- In a small bowl, cream shortening and sugar until light and fluffy. Add egg yolk; beat well. Stir in vanilla. Combine the flour, cocoa, salt, baking powder, baking soda, cinnamon and nutmeg. Combine milk and vinegar. Add dry ingredients to the creamed mixture alternately with milk, beating well after each addition. Fold in walnuts., In a small bowl with clean beaters, beat egg white on medium speed until soft peaks form. Gradually fold into batter. Transfer to two 6-in. baking pans coated with cooking spray and dusted with flour. Bake at 350° for 15-20 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. , For frosting, in a small saucepan, combine flour and milk until smooth. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Cover; cool to room temperature., In a small bowl, cream butter and shortening. Gradually beat in sugar. Gradually add cooled milk mixture and beat for 4 minutes or until light and fluffy. Add vanilla and salt; beat well. Spread between layers and over top and sides of cake.

- In a large bowl, combine cake mix and water. Beat on low speed for 30 seconds. Beat on medium speed for 1 minute. SPICED APPLE-WALNUT CAKE WITH CREAM CHEESE ICING

- For the cake: Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Liberally butter and flour a 10-inch fluted tube or Bundt pan. Set aside.
- In a large bowl, mix together the apples, maple syrup, eggs, sugar, oil, and vanilla. In a separate medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. In batches, mix the dry ingredients into the apple mixture. Stir in the walnuts. Pour the mixture into the prepared pan and bake until a cake tester or skewer inserted into the cake comes out clean, 55 to 60 minutes. Cool for 15 minutes and invert onto a wire rack to cool completely, about 1 hour.
- For the icing: In a food processor, combine the powdered sugar, heavy cream, cream cheese, 3 tablespoons water, and vanilla. Process until smooth, adding more water, 1 teaspoon at a time, until the icing is pourable. Spoon the icing over the cake and allow to set for 20 minutes before slicing.
SPICED CHRISTMAS CAKE
This is a good last-minute Christmas cake as it doesn't need time to mature. Fragrant, spiced and with a light golden crumb. The natural decoration looks incredibly impressive too. Equipment and preparation: You will need a deep 20cm/8in round tin or a 18cm/7in square tin.

- Put all the fruit into a large bowl, along with the cashew nuts and citrus zest. Pour over the white port (or rum). Leave to stand overnight, or at least for a few hours.
- When you are ready to make the cake, line a deep 20cm/8in round tin or a 18cm/7in square tin with baking parchment. Tie a double layer of baking parchment around the outside of the tin, making sure it is at least 10cm/4cm higher than the top of the tin. Preheat the oven to 170C/150C Fan/Gas 3.
- Cream together the butter and sugar in a large bowl until very pale, aerated and fluffy.
- Put the flour, ground almonds, cinnamon, cardamom, mace (or nutmeg), allspice and cloves in a separate bowl together with a pinch of salt, and mix lightly to get rid of any lumps.
- Add the eggs to the butter and sugar, one at a time and sprinkle over a tablespoon of the dry ingredients. Mix in, then repeat with the remaining eggs, finally adding the rest of the flour and stirring thoroughly.
- Add the reserved soaked fruit and the rosewater or orange blossom water. Mix thoroughly again. Scrape the mixture into the prepared tin and smooth over with a palette knife.
- Bake in the oven for an hour, then turn the temperature down to 150C/130C Fan/Gas 2, then bake for a further two hours. To check the cake is done, insert a skewer into the centre - it should come out clean when the cake is done. Leave to cool in the tin for around 10 minutes, then put on a cooling rack.
- When completely cool, decorate the cake.
- If the cake isn't completely flat, trim the top, then turn it upside down. Roll out the marzipan to around 1cm/½in thick and cut so it that it will sit on the cake. Put the marzipan on a baking tray and put under the grill for a minute or two, until toasted in places. Alternatively use a blow torch once the marzipan is on the cake. Melt the apricot jam and spread on the cake. Transfer the grilled marzipan to the cake.
- For the decorations, slice the orange into 2mm/1/16 in slices and pat away excess moisture with kitchen paper. Preheat the oven to 150C/130C Fan/Gas 2 and line the baking tray with baking parchment or non-stick lining.
- Sprinkle the orange slices with the icing sugar. Put in the oven for around an hour to an hour and a half, checking regularly after around 50 minutes, until the oranges have dried out a little and started to brown. Leave cool completely.
- For the leaves and rosemary sprigs, lightly whisk the egg whites in a bowl. Immerse the rosemary in the egg white, then remove and shake off the excess. Pour the caster sugar over a plate, then lay the rosemary sprigs in it. Spoon the caster sugar over the top, then shake off again, gently this time, to remove any excess. Lay on a tray. Brush the leaves with the egg white and again, drop onto the caster sugar and cover completely, shake off the caster sugar. Leave to dry for around an hour.
- Lightly spray the spices with edible gold spray or dust with edible gold dust (this way you can still use them afterwards). Arrange the leaves, spices, orange slices and rose petals over the top of the cake, in a wreath. Leave the sides of the cake bare, or cover with a ribbon.
SPICED NUT CAKE
The hazelnuts can be replaced with chopped almonds or walnuts and multi-coloured glace cherries and mixed peel instead of cranberries. We prefer the cranberries and hazelnuts. Freezes well and is nice to have available over the holiday season.

- Sift together the dry ingredients and make a hole in the centre.
- Stir in the orange juice, butter, water and egg.
- Beat together until all the flour is incorporated.
- Stir in the cranberries and nuts.
- Grease and line a 9 x 5 loaf tin.
- Spoon in the mixture and bake in a preheated oven at 325 degrees for 1 hour until a skewer inserted into the centre comes out clean.
- Remove from tin, peel off the paper and dust with icing sugar.
- Slice and serve warm or cold with butter or cream cheese.

- If you do not have sour milk - put 1 1/4 tablespoons vinegar in cup and fill with milk, place the cup of milk in small bowl adding the remaining 1/4 cup of milk, let stand for several minutes to sour.
- Cream butter and brown sugar, add egg yolks and vanilla mixing well.
- In large bowl flour, baking powder, cinnamon, cloves, nutmeg and salt and whisk together to blend.
- Dissolve baking soda in sour milk, adding the sour milk and dry ingredients alternately to batter and mix well.
- Spread into a 9x 13 pan.
- Make meringue - beat egg whites until stiff, gradually add the brown sugar, continue beating until nice and smooth, Spread over cake batter, sprinkle with chopped nuts.
- Bake in preheated 350 degree oven for 45 to 50 minutes.

MARBLE SPICE CAKE
I adapted this recipe from a 1930s cake flour pamphlet. Basically an old-fashioned three-egg cake, this is a perfect quick cake to make for a birthday or any other special occasion because it is easy to prepare, it always turns out light, moist and flavorful, and you don't necessarily need a frosting to finish it off.

- One 12-cup Bundt pan, buttered and floured
- Set a rack at the middle level of the oven and preheat to 350 degrees. Butter a 12-cup Bundt pan and flour the buttered surface, shaking out the excess.
- Stir cake flour and baking powder together well to combine in a small bowl.
- In a large mixing bowl, beat the butter until soft and light. Use a hand mixer set at medium speed or a heavy-duty mixer fitter with the paddle, if you have one. Gradually beat in the sugar and salt and continue beating about 5 minutes until very light. Beat in the eggs, one at a time, continuing to beat until the mixture is smooth and fluffy.
- Sift half the cake flour mixture over the butter mixture, then stir it in. Stir in the milk thoroughly, scraping the side of the bowl, then sift over and stir in remaining cake flour mixture. Beat the batter for a few seconds to ensure that everything is thoroughly incorporated.
- Divide the batter in half and stir the molasses and spices thoroughly into one half.
- Spoon alternating tablespoons of the two batters into the prepared pan. Use the point of a table knife to run a zig-zag through the batters to marble them. Bake the cake for about 45 to 50 minutes, or until it is well risen and a skewer inserted in the center of the cake emerges clean. Cool in pan on rack for 5 minutes, then invert to a rack to cool.
- Hints:
- Butter Bundt pans with very, soft, not melted butter. Dust the buttered surface with flour or fine dry bread crumbs.
- Always use an insulated or doubled cookie sheet in the bottom level of the oven to prevent cookies from burning.
