ROASTED PEARS WITH PECORINO CHEESE
Look for a mild pecorino from Tuscany, sometimes called caciotta.

Steps:
- Preheat the oven to 350 degrees. Halve and peel the pears, and carefully remove the seeds and core.
- Melt the butter in a large cast-iron skillet over medium heat. Arrange the pears, cut side down, in the skillet so they just touch one another. Sprinkle the sugar, over the pears and butter. Cook, tilting the pan back and forth gently from time to time, until the sugar dissolves and melts into a golden caramel, about 4 minutes. Scrape the vanilla seeds into the pan, and add the pod. Reduce the heat, add the brandy, and cook a few minutes more. Be aware that the brandy may ignite, but the flames will die down quickly.
- Carefully turn the pears over, and transfer to the oven. They should be deep golden brown. Roast until the pears are fork tender, about 10 minutes, depending on the ripeness and size of the pears. Serve with thick slices of pecorino and caramel sauce.
GINGER-SPICED PEARS

- Put the sugar, vinegar, orange zest and juice, ginger, bay leaves and peppercorns in a large pan. Bring slowly to the boil, stirring constantly to dissolve the sugar, then boil for 5 mins.
- Meanwhile, peel, core and halve or quarter the pears, depending on size. Add the pears to the pan and poach gently for 10-15 mins until they are just tender. Remove with a slotted spoon and pack into warm sterilised Kilner jars with rubber seals (see tip below).
- Boil the vinegar mixture hard to reduce by a third, then pour over the pears, including the spices. The pears need to be completely covered with the liquid. Fit the rubber seal and clamp the jar tightly closed. Reserve any leftover syrup for topping up the jars later, as the pears will absorb the syrup over time. Store for up to 2 months.

- 1 Place a rack in the center of the oven. Preheat the oven to 450°F. Arrange the pears in a baking dish just large enough to hold them upright. 2 Stir together the wine and sugar until the sugar softens. Pour the mixture over the pears. Scatter the cinnamon and cloves around the pears. 3 Bake the pears, basting them occasionally with the wine, 45 to 60 minutes or until they are tender when pierced with a knife. If the liquid begins to dry up before the pears are done, add a little warm water to the pan. 4 Let the pears cool in the dish, basting them occasionally with the pan juices. A wonderful side paired with my Stuffed-Pork-Loin-Genoa-Style (recipe 344415). This can also be poured over ice cream or cake. This recipe can be halved quite successfully.

- Immediately place peeled and quartered pears in cold water with lemon juice to prevent them from turning brown.
- In a 3-gallon stockpot, blend vinegar, sugar, water and spices.
- Drain pears, add to pot and bring to a rolling boil.
- Reduce heat to simmer and cook until pears are tender and can be pierced with a fork.
- Cool then refrigerate overnight to give the flavors time to meld. Drain brine then serve.
SPICED POACHED PEARS WITH CRèME FRAîCHE AND AMARETTO COOKIES
Steps:
- In a large pot, combine sugar with 8 cups water and bring to a boil over high heat. Add the cinnamon, cloves, vanilla, star anise, and lemon, stir until the sugar is dissolved.
- Add the pears to the liquid and reduce heat to low. Cover and simmer the pears until tender, about 20 to 25 minutes. Remove pot from heat and let the pears cool in their liquid at room temperature.
- When ready to serve, use a slotted spoon to transfer pears to serving platter. Top with a dollop of crème fraîche, amaretti cookie crumbs, and a light dusting of cinnamon.

- Heat a nonstick skillet over medium-high heat. Add pear to pan, and sprinkle with sugar. Cook 2 minutes on each side or until golden.
- Brush cut sides of bread with vinegar. Arrange pear slices, arugula, cheese, and prosciutto evenly over bottom half of bread. Sprinkle generously with freshly cracked pepper. Cover with top half of bread.
- Heat a large nonstick skillet over medium heat. Add stuffed loaf to pan. Place a cast-iron or heavy skillet on top of stuffed loaf; press gently to flatten. Cook 4 minutes on each side or until bread is toasted (leave cast-iron skillet on stuffed loaf while it cooks). Cut into quarters.
