- Preheat oven to 375°. In a large skillet, heat butter over medium-high heat. Add onion; cook and stir until tender. Add spinach; cook and stir 3-4 minutes longer or until liquid is evaporated. Transfer to a bowl; cool slightly. Stir in cheeses, eggs, bread crumbs, salt and pepper., Place one sheet of phyllo dough on a work surface; spritz with cooking spray. (Keep remaining phyllo covered with plastic wrap and a damp towel to prevent it from drying out.) Cut sheet crosswise into four 9x3-1/2-in. strips., Place 1 tablespoon filling on one end of each strip. Fold dough over filling, forming a triangle. Fold triangle over, forming another triangle. Continue folding, like a flag, until you reach the end of the strip. Spritz end of dough with cooking spray and press onto triangle to seal. Turn triangle and spritz top with cooking spray. Repeat with remaining phyllo and filling., Place triangles on baking sheets coated with cooking spray. Bake 10-12 minutes or until golden brown. Freeze option: Freeze unbaked triangles in freezer containers, separating layers with waxed paper. To use, bake triangles as directed, increasing time as necessary to cook through.

Steps:
- Preheat oven to 375°F. Beat cream cheese, spinach, peppers and garlic salt with electric mixer on low speed until well blended.
- Place 1 of the phyllo sheets on clean work surface. Brush lightly with butter. Cut phyllo into three lengthwise strips. Spoon about 1 tsp. of the filling 1 inch from one end of each strip. Fold end of phyllo over filling at 45-degree angle. Continue folding as you would fold a flag to form a triangle that completely encloses filling. Repeat with remaining phyllo and filling. Place triangles, seam-sides down, on baking sheet; brush with remaining butter.
- Bake 12 to 15 min. or until golden brown. Serve warm.

HAM AND SPINACH TRIANGLES
An Italian-inspired version of Greece's famous spanikopita. If you don't have fresh Parmesan on hand, you can substitute shredded old Cheddar cheese.

Steps:
- In a large bowl, blend together the spinach, ricotta, ham, Parmesan, tarragon, egg yolks, salt and pepper to taste.
- Place one sheet of phyllo on your work surface, covering the remaining phyllo with a damp tea towel to prevent it from drying out.
- Brush the sheet lightly with butter; lay a second sheet over top and brush with butter.
- Using a ruler and sharp knife, cut the pastry crosswise into 3-1/2-inch wide strips.
- Spoon rounded tablespoons of filling about one inch from the end of each strip.
- Fold one corner of the phyllo over the filling so the bottom edge of the phyllo meets the side edge to form a triangle.
- Continue folding the triangle sideways and upward until the end of the phyllo strip is reached.
- Press the edges firmly together.
- Repeat with the remaining phyllo sheets and filling.
- Place the triangles on lightly greased baking sheets; brush with butter.
- Bake in a 375 degree F oven for 15-20 minutes or until puffed and golden.

GREEK SPINACH TRIANGLES

Steps:
- * To cut calories, you can use butter-flavored cooking spray in place of the butter.
- Cook spinach according to directions; drain well.
- Mix spinach, eggs, onion, cream cheese, pepper and feta cheese together.
- Refrigerate mixture at least 1 hour.
- Open package of phyllo pastry; cut a strip 2" wide, cutting through all layers.
- Cover remaining dough with a damp cloth to prevent cracking.
- Separate dough so that you have 2 sheets for each triangle.
- Brush the dough with melted butter.
- Put 1 rounded teaspoon of spinach mixture at the top of the strip.
- Fold pastry over like folding a flag.
- Place on well-buttered baking sheet; brush top with butter.
- Bake at 375 degrees Fahrenheit for 20 minutes.
- Serve warm.
- To freeze the triangles before cooking, butter both sides of triangle and wrap well.
- Bake when needed.
PAN CON TOMATE WITH SERRANO HAM AND MANCHEGO CHEESE
Steps:
- Preheat a grill to medium-high heat.
- Lightly flour a work surface and place the dough on top. Dust your hands as well and begin to stretch your dough, working in a circle. Stretch the dough until it is 10 to 12 inches in diameter. Place the dough on the grill and cook until charred on both sides, about 10 minutes total.
- Clean and remove the stem ends of the tomatoes. Place them in a food processor and pulse to break them up. Strain the tomato pulp through a large fine-mesh strainer to remove some of the liquid.
- Spread the tomato pulp over the top of the cooked pizza dough. Drizzle with the olive oil and season with sea salt. Top with the Serrano ham and manchego cheese. Drizzle more olive oil over the top.
SPINACH CHEESE TRIANGLES
Steps:
- 1. to chop onions in food processor, peel and quarter onion; place in bowl. Pulse 4 to 7 times until onion is finely chopped. Scrape bowl once during chopping. Chop enough onion to measure 1/2 cup. Drain onions, if needed. Set aside 2. to finely chop paresley, place parsley in 1 cup measuring cup. Snip enough parsley with kitchen scissors to measure 1/2 cup. Set aside 3.to drain spinach, place spinach 1 package at a time, in bottom of pie plate. Place another pie plate on top; over sink squeeze plates together and tilt slightly to press excess liquid from spinach. Set spinach aside 4. Preheat oven to 375 degrees. 5. Heat oil over medium high heat in small skillet. Add onion; cook and stir until translucent and golden. 6. Beat eggs in large bowl with electric mixer at medium high speed until light and lemon colored. 7. Stir in onion with oil, feta cheese, parsley, oregano and spinach. Season with nutmet, salt and pepper. 8. Remove phyllo from package; unroll and place on large sheet of waxed paper. Fold phyllo crosswise into thirds. Use scissors to cut along folds into thirds. 9. Cover phyllo with lare sheet of plastic wrap and damp, clean kitchen towel. 10. Lay 1 stip of phyllo at a time on flat surface and brush immediately with melted butter. Fold strip in half lengthwise. Brush with butter agian. Place rounded teaspoonful of spinach fillin on 1 end of strip; fold over 1 corner to make triangle. 11. Continue folding end to end, as you would fold a flag, keeping edges straight. 12. Brush top with butter. Repeat process until all filling is used. 13. Place triangles in a single layer, seam side down, on ungreased jelly roll pan. Bake 20 minutes or until lightly browned. Serve warm.
ASPARAGUS CHEESE TRIANGLES
This is a spin-off of Greek spanakopita (spinach pie). You can also add leftover chopped chicken and cut into larger triangles for a meal.

- In a large saucepan, bring water to a boil; add asparagus. Cover and cook for 4-6 minutes or until crisp-tender. Drain and immediately rinse with cold water; drain and pat dry. In a large bowl, combine the asparagus, cheeses, onion, garlic powder, salt and pepper.
- Brush a 15-in. x 10-in. x 1-in. baking pan with some of the butter. Unroll phyllo sheets; trim short side to fit pan. Cover dough with plastic wrap and a damp cloth while assembling. Place two sheets of phyllo in pan; brush with butter. Repeat eight times. Spread with asparagus mixture. Layer with remaining phyllo sheets, brushing each with butter.
- Bake at 350° for 40-45 minutes or until golden brown. Cool on a wire rack for 5 minutes. Cut into 24 pieces; cut each piece in half diagonally.
- Serve warm. Refrigerate leftovers.

I love spinach lasagne and the addition of the ham makes it that much better! There is no pre-cooking so this comes together rather quickly.

- Cook lasagne noodles in boiling and salted water for 10-12 minutes, until al dente. Drain and rinse with cold water.
- Meanwhile, cook spinach; drain.
- For sauce, in a medium saucepan combine milk, cornstarch, and onion. Cook and stir till thickened and bubbly. Cook and stir 2 minutes more.
- Spread 2 tablespoons sauce on the bottom of a 10x6x2 inch baking dish. Stir ham and italian seasoning into remaining sauce.
- Arrange 3 lasagne noodles in the dish. Spread 1/3 of the sauce. Layer spinach atop. Layer another 1/3 of the sauce, the ricotta, and half of the mozzarella. Place remaining noodles atop. Top with the remaining sauce and mozzarella.
- Bake at 375 degrees for 30 to 35 minutes or until heated through. Let stand ten minutes before serving.

- Preheat oven to 350 degrees Fahrenheit.
- In skillet over medium-high heat, heat 1 tablespoon margarine.
- Add onion and cook until tender.
- Add spinach and cook 4 minutes or until liquid evaporates.
- Remove from heat.
- Stir in feta cheese, cream cheese, egg and garlic powder.
- In cup melt remaining margarine.
- Unfold dough.
- Remove 2 dough sheets leaving the remaining covered.
- Brush with margarine.
- Repeat with 4 more dough sheets stacking each on top of the previous sheet.
- Repeat with remaining sheet making three stacks in all.
- Cut each stack crosswise into 5 (about three inch) strips.

- Fold triangle over toward strip.
- Continue folding until the entire strip is folded into a triangle.
- Place on greased baking sheet.

- Steam or parboil the spinach until it wilts; drain, squeeze dry, and chop.
- Add olive oil to a medium skillet; place over medium heat.
- Add in onion and scallion; cook/stir about 5 minutes, until softened.
- Add in spinach, salt, pepper, and nutmeg; stir.
- Beat the eggs with the cheese; stir into the spinach mixture along with the dill and parsley; remove from heat.
- Preheat oven to 350°.
- Unroll phyllo sheets and cut them into thirds the long way.
- Working with 1 piece at a time, brush lightly with butter, then sprinkle lightly with bread crumbs.
- Place 1 heaping teaspoon of spinach filling in one corner of the dough and fold the corner over to make a triangle.
- Continue to fold the phyllo, , making triangles, as you learned to do with a flag.
- As each piece is finished, brush its top with butter and place on a baking sheet.
- When all the triangles are done, bake for about 20 minutes, or until nicely browned.
