4 garlic cloves, finely chopped
1 tablespoon chopped fresh rosemary, plus rosemary branches for garnish
1/2 cup balsamic vinegar
3 tablespoons honey
2 tablespoons olive oil
1 tablespoon Dijon mustard
salt & freshly ground black pepper
1 3/4-2 lbs pork tenderloin
canola oil, for searing

Steps:

  • Preheat the oven to 350 degrees F.
  • Make the glaze: Put garlic and rosemary in a small bowl. Add the vinegar, honey, olive oil, mustard, and salt and pepper, to taste, and stir to combine.
  • For the pork: Slice the tenderloin into 1-inch thick medallions (rounds). Cover the bottom of a medium skillet with a light film of canola oil and heat over medium-high heat until hot. Add the pork slices in 1 layer, season with salt and pepper, and sear for 1 minute. Turn and sear for 1 more minute, until lightly browned. Transfer the slices in 1 layer to a shallow baking dish.
  • Pour the glaze over the slices and turn them to coat.
  • Roast for 8 to 10 minutes, until a thermometer inserted reaches 140 degrees F for medium. Remove from the oven and keep warm, loosely covered until ready to serve.
  • To serve place pork medallions on a platter and spoon the balsamic-honey glaze over them. Garnish the platter with the rosemary sprigs.

Balsamic-Honey Glaze:
4 cloves garlic, finely chopped
1 Tbsp chopped fresh rosemary
1/2 cup balsamic vinegar
3 Tbsp honey
2 Tbsp olive oil
1 Tbsp mustard
Salt and pepper
Pork:
lb 1 3/4 to 2 tenderloin
Canola oil, for searing

Steps:

  • Preheat the oven to 350°F. Glaze: Put garlic and rosemary in a small bowl. Add the vinegar, honey, olive oil, mustard, salt, and pepper to taste and stir to combine.
  • Pork: slice the tenderloin into 1-inch thick round medallions. Cover the bottom of a medium skillet with a light film of canola oil and heat over medium-high heat until hot. Add the pork slices in one layer, season with salt and pepper and sear for 1 minute. Turn and sear for 1 more minute, until lightly browned.
  • Transfer the slices in one layer to a shallow baking dish. Pour the glaze over the slices and turn them to coat. Roast for 8 to 10 minutes or until cooked trough. Remove from the oven and remove pork from glaze. Cover pork with foil on a platter to keep warm. Put glaze in a saucepan. Reduce glaze by 1/3 or 1/2 and add a little butter to finish glaze. To serve, place pork medallions on a platter and spoon the balsamic-honey glaze over them.

1/4 cup water
2 teaspoons packed brown sugar
1/8 teaspoon ground red pepper (cayenne)

Steps:

  • Cut pork into 1/4-inch slices. Mix remaining ingredients except water and brown sugar in shallow glass or plastic bowl. Add pork; turn to coat with marinade. Cover and refrigerate 15 minutes. Mix water and brown sugar until sugar is dissolved; set aside.
  • Spray 10-inch nonstick skillet with cooking spray; heat over medium-high heat. Remove pork from marinade; discard marinade. Cook pork in skillet 5 to 6 minutes, turning once, until no longer pink. Remove pork from skillet; keep warm.
  • Reduce heat to low. Stir water mixture into drippings in skillet. Heat to boiling; stirring constantly. Boil and stir 1 minute. Drizzle sauce over pork.

1 teaspoon garlic salt, or to taste
½ teaspoon freshly ground black pepper, or to taste
2 pounds pork tenderloin, cut into 1 1/2 inch pieces

½ cup chicken broth
2 teaspoons minced lemon zest, or to taste
1 tablespoon capers, or to taste

Steps:

  • Place the flour, garlic salt, and pepper into a plastic bag. Shake to mix, the add the pork tenderloin pieces, and shake again to coat. Shake off the excess flour.
  • Heat the oil in a large skillet over medium-high heat. Cook the pork medallions in the hot oil until golden-brown on both sides, 2 to 3 minutes per side. 18 ounces pork loin
2 cups fresh sliced mushrooms
2 teaspoons butter
1 tablespoon olive oil
1/2 cup chicken stock
2 tablespoons balsamic vinegar
2 teaspoons minced garlic
2 teaspoons salt (to taste)
1 teaspoon pepper (to taste)
1 teaspoon chopped basil (dried)

Steps:

  • Slice Pork Loin diagonally into 1/2" medallions.
  • Salt and Pepper each side of medallions.
  • In a large skillet melt butter and add olive oil heat to medium high heat.
  • Place medallions in butter/oil and brown each side until a light crust forms (about 3 minutes each side).
  • Remove pork and set aside.
  • Add Stock to skillet scraping bottom of pan, bring to rolling boil.
  • Add Mushrooms, garlic and vinegar, basil, salt and pepper to stock.
  • Stir occasionally and reduce by 1/2.
  • Add medallions (and any juices from them) to the skillet and combine well.
  • Lower heat to medium low and let simmer about 10 minutes.
