HONEY-BOURBON GLAZED BACON
Steps:
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- Combine the honey and bourbon in a small saucepan and bring to a boil over high heat. Remove from heat and let cool slightly.
- Lay the bacon on the prepared baking sheet and roast for 10 minutes. Brush with some of the honey-bourbon syrup. Continue roasting until deeply caramelized and crispy, another 10 to 15 minutes--the bacon will really crisp as it cools. Sprinkle with 1/4 teaspoon pepper and serve.

- Arrange 6 slices thick-cut bacon on a rack set on a foil-lined rimmed baking sheet. Bake at 375 degrees F until they just start to crisp, 12 to 14 minutes.
- Microwave 2 tablespoons sugar with 1 teaspoon water until dissolved, about 45 seconds. Flip the bacon and brush the tops with the sugar mixture.
- Sprinkle with seasonings (such as chili powder, pie spice or Cajun seasoning). Continue baking until browned, 12 to 16 more minutes. Drain on paper towels.
SWEET AND SPICY CANDIED BACON (MILLIONAIRE'S BACON)
Steps:
- Preheat oven to 350 degrees.
- Place a wire rack on a foil lined baking sheet. Arrange the bacon on the wire rack and sprinkle with the cayenne pepper, crushed red pepper and black pepper. Lightly pat the brown sugar on top of the bacon to create a thin layer.
- Transfer the baking sheet to the oven and bake for 30-40 minutes or until the brown sugar has melted and the bacon is crisp. Remove from the oven and allow to cool for 10 minutes. Using tongs, transfer the bacon to a parchment lined baking sheet and allow to cool to room temperature. Store in an airtight container for up to 3 days at room temperature.

Steps:
- Cut the chicken breasts-or fillets, as we call them here-in thin strips. Not too thin, the bacon has to brown and if the chicken is too thin it'll get dry before the bacon gets crispy.
- Grab a bowl and combine 3 tbsp honey with 2 tsp coarse mustard.
- Squeeze in some lemon juice. Not too much, about a tbsp or so. I think orange juice will be great, too.
- wrap the bacon around the chicken strips.
- Place them in a roasting tray or on a cookie sheet. If you're afraid of cleaning up, line the tray or sheet with some tin-foil first.
- Brush the chicken bites with half the marinade.
- Bake them in a preheated oven at 425F (225C) for 10 to 13 minutes. Until the bacon is crispy.
- As soon as one side is done, take the tray out of the oven.
- Flip them over and brush them with the remaining marinade.
- Put them back in the oven for another 10 to 13 minutes, until the other side is crispy as well. Keep an eye on them.

- Preheat oven to 375*F. Line 2 cookie sheets with parchment paper; arrange the bacon on the paper in a single layer.
- In a small skillet, combine the honey,corriander, and cayenne; cook over high heat until melted, about 1 minute.
- Brush the honey on one side of the bacon and bake for 10 minutes; sprinkle evenly with sesame seeds and bake 5-10 minutes longer, depending on the thickness and fattiness of the bacon, until sizzling and browned.
- Transfer the bacon to paper towels, glazed side up, to drain and cool slightly. Serve immediately.

- Arrange bacon in a jellyroll pan and bake in oven until almost crisp, about 18 minutes.
- Process remaining ingredients in a food processor until smooth, about 10 seconds.

GLAZED BACON

- Preheat the oven to 400 degrees F.
- For the red chile-honey glaze: Lay the bacon in a single layer on a sheet pan, keeping space in between each slice. Place bacon in pan and bake until lightly browned and crisp, 15 to 20 minutes. While the bacon is cooking, whisk together the clover honey and ancho chile powder in a medium bowl until smooth. Remove the bacon from the oven, using mitts, and carefully drain the fat, tipping the pan, into a medium bowl. Blot the top of the bacon with a few paper towels. Place the sheet pan with the bacon on it on a cooling rack and immediately brush each slice with the glaze.
- For the sorghum glaze: Lay the bacon in a single layer on a sheet pan, keeping space in between each slice. Place bacon in pan and bake until lightly browned and crisp, 15 to 20 minutes. Remove the bacon from the oven, using mitts, and carefully drain the fat, tipping the pan, into a medium bowl. Blot the top of the bacon with a few paper towels. Place the sheet pan with the bacon on it on a cooling rack and immediately brush each slice with the sorghum syrup.
- For the brown sugar-pecan glaze: Line a baking sheet with a silpat or parchment paper. Lay the bacon in a single layer on the baking sheet, keeping space in between each slice. Divide the brown sugar evenly over the top of each slice of bacon and bake until bacon is golden brown and almost crispy, about 13 minutes. Remove from the oven and sprinkle with the finely chopped pecans, return to the oven and continue baking until pecans are toasted and bacon is crispy, about 3 minutes longer.
- Let sit at room temperature for 10 minutes.
