Steps:
- Combine the spices-salt, pepper, paprika, coriander, cumin, garlic powder, and cayenne pepper (if using). Then while they're still warm, toss the chickpeas with the spices, making sure to coat them evenly.
- Allow them to cool for about an hour. They will continue to get crunchier as they cool. To re-crisp, heat in a 350 F oven for 5 to 10 minutes.

Steps:
- Heat a large, non-stick skillet over medium heat. Add potatoes and garam masala, and cook, stirring frequently, until fragrant, about 2 minutes.
- Add chickpeas and diced tomatoes. Scrape up any browned bits that have adhered to the pan. Stir and bring to a low boil. Reduce heat to medium-low and simmer, covered, stirring occasionally, until potatoes are tender, about 25 minutes.
- Sprinkle with chopped cilantro to serve.

- Boil the potatoes in salted water until just tender. While they are cooking, soften the onions and garlic in the oil in a frying pan for a few mins. Add all the spices, then fry for 1 min more. Stir in the chickpeas and tomato purée with 400ml water, then turn the heat up and bubble for a few mins.
- When the potatoes are ready, drain and add to the pan. Cook for a few mins until the sauce is thick, stir in the spinach, then season. When the spinach has wilted, scatter with coriander and serve with the chapatis, yogurt and chutney on the side.

- Heat the olive oil in a large non-stick frying pan, add the diced chorizo and saute over a medium heat for 3-5 minutes, take care not to burn the sausage.

- Heat oil in a saucepan over medium heat. Add chopped onion, garlic, ginger, chili and pinch of salt and cook until golden ( 5 to 6 minutes.). I usually dump them in a food processor and pulse to make finely chopped mix. Saves all the chopping time.
- Add tomatoes, lime and splash of water and cook until the tomatoes are saucy. (use more or less tomatoes to preference). Mash the larger pieces. 4 to 5 minutes.
- Add the cilantro, chickpeas, water, salt and pepper and mix in. Cover and cook for 15 minutes or more or until the chickpeas pick up some flavor. Taste and adjust salt, heat, tang (lime). - Bring the potatoes to a boil in a large pot of water, cook for about 20 minutes or until tender. Drain the water.
- While the potatoes are still hot, roughly break them up in a food processor (don’t bother removing the potato skins). Add the egg and purée until creamy and smooth. Add the curry powder, chickpea flour, green onion, chutney, mustard, and red chili. Pulse until combined. Add salt and pepper, taste, and adjust seasonings if required.
- Meanwhile, roughly smash the chickpeas with the back of a fork to break them down slightly, leaving some larger pieces for texture. Fold them into in the potato mixture.
- Preheat a large frying pan oven medium heat and add about one tablespoon of oil to the pan. Once it is hot, drop the chickpea mixture in tablespoon rounds, pressing down slightly on the top to make them pancake-like. Once they are golden brown on the bottom, flip them oven and fry the other side. Using two utensils together makes flipping the cakes much easier.
