This salad is extremely good. It's amazing how the cilantro flavor does not overpower the salad.

8 roma (plum) tomatoes, diced
3 jalapeno peppers, seeded and diced
3 bunches green onion, sliced
4 ounces crumbled garlic and herb feta cheese
4 avocados - peeled, pitted and diced
2 tablespoons fresh lemon juice
3 bunches cilantro, chopped
salt and ground black pepper to taste

Steps:

  • Combine the tomatoes, jalapeno peppers, green onion, and feta cheese in a large bowl; toss together. Add the diced avocado; drizzle the lemon juice over the avocado to keep it from turning brown. Stir in the cilantro. Season with salt and pepper. Mix well and serve.

4 ounces crumbled feta cheese

Steps:

  • In a bowl, gently stir together tomatoes, avocados, onion, and garlic. Mix in parsley and oregano. Gently stir in olive oil and vinegar. Then stir in feta. Cover, and chill for 2 to 6 hours.

2 jalapenos, seeded and minced
2 teaspoons olive oil
3 tablespoons chopped fresh cilantro
1 1/2 teaspoons kosher salt
Freshly ground pepper to taste
6 medium red onions, peeled and cut into 1/8-inch slices
1 tablespoon olive oil
1/2 cup crumbled feta
Kosher salt and freshly ground pepper to taste
3 red and 3 yellow bell peppers, roasted, peeled, seeded and cut into 1/4-inch strips
1 tablespoon olive oil
1 tablespoon fresh lemon juice
1 teaspoon kosher salt
Freshly ground pepper to taste
3 avocados, peeled, pitted and cubed
1 tablespoon fresh lime juice
3 cloves garlic, peeled and minced
3/4 teaspoon kosher salt
3/4 teaspoon Tabasco sauce
12 cups salad greens
2 tablespoons olive oil
1 tablespoon lime juice
1 teaspoon kosher salt
Freshly ground pepper to taste

Steps:

  • Cook the fusilli in boiling salted water until al dente. Drain, rinse and drain well. Place in a bowl and toss with the jalapenos, olive oil, cilantro, salt and pepper.
  • Meanwhile, preheat the broiler. Place the onions on baking sheets and brush with oil. Broil until browned, about 5 minutes. Cool and coarsely chop. Place in a bowl and toss with the feta, salt and pepper.
  • Place the roasted peppers in a bowl and toss with the olive oil, lemon juice, salt and pepper. Place the avocados in a bowl and toss with the lime juice, garlic, salt and Tabasco.
  • Place the salad greens in a large bowl and toss with the olive oil, lime juice, salt and pepper. Pass the dishes separately, letting guests build their own salads.

2 ripe avocados, peeled and sliced
1 lemon, juice and zest of
50 g sun-dried tomatoes packed in oil, drained
400 g feta cheese, crumbled
3 tablespoons pine nuts, toasted
50 g Baby Spinach
2 cups rocket
1/2 cup mixed fresh herbs, e.g. basil, parsley dill
4 tablespoons olive oil
1 tablespoon capers, drained and chopped

Steps:

  • Cook pasta according to the packet.
  • Toss together the avocado, tomato, cheese, nuts, spinach, rocket, herbs and pasta.
  • Whisk together the oil, lemon zest and juice and the capers and drizzle over the salad.

Chicken, Avocado and Feta Salad image

This is a combination of a couple of recipes that I enjoy, with lots of my favorite ingredients. Use the freshest veggies and you can't go wrong! I like to serve this on a bed baby spinach or mixed greens. My husband likes to add corn and a vinagrette instead of the creamy dressing when he makes it to 'health' it up - it's a very versatile recipe.

2 cups cooked chicken breasts (shredded or chopped into large pieces)
2 avocados, peeled and chopped
2 tablespoons lemon juice, fresh squeezed (divided)
garlic salt, to taste (I don't use too much salt because you can always add more at the table.)
1/4 cup red onion, diced
1/3 cup feta cheese, crumbled (I've subbed goat cheese with good results)
1/4 cup pine nuts, toasted
1/2 cup fresh cilantro, chopped
3 tablespoons mayonnaise
1 tablespoon Dijon mustard
black pepper, freshly ground

Steps:

  • To save time and effort, I usually get a store-bought rotisserie chicken. Remove skin and chop breasts; add other pieces of chicken if necessary to get to two cups.
  • Chop the avocados into medium-sized pieces, mix with 1 tablespoon of the lemon juice to prevent browning, and season avocado with garlic salt to taste. Put in large bowl with chicken.
  • Top with onion, feta cheese, pine nuts and cilantro. Toss gently to combine, taking care not to break up or mash the avocado.
  • Whisk mayo, dijon and the remaining tablespoon of the lemon juice to make the dressing. Add a bit of water if too thick. Season the dressing with freshly ground black pepper to taste. Drizzle over salad and again toss gently to dress.
  • Serve right away or chill for a while before serving. This can be served inside pita bread or sandwich bread, or over a bed of greens/spinach, but we also like to eat it as is.

Need a break from rich Christmas food? This fresh, zingy feta, pistachio and clementine salad is just the ticket, plus there's no cooking involved

180g feta, crumbled
250g Greek yogurt
½ tsp chilli flakes
2 tbsp za'atar or mixed dried herbs
70ml extra virgin olive oil
1 tbsp honey
2 tbsp white wine vinegar
1 large banana shallot, very thinly sliced into rings
150g rocket
4 clementines, peeled and sliced horizontally
½ small bunch of mint
40g pistachios, chopped
50g pomegranate seeds

Steps:

  • Put the feta in a bowl with the yogurt and ½ tsp salt and mash together well with a fork. Put in a sieve set over a bowl for 3 hrs, then chill overnight. Once chilled, roll into 12 balls the size of walnuts. Mix together the chilli and za'atar, then roll the feta balls in the mixture to coat. Put in the fridge to chill for 30 mins. Will keep chilled in a container for up to three days covered in a layer of olive oil.
  • Mix the oil with the honey, vinegar and some seasoning to taste. Toss the shallots, rocket and clementine slices together with the mint. Arrange on a plate with the feta balls on top and drizzle over the dressing. Scatter with the chopped pistachios and pomegranate seeds.
