HERB-BUTTERED CORN ON THE COB



Herb-Buttered Corn on the Cob image

1/2 cup fresh basil leaves, chopped
1/2 cup fresh parsley leaves, chopped
8 cloves garlic
Zest of 1 lemon
Pinch kosher salt
Freshly ground black pepper
2 sticks butter, softened
Oil, for oiling grill
6 ears corn, shucked and silks cleaned

Steps:

  • In a food processor, combine the basil, parsley, garlic, lemon zest, a big pinch of salt and a few grinds of pepper. Pulse until everything is thoroughly chopped and combined. Add the butter and pulse until thoroughly mixed. Scrape the butter mixture out of the food processor onto a piece of plastic wrap or parchment paper and form into a log. Store in the refrigerator until ready to use.
  • Preheat a grill or a grill pan for medium-high heat. Lightly oil the grill grates. Grill the corn, rotating it as it cooks, until lightly charred in places, 3 to 4 minutes per side.
  • Remove the corn from the grill, smear each ear with a generous amount of the herb butter and serve.

6 ears fresh corn, shucked
1/2 stick (1/4 cup) unsalted butter
1 1/2 teaspoons fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon coarsely ground black pepper
1/8 teaspoon cayenne
1/4 cup chopped fresh cilantro
Garnish: fresh cilantro leaves
Special Equipment
a wide 6- to 8-qt heavy pot with a tight-fitting lid

Steps:

  • Bring 1 1/2 inches water (do not salt water) to a boil in pot, then add corn. Cook corn (water may not cover it), covered with lid, turning occasionally, until tender, 3 to 5 minutes. Transfer with tongs to a large platter.
  • While corn cooks, melt butter in a 1-quart heavy saucepan, then remove from heat and stir in lemon juice, salt, black pepper, and cayenne.
  • When corn is just cool enough to handle, cut kernels off cobs in long, wide strokes with a large heavy knife, leaving kernels in clusters. Transfer to a serving bowl.
  • Add butter mixture and cilantro to corn, stirring gently to keep kernel clusters intact. Serve warm or at room temperature.

3 tbsp butter
1 tbsp chopped coriander
2 tsp ancho chilli powder (see below) or smoked paprika

Steps:

  • Boil a large pan of water. Add some salt and the corn. Boil for 10 mins. Meanwhile, mix the butter with coriander and chilli powder. When ready to serve, drain the corn, then add the butter mixture to the pan so it melts on all sides of the corn.

2 teaspoons chili powder
1 teaspoon garlic salt

Steps:

  • In a small bowl combine the butter, parsley, chili powder, garlic salt, and cumin; set aside.
  • To pot of boiling water add 1 tablespoons granulated sugar, and 1 tablespoons lemon juice. Add corn. Boil for 3 to 5 minutes, uncovered. Remove from heat, cover and let stand for 15 minutes. Remove from hot water, spread ears of corn with seasoned butter.
