SPICY PANEER SKEWERS



Spicy paneer skewers image

These vegetarian kebabs use a firm Indian cheese coated in spices and grilled, perfect for a party

600g paneer cheese (see Tip below)
juice 2 lemons
2 tsp ground cumin , plus extra for sprinkling
75g gram flour (see Tip below)
1 tsp garam masala
1 tbsp paprika
284ml tub double cream
4 garlic cloves , crushed
2 red chillies , deseeded and chopped
2 peppers , red and yellow, roughly chopped
2 courgettes , sliced
25g butter , melted
2 lemons , cut into wedges

Steps:

  • Soak 12-15 bamboo skewers in water for 15 mins - this helps to stop them from burning under the grill. Cut the paneer cheese into 3cm cubes and toss with the lemon juice and ground cumin. Set aside for 30 mins.
  • Sieve the gram flour, garam masala and paprika into a bowl and add the cream, garlic and chopped chillies plus enough water to make a thick batter, then stir until smooth. Drain the paneer and add to the batter with 2 tbsp of the cumin-spiced lemon juice. Coat all the paneer cubes in batter.
  • Heat grill to its hottest setting and line the grill pan with foil. Thread the paneer onto skewers, alternating it with chunks of pepper and courgette. Drizzle with batter from the bowl and cook for 4-5 mins on each side, spooning over more batter when you turn them. Grill until charred at the edges. Brush with melted butter, sprinkle with the ground cumin, and serve immediately, accompanied with lemon wedges.

1 -2 cup vegetable oil, for deep frying
400 g panir, cut into bite-sized pieces
1 teaspoon coriander seed
1 knob ginger, peeled and chopped
1 small knob ginger, peeled and shredded into matchsticks
1 medium onion, chopped
4 large ripe tomatoes, chopped
1 1/2 teaspoons chili powder
1 teaspoon fenugreek seeds
1 teaspoon garam masala
1 tablespoon clear honey
1 small handful fresh coriander, chopped
1 small bell pepper, 1 red and 1 green, seeded and finely chopped
3 spring onions, finely shredded

Steps:

  • Heat 1cm oil in a large frying pan and fry the paneer in batches until golden brown (watch out as the oil spits!). Scoop it on to kitchen paper.
  • Heat 1 tbsp oil in a frying pan and gently fry the coriander seeds, ginger, chilli and onion for about 8- 10 minutes until golden. Tip in the tomatoes and cook for another 5 minutes until they start to soften. Add the other spices and honey, stir and simmer for a few minutes.
  • Tip the paneer into the sauce and stir. Simmer for a few minutes, then add the chopped coriander and shredded ginger. Serve sprinkled with peppers and spring onions.

  • Cut the paneer into thin slices, about 1/4 to 1/2 inch thick. Then, cut each slice into 1-inch pieces. Transfer the paneer into a mixing bowl.
  • In a small bowl, mix 1 tablespoon of olive oil, turmeric, coriander, cumin, paprika, and salt together. Drizzle this spiced oil over the paneer and toss to coat with the spices. You may need to use your hands to rub the spices into the paneer.
  • Heat a skillet with 1 1/2 tablespoons of olive oil over medium heat. Add the paneer pieces and pan fry for about 3 to 4 minutes, until they are golden brown. Flip the pieces over to pan fry the other side. Cook for another 2 to 3 minutes, until golden brown. Transfer the fried paneer to a plate.
  • Dust the paneer with paprika. Sprinkle with chopped chives and a small pinch of flaky sea salt, if desired. Serve with basmati rice or coconut rice.
