GRILLED JAPANESE EGGPLANT

- Place eggplant in a large shallow baking dish. Mix together the soy sauce, sherry, sesame oil, and garlic in a small bowl. Pour the marinade over the eggplant and let marinate at room temperature for 1 hour. Preheat grill. Season the eggplant with salt and pepper to taste and grill on each side for 3 minutes, basting occasionally with the remaining marinade. Serve topped with the toasted sesame seeds.
BULGOGI EGGPLANT
Few things gain as much bulmat ("fire taste" in Korean) as eggplant. When thinly sliced like bulgogi, the classic Korean dish of grilled marinated meat, eggplants need only a brief flick of the fire - a minute or two per side - to cook through and char at the edges. (A very hot skillet on the stovetop works in a pinch.) Bulgogi means "fire meat," so this vegetarian adaptation is inspired by the flavors of the beloved Korean barbecue staple - soy sauce, garlic and sugar - and would taste wonderful alongside a handsome plate of char-grilled beef bulgogi.

Steps:
- Place the eggplant in a colander set inside the sink. Sprinkle with the salt, toss to combine and let sit for 30 minutes to drain its excess moisture.
- While the eggplant drains, prepare a charcoal grill for direct high-heat cooking, or heat a gas grill to high. In a medium bowl, whisk together the soy sauce, maple syrup, sugar and garlic powder until the sugar is dissolved.
- Carefully grease the grill grate: Use tongs to grip a wadded paper towel dipped in oil and then rub the grates with the oiled towel. In the colander, toss the drained eggplant with 1 tablespoon oil. Place the eggplant on the hot, greased grate. Grill until charred at the edges, 1 to 2 minutes per side. If using a gas grill, close the lid between flips. (See Tip for stovetop method.)
- Add the grilled eggplant to the bowl with the sauce and gently toss, making sure each slice is thinly coated. Arrange the slices with the sauce on a large platter. Crack over some black pepper and garnish with the scallion.
SPICED GROUND BEEF AND GRILLED JAPANESE EGGPLANTS WITH MAPLE SYRUP SAUCE
Steps:
- For the spiced ground beef:
- Heat the oil in a cast-iron pan, or heavy-bottomed pan over medium-high heat. Place the beef in the pan, breaking up pieces and cook until the moisture has evaporated and beef is browned, about 10 minutes. Stir in the onion and red pepper. Once the onion and red peppers have softened, add the garlic powder, cumin, and cayenne, stir to incorporate. Stir in the parsley, green chile, and lime juice. Remove pan from heat and season with salt and pepper.
- For the maple syrup sauce:
- Place the lime zest, garlic, salt, 2 tablespoons pepper, maple syrup, and vinegar in a pot and warm over medium heat. Transfer the sauce to a bowl.
- For the grilled Japanese eggplants:
- Heat a grill to medium heat. Drizzle the oil over the eggplant quarters and season with salt and pepper. Place the eggplant on the grill and cook on all sides. Once the eggplant are tender, place in a pan and coat with the warmed Maple Syrup Sauce; toss to coat.
JAPANESE STYLE EGGPLANT AND GROUND BEEF CURRY
This is a simple recipe using Japanese S&B golden curry roux. This is normally served with cooked white rice in Japan.

- Cook ground beef, onion, and garlic with oil in a saucepan until beef is browned. Add eggplants to the saucepan and continue to cook for additional 5 minutes, stirring.
- Add water and bring to a boil. Turn down the heat to medium and cook until vegetables are tender, about 5 minutes.
- Add the sauce mix and garam masala, stir until fully melted.
- Add tomatoes and green peas.
- Cook 10 additional minutes on low heat.

JAPANESE SPICED EGGPLANT
Here is a quick, healthy, vegetarian dish that is a different take on an eggplant dish. Chef Allen Susser of Chef Allen's in Aventura, Fl. glazes it with soy sauce and mirin and sprinkles it with togarashi, a tangerine scented Japanese spice blend of chiles, sesame seeds and dried seaweed. "Togarashi, the Japanese word for "chiles," is a group of condiments always including chiles that bring out the clean, simple flavors of Japanese food. It works well with fatty foods such as unagi (broiled eel), tempuras, shabu shabu (small bits of food cooked in rich broth), noodle dishes, and yakitori (grilled dishes). Nanami togarashi is a close cousin, with a slightly different proportion of ingredients emphasizing citrus zest.

- Lightly sprinkle the eggplants on both sides with togarashi.
- In a very large skillet, heat 2 tablespoons each of the canola and sesame oils until shimmering.
- Add the eggplant and cook over moderately high heat until browned on the bottom, 4 minutes.
- Brush the eggplant with the remaining canola and sesame oil.
- Turn and cook until deeply browned on the bottom and tender.
- Add the mirin and soy sauce to the skillet.
- Turn the eggplant and cook until glazed, 1 minute; transfer to a platter, sprinkle with more togarashi and serve.

- Wash eggplants and pat dry with paper towels, set aside.
- In a small mixing bowl combine the Chinese 5-spice powder, onion powder, garlic salt, and black pepper. Set aside.
- Slice the eggplants in half lengthwise, brush with olive oil and rub the mixed spices on both sides.
- Grill over low heat for about 5 minutes on each side, or until tender.
- Arrange cabbage on serving plates and top with grilled eggplant; drizzle with the asian vinaigrette.
- Top with the fresh mint, feta, and sprinkle with toasted sesame seeds.
- Asian Vinaigrette:.
- In a blender or food processor, combine all the ingredients except the vegetable and sesame oils. With the blender/processor running, slowly pour in the vegetalbe oil followed by the sesame oil. Process for 10 to 15 seconds longer. Refrigerate until ready to serve. (If necessary, whisk before serving.).
- COOK'S TIP: Leftover vinaigrette makes for a tasty salad dressing or marinade for fish.

Steps:
- In a medium saucepan heat the sesame oil over medium heat.
- Add the garlic and red pepper flakes.
- Saute for 1 minute.
- Whisk in the peanut butter, tamari, lime juice, sugar and water, cooking for 2 minutes.
- Add a touch of water-you want the sauce to be the consistency of hot fudge sauce.
- Keep warm over low heat.
- Heat your grill to medium high heat.
- Slice the eggplant 1/2 inch thick.
- Brush both sides with oil and lightly salt.
- Grill for 8-10 minutes or until tender and lightly browned.
- Brush lightly with sauce and serve with remaining sauce.

- Combine hoisin, soy sauce, ketchup, maple syrup, gingerroot and garlic. Divide mixture into 2 equal portions – 1 portion to baste the meat and one to baste the eggplant.
- Season beef cubes all over with Chinese five-spice powder and salt and pepper to taste; thread onto skewers. Grill over medium-high heat 6 to 8 minutes, turning at least twice for medium-rare doneness, basting with 1 portion of the sauce mixture near end of cooking. Discard any remaining meat basting sauce.
- Meanwhile, place eggplant slices on grill in single layer; with clean basting brush, lightly baste upper side with the reserved eggplant basting sauce. Grill minutes; turn and baste lightly. Cook 2 to 3 minutes until just softened; transfer to serving bowl and drizzle with any remaining eggplant basting sauce. Serve with beef kabobs; garnishing with sesame seeds (if desired).
