directly on the fat layer. Fold the skin back over the onions and tie closed with kitchen string. Season well all over with the Fennel spice. Arrange the meat on a rack in a roasting pan and cook until the meat is very tender (approx. 6-8 hours). The meat is ready when it pulls away easily if picked at with a pair of tongs. It is often easiest to cook the meat overnight or put it in the oven in the morning and let it cook all day - it doesn't need to be attended.
  • FENNEL SPICE RUB: Put the fennel seeds, coriander seeds and peppercorns in a heavy pan over medium heat. Watch carefully, tossing frequently so the seeds toast evenly. When light-brown and fragrant, pour the seeds onto a plate to cool. They must be cool before grinding or they will gum up the blades. Pour the seeds into a blender or spice grinder and add the salt. Blend to a fine powder, shaking the blender or grinder occasionally to redistribute the seeds. Store in a tightly-sealed glass jar in a cool, dry place, or freeze.

4 tablespoons celery seed
2 tablespoons very coarsely ground caraway seeds
Two 8-ounce pork tenderloins, trimmed of fat
3 tablespoons Dijon mustard
Kosher salt and freshly ground black pepper
2 large sprigs of sage
Kitchen string
1 tablespoon extra-virgin olive oil
Seared Plums

Steps:

  • Preheat the oven to 400 degrees.
  • Combine the celery seed and caraway seeds on a shallow plate and set aside. Brush the tenderloins with mustard all over. Season with salt and pepper and roll into the spice mix. Lay a sage sprig on each loin and truss every inch.
  • In an ovenproof skillet over high heat, add the olive oil. Sear the loins on one side for about 1 minute. Turn the pork and place in the oven. Roast for about 7 to 9 minutes; turn and roast for 7 to 9 minutes more. The tenderloin will be medium when the internal temperature, taken with a meat thermometer, is 145 degrees for medium, 150 degrees for medium well.
  • Remove the meat to a cutting board and let rest for 10 minutes. Cut into 1/2-inch slices. Arrange 3 slices on each plate and serve with the Seared Plums.

Steps:

  • Preheat the oven to 450 degrees F.
  • In separate bowl mix dry ingredients such as garlic powder, oregano, cumin, coriander, thyme and salt. Stir mixture with a fork until all the ingredients are well combined and they form a seasoning. This will be used as a rub to ensure the pork is well seasoned throughout. Sprinkle the rub over the tenderloin with a dry hand, then rub the pork with the seasoning over both sides of the meat, pressing gently so the seasoning adheres well to the tenderloin.
  • In a large skillet over medium-high heat, add the olive oil and heat. Add the minced garlic and saute, stirring, for 1 minute. Put tenderloin in the pan and cook for about 10 minutes, searing each side using tongs to turn the meat. Transfer meat to a roasting pan and bake for 20 minutes. Slice and serve.

MOROCCAN SPICED RACK OF PORK

1/2 cup ras al hanout or Moroccan spice blend
3 tablespoons kosher salt
2 teaspoons dark brown sugar
One 6-bone bone-in pork loin roast, frenched, chine bone removed
1 cup dried apricots
1 cup sake
1 cup chicken stock
6 cloves garlic, peeled
6 sprigs fresh cilantro
1 lemon, thinly sliced into wheels and seeds removed
1 carrot, peeled and cut into large dice
1 large onion, quartered
1 turnip, peeled and cut into large dice
1 tablespoon unsalted butter

Steps:

  • Combine the ras al hanout, salt and brown sugar in a small bowl. Score the fat of the pork in a cross-hatch pattern. Rub the ras al hanout mixture all over the pork and allow to sit overnight in the refrigerator.
  • Put the pork on a rack and allow it to come to room temperature for about 45 minutes before putting it into the oven.
  • Preheat the oven to 425 degrees F.
  • Put the apricots, sake, chicken stock, garlic, cilantro, lemons, carrots, onions and turnips in the bottom of a medium roasting pan. Put the rack with the pork in the roasting pan and roast until the pork reaches an internal temperature of 140 degrees F for medium, 40 to 50 minutes. Allow to rest for 20 minutes before carving.
  • Transfer the drippings, vegetables and aromatics to a strainer set over a saucepan. Press the vegetables against the strainer to get as much liquid out of them as you can. Place the pan over medium heat, bring to a simmer and simmer until the liquid is reduced by about half, about 5 minutes. Turn the heat to low, add the butter and stir until melted. Keep warm over low heat and serve with the pork.

SLOW-ROASTED SPICED PORK

1 (7- to 9-pound) bone-in pork butt with a layer of fat on top
6 garlic cloves
1 large yellow onion, chopped
1 jalapeno pepper, ribs removed, seeded, and chopped
1/4 cup chopped fresh oregano leaves
1 1/2 tablespoons ground cumin
1 1/2 teaspoons chipotle chile powder
Kosher salt and freshly ground black pepper
1 1/2 tablespoons apple cider vinegar
1/4 cup good olive oil
1 (750 ml) bottle dry white wine, such as Pinot Grigio
Lime wedges, for serving

Steps:

  • Preheat the oven to 300 degrees F. Test your oven with an oven thermometer to be sure it's accurate!
  • Score the fat on the pork diagonally with a sharp knife in a crosshatch pattern. With a small paring knife, make a dozen 1/2-inch-deep cuts in the top and sides of the pork to allow the seasonings to permeate the meat.
  • Place the garlic, onion, jalapeno, and oregano in a food processor and process until the ingredients are finely chopped. Add the cumin, chile powder, 1 tablespoon salt, and 1 1/2 teaspoons pepper and process for 30 seconds to make a paste. Add the vinegar and olive oil and process to incorporate. Rub the mixture all over the pork, including the sides and the bottom, and place the pork in a large roasting pan, fat side up. Pour 2 cups of the wine into the pan and cover the whole roasting pan tightly with aluminum foil. Roast for 2 1/2 hours, remove the foil, and roast for another 4 to 4 1/2 hours, until the meat is very, very tender when tested with a carving fork. Every 2 hours, add another cup of wine to keep some liquid in the pan.
  • Remove the pan from the oven, cover it tightly with aluminum foil, and allow the meat to rest for 15 to 30 minutes. Slice, sprinkle with salt, and serve with lime wedges on the side.

My Favorite Nearly Non-Fat Spice Rubbed Pork Loin Roast image

This is inspired from a recipe posted on turnersouth.com. I wasn't sure about it, but DH really wanted to try it. It is the best piece of pork I've ever eaten and am putting it here so that I never ever lose the recipe! It's so simple that even the most tender chef can't make a mistake on this one. P.S. It may seem like a lot of pepper, but when it's cracked instead of ground the flavor is completely different. I actually HATE pepper on my meat, so trust me, it's not too much. *RECIPE UPDATE AUGUST 2006* In a March 2006 "Cook's Illustrated" magazine gave a great way to reduce the "heat" when using peppercorns. I haven't tried it, but put the method here for safe-keeping and future use in this recipe. I've made a few tiny changes. ***REDUCING HEAT IN PEPPERCORN RECIPES*** To do this take equal amounts of peppercorns and olive oil, (they used 5T each) PLUS 1.5 Tsp additional olive oil and 2 teaspoons kosher salt. Then heat peppercorns and oil in small saucepan over very low heat until faint bubbles appear. Continue to cook at bare simmer, swirling pan occasionally, until pepper is fragrant, 7 to 10 minutes. Remove from heat and set aside to cool. If you prefer an even lower heat, milder pepper flavor, drain the cooled peppercorns in a fine-mesh strainer and then toss them with 5 tablespoons of fresh olive oil.

2 1/2 lbs boneless center-cut pork loin (roast)
1 1/2 tablespoons fresh cracked pepper (**see instructions below)
3 tablespoons parmesan cheese, If you do choose fresh Parmesan, then be sure it's grated (the shakeable kind in the green can, powdery)
1 tablespoon fresh rosemary (finely chopped, or 2 t dried)
2 teaspoons dried basil
2 teaspoons dried thyme leaves
1/4 teaspoon garlic powder
1/2 teaspoon cumin
1 -2 teaspoon fine grained salt (the parmesan has a lot of salt, so be careful not to over salt)

Steps:

  • Preheat oven to 350°F (important for tender roast).
  • Pat pork roast dry with paper towel.
  • In small bowl stir together all spices (see note below regarding peppercorns) with the parmesan cheese to make the "rub".
  • **To crack the black peppercorns put whole peppercorns into a double-bagged zip lock type bag and beat with meat pounder, the bottom of a heavy sauté pan or roll with rolling pin until most of the peppercorns are at least cracked in half (will chip if you do on tile countertop) This seems like a LOT of pepper, but believe me it's the perfect amount. (If you use ground pepper you will not get much pepper flavor, and it will be incredibly hotter. You will need to adjust pepper to about 1 tsp).
  • Rub herb mixture over entire roast for about 1 minute. You should have LOTS of herb mixture left over. The roast will have a very thick coating.
  • Pool 1T of olive oil in bottom of the smallest, shallow baking dish that the roast will fit into. Place the roast fat side up over the olive oil (if you have fat on it). Put some of the extra herb rub underneath the roast and pile the remaining herb mixture on top of the roast.
  • Pour 1/2 cup of water in bottom of pan to keep the drippings from burning.
  • Put in oven and bake uncovered for approximately 1 hour until internal temperature reaches 145°F.
  • **PLEASE NOTE After about 30 minutes of baking the water will have evaporated and you should have some nice golden bits. You will have to add enough water to cover the bottom 1/4 inch of the roast itself at that point no more, no less. Watch it carefully and do not let the drippings burn. By the end of cooking it should have reduced to about 1/4 to 1/2 cup of liquid.
  • Once internal temperature reads 145-150°F immediately remove the roast from the oven and cover the pan with foil for a minimum of 15 minutes before slicing. **Side Note: The key to a tender roast is to use a meat thermometer and follow up with the tenting method. This allows the internal temperature of the roast to raise another 10 degrees after it comes out of the oven so that the meat gets completely cooked to a safe temperature, and is so moist and juicy. I learned this from watching America's Test Kitchen and they are SO right on about that.
  • If you would like to use the drippings for a sauce, STRAIN out all the herbs first. Then add about a teaspoon of cornstarch to the remaining liquid and heat until it thickens a bit. I wouldn't recommend reducing it as it's a bit salty. I added about 1/4 cup of MonteVina pinot grigio wine as well to thin it out a bit and it was so good!
  • Drink the rest of the wine with the meal!

3 lbs pork loin roast, well-trimmed, boneless
4 garlic cloves, sliced (or more)
1 teaspoon fennel seed
1 teaspoon dried thyme
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon dry mustard
12 shallots, peeled
3 lbs red potatoes, small, halved
2 cups vegetable stock
1 cup dry white vermouth (or dry white wine or fat-free chicken broth)
3 bay leaves

Steps:

  • With a sharp paring knife, cut into roast at 1-inch intervals. Insert garlic into each slit.
  • Combine the fennel seeds, thyme, paprika, salt and dry mustard; rub onto all surfaces of pork.
  • Place into a shallow dish; cover and refrigerate 4 to 24 hours.
  • Preheat oven to 350°F
  • Place shallots and potatoes in a shallow roasting pan.
  • Pour broth and vermouth over vegetables; add bay leaves and bake, covered, 30 minutes.
  • Remove pork from refrigerator; uncover vegetables and place pork on top of them.
  • Roast, uncovered, 90 minutes longer or until thermometer reaches 150°F
  • Remove pork from pan; cover with foil and let stand 10 minutes.
  • Transfer vegetables to large serving platter, cover to keep warm.
  • Remove bay leaves and transfer pan juices to saucepan; bring to boil. Lower heat and simmer, uncovered, 12 to 15 minutes or until reduced by half.
  • To serve, pass pan juices to spoon over carved roast and vegetables.
